EASY CLASSIC BROWNIES


    Spring is officially here I guess! From the warmer temperature to the sunnier days, everything around me screams that a new season has arrived! And I cannot help it if I want to start planning my summer vacations, right? Oh, how I dream of sandy beaches, getting a beautiful and sexy sun tan, eating lots of ice cream and being free to swim in deep oceans... This summer we are thinking of riding our way to the Italian (and maybe French) Riviera and explore everything there is to explore. I can fantasize from now wearing big sun hats like another Brigitte Bardot and wearing polka dotted playsuits. 
     For now, though, I have to study. And study hard that is. The second semester of University has started and although it is far more interesting than the previous, there are more things to study and read. Dreading period, if you ask me, but necessary to say the least. There are times that I don't want to do anything and others that I find myself studying for 5 hours non stop (a record for me). But if I set a goal for myself it is far easier to achieve that goal, rather than saying to myself "You just have to study. Period."


     In other news, I haven't been cooking or creating in the kitchen lately that much. I had a wonderful week spend in the mountains (if you follow me on Instagram, maybe you had a glimpse of it), spend a few days off social media and have been training my body into hardcore Pilates sessions and trying to find that inner peace that is so much needed. Yesterday, I tried to make a Swedish chocolate cake called "Kladdkaka", which is supposed to be runny and sticky, but I ended up making brownies because of some ingredients missing and overbaking the cake. Nevertheless, it's always nice to have brownies around the house, so I am not complaing...that much!

Brownies

ingredients

2 eggs
3 tablespoons unsweetened cacao powder
1 cup all purpose flour
1 cup sugar
8 tablespoons melted and cooled butter

How do I make it?

1. In a large bowl of a mixer, start by mixing together the eggs with the sugar until you get a pale and fluffy mixture. 
2. Then start adding the flour and the cacao powder in the mixture. Make sure you shift them before you add them. Mix very well until everything is incorporated. 
3. Last add the melted butter into the bowl and continue with mixing until you get a good final mixture. 
4. Prepare your pan of choice for the brownies and preheat the over to 180 C. Pour the brownie batter into the pan and bake for 12-15 minutes. 
5. Remove from the oven and let it cool before trying to cut it. Add some icing sugar on top if you wish!
