WARM PORRIDGE WITH COCONUT MILK AND PUMPKIN


     When everything goes bad and I feel like I'm in a desperate need for a change, I turn into the nature. Just by taking a few moments to look around the beautiful world we are living in, we can see that our problems might be so small. There are so many bad things happening these days to people, animals, nature and every other aspect of this cycle called life. If we only stopped caring for ourselves and only, we would see what's going on around the world and try to care more for our neighbour in need.
     Now, you may think I'm talking nonsense and don't have an example myself to give. Well, I may not donate money or volunteer to build houses in poor areas, but I believe that it starts with the person sitting next to you. Start talking to them. Or better to your family and friends. Another powerful thing to do is to share food. I mean, that's the greater power of it, to connect people around a table. It was, has been and will be the best way to get to know someone. People don't lie when they are eating, they are true. 





     Which brings me to a wonderful recipe I made this Wednesday. If you are a frequent reader you may know my love for porridge. Other people find it plain and boring, I find it...well plain and boring if you're not using lots of toppings. Truth must be said! I was looking for recipes with pumpkin around the blogosphere to get some inspiration and came across Local Milk's own recipe of Pumpkin Pie Oatmeal. She is such an amazing photographer and blogger, only seeing her photos makes you hungry. Her recipe for sure inspired the one I created that morning, especially the cooking part of the oats.
    Even if you don't love oatmeal so much, you should try this one out. I used coconut milk, because I find it gives this creamy texture to your porridge and just to anything to be honest. It's my go-to for carry, pumpkin soup, smoothies and sometimes even cakes. Nothing wrong will happen when you use coconut milk. And then the pumpkin, really gives this porridge a 5 star grading. With every bite you feel the sweet flavour of pumpkin and the spices paired perfectly together.

Warm Porridge with Coconut Milk and Pumpkin

ingredients (for 2 to 3 persons)

1 cup oats
1 cups coconut milk (at least 60% coconut flesh)
3 cups water
1 cup pumpkin puree
1/4 cup honey or maple syrup
2 teaspoons cinnamon
1/4 teaspoon cloves
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 teaspoon vanilla essence
pinch of salt

toppings: dried fruit (cranberries, saltanas), crunchy granola, nuts, nut butters, coconut milk

How do I make it?

1.Fill a medium pan with the oats, coconut milk and water. Stir for a little bit and then cover the pan, while cooking the oats on low heat for 10 minutes. Every 5 minutes lift the lid of the pan and stir the oats, then cover again.
2. After the 10 minutes have passed, add the pumpkin puree and mix it very well in the oats. This will perhaps be difficult because the oats will have become sticky (not dry though). Cover the pan again and cook for another 8 minutes (again lift the lid and mix a little bit the oats).
3. Uncover the pan and add inside all the spices and honey. You want to do this at the last part to give the porridge a kick. Mix the porridge really well with a big spoon to make sure everything is mixed together.
4. Pour the porridge into desired bowls. I prefer deep and small bowls, because they keep the porridge warm for longer. You can add your favourite toppings on top. I added some dried cranberries and two tablespoons of crunchy granola. But I think you can also eat it plain. Just add some more honey on top and you are ready to go!

SPICY PORRIDGE WITH COCOA FOR WINTER


     If you asked me a year ago how I saw myself next winter, I would never have told you that the winter blues would get me so hard. Maybe because I didn't know that I would find myself in another country with a colder climate. But unfortunately the blues were here for a few days. Mostly in the mornings... due to awful weather and foggy atmosphere. Having to study for numerous tests at University doesn't really help either, when you have to stay inside, while everyone else is outside having fun. Wow, life is amazing!
     I have found comfort in food a lot of times for the wrong kind of reasons, but this is not the time or place to talk about these issues. Before you drop into the wrong colclusions about where I am going with this, I am talking about the beauty of eating something that yes it's not so healthy, but it makes you feel slightly better, like you earned it! 
     When I am having a blue mood I tend to crave sweet stuff. Luckily for me, I only eat dark chocolate most of the time, which is proven to elevate happy hormones and fill you up with copper and antioxidants. So, the other day it was a hot cocoa kind of day. But I was a bit hungry and I knew that only drinking hot cocoa would not fill me up and instead I would end up feeling less empty. I decided to make some hot porridge with steel cut oats, pour some milk, cocoa and spices (and some other ingredients) and make a dream recipe for a morning breakfast during winter time.



     Prepare yourselves by putting on some calming Sunday music or anything else you find to be relaxing for you. Leave your screens switched off and start cooking. The one thing I love about cocoa and chocolate, is this deep and suffocating in a way smell that it brings out. As with coffee, I love smelling it as much as I love consuming it. There's just something that's kind of a ritual when you smell cocoa, like it touches every cell of your body. I love it! This recipe is really easy and quite healthy if you ask me. I avoided the usual sugar that you would normally have to add and decided to add some smashed banana. Make sure your banana is ripe, otherwise it won't make your porridge sweet at all.

Spicy Porridge with cocoa for winter

ingredients (for 1 person)

1/2 cup steel cut oats
1/4 cup milk of your preference
1/4 cup water
1 teaspoon ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 ripe banana smashed
1 tablespoon unsweetened cocoa

for serving: crushed walnuts, slices of kiwi

How do I make it?

1. Put all your ingredients in a small pan and turn to medium heat. Mix them very well with a big spoon and start cooking your porridge. Your porridge will be ready when it has a moist, but not liquid consistency.
2. Transfer into a bowl and garnish with the crushed walnuts and the slices of kiwi.
3. Enjoy while it's still hot.

Tip: if you want your porridge to be sweeter add some honey as well.

QUINOA PORRIDGE ΜΕ ΚΑΒΟΥΡΔΙΣΜΕΝΑ ΑΜΥΓΔΑΛΑ ΚΑΙ ΣΟΣ ΑΠΟ ΚΟΚΚΙΝΑ ΦΡΟΥΤΑ



     Τον Μάρτιο, τον πρώτο μήνα της άνοιξης, πάντα θέλω να τον γιορτάζω με την εισαγωγή χρωμάτων στην καθημερινότητά μου. Φεύγουν τα μουντά μπουφάν και τα χουχουλιάρικα φούτερ και τη θέση τους παίρνουν πιο ανάλαφρα και πολύχρωμα υφάσματα. Κάτι ανάλογο συμβαίνει και στην κουζίνα... Έρχονται τα ανοιξιάτικα φρούτα και λαχανικά και πλημμυρίζουν την κουζίνα με χρώμα και άρωμα. Αυτό είχα στο μυαλό μου σήμερα το πρωί και μου ήρθε ιδέα για ένα γευστικό πρωινό που θα ανεβάσει την πεσμένη μου διάθεση, καθώς τις τελευταίες ημέρες δεν είμαι πολύ καλά σωματικά και ξυπνάω σχεδόν κάθε μέρα με πονοκέφαλο. 
     Ως λάτρης του κλασικού porridge με βρώμη δεν θα μπορούσα να μην δοκιμάσω να αντικαταστήσω τη βρώμη με την κινόα. Ένα δημητριακό χωρίς γλουτένη, που περιέχει μεγάλη ποσότητα πρωτεΐνης και φυτικών ινών. Μαγειρεύεται όπως το ρύζι και μπορεί να χρησιμοποιηθεί αντί αυτού σε σαλάτες, σούπες, μπάρες δημητριακών και στο porridge. Για να μην παρεξηγηθώ το porridge πρόκειται για την βρετανική εκδοχή του oatmeal ή χυλού από βρώμη ή άλλα δημητριακά. Είναι το ιδανικό πρωινό που χορταίνει και σας κρατάει σε φόρμα χωρίς να σας βαραίνει. Εάν έχετε πρωινό ξύπνημα σαν εμένα τότε με καταλαβαίνετε!



     Το διαφορετικό με την κινόα που παρατήρησα είναι ότι δεν χυλώνει τόσο πολύ όσο η βρώμη με αποτέλεσμα να δημιουργείται ένα πιο λεπτόρευστο μείγμα. Προσωπικά μου άρεσε πάρα πολύ και με κράτησε αρκετά χορτασμένη για κάποιες ώρες. Ο συνδυασμός με το γάλα καρύδας και την σος από κόκκινα φρούτα ήταν μοναδικός. Είναι ένα πολύ εύκολο και σχετικά γρήγορο πρωινό που μπορείτε να απολαύσετε όταν θέλετε να περιποιηθείτε τον εαυτό σας ή τους αγαπημένους σας λίγο παραπάνω. Επιπλέον, δεν χρειάζεστε να έχετε φρέσκα κόκκινα φρούτα. Τα κατεψυγμένα δημιουργούν μια εξίσου τέλεια σος και δεν λιώνουν τόσο εύκολα όσο τα φρέσκα.

Quinoa porridge με καβουρδισμένα αμύγδαλα και σος από κόκκινα φρούτα

υλικά (για 2 άτομα)
1 κούπα κινόα 
1 1/2 κούπα νερό
1 κούπα γάλα καρύδας
1/2 κουταλάκι εκχύλισμα βανίλιας
4 κουταλάκια αμύγδαλα φιλέ
1 κούπα κόκκινα φρούτα (βατόμουρα, φράουλες, φραγκοστάφυλα, κράμπερις)
2 κουταλιές μέλι

για σερβίρισμα (προαιρετικά)
φυστικοβούτυρο
φέτες μπανάνας
τσιπς καρύδας

Πώς θα το φτιάξω;

1. Αρχικά καβουρδίστε τα αμύγδαλα σε ένα αντικολλητικό τηγάνι σε μέτρια φωτιά. Προσοχή μην σας αρπάξουν. Μεταφέρετε σε ένα μπολ και αφήστε τα στην άκρη.
2. Σε ένα κατσαρολάκι προσθέστε αρχικά το νερό και την κινόα και ανακατεύετε σταδιακά σε μέτρια φωτιά. Όταν αρχίζει να βράζει το μείγμα προσθέστε το γάλα και τη βανίλια. Συνεχίστε το ανακάτεμα μέχρι να σταθεροποιηθεί το μείγμα και να έχει μορφή λεπτόρευστης κρέμας. Μόλις είναι έτοιμο μοιράστε το μείγμα σε δύο μπολ και πασπαλίστε με τα αμύγδαλα που καβουρδίσατε πιο πριν.
3. Για να φτιάξετε τη σος από κόκκινα φρούτα απλώς προσθέστε τα φρούτα σας σε ένα αντικολλητικό τηγάνι μαζί με το μέλι και ζεστάνετέ τα μέχρι να δημιουργηθεί μια σος από τον χυμό των φρούτων. Δεν χρειάζεται πολύ, περίπου 1-2 λεπτά. Περιχύστε το porridge σας με τη σος. Προαιρετικά προσθέστε μερικές φέτες από μπανάνα & τσιπς καρύδας ή μια κουταλιά φυστικοβούτυρο.
