AZUKI BEAN FRUDGE BROWNIES


   One can never read too much or dream too much." If ever there was a quote written to describe my character it would be this. Reading makes me feel like my head is outside of my body, doing its own things, exploring new places and ideas. Dreaming is something I do quite often as well, whether it's about new trips I want to take or what it would feel like to have my own cafe or bakery shop. I know, I know. Dream on girl! And I would agree with you. In a world that is flooding with entrepreneurs, it's easy to think that "yeah, this could be me!". But in reality, only a limited amount of people actually "make it". The rest are simply struggling to survive without losing their initial dream. 
    Leaving the pessimism aside, it's almost end of March, I'm about to submit my research work for my Master Degree and about one month until my two best girlfriends visit me in Zurich after almost two years I've been living here. I'm so excited to have them here and show them around this beautiful city. Then, we can have brunch together served by me and talk about our lives so far. 
     


     In almost one week, we get to celebrate the Orthodox Easter with friends here. Normally we would do it in Greece the fun way, but good friends and food are never boring. Next week is a fasting week until Easter, which means almost eating a vegan diet that contains no animal product (expect honey). I've been testing some recipes without any dairy or eggs and recently I tested this amazing recipe for brownies using beans. Yes, beans! I was sceptic in the beginning as well, wondering how awful this would taste. But it turns out anything you mix with sugar and cacao never tastes bad.
     What I love about this recipe is how intense is the chocolate flavour. With every bite I get a very strong and mouthful of chocolate that completely satisfies me. It's the perfect snack to go with your hot cup of coffee or milk. I also tried eating it in the morning as a breakfast. Since, I didn't use a lot of sugar it doesn't have a strong sweet taste so it's breakfast appropriate. 




Azuki Bean Fudge brownies (recipe inspired by Minimalistic Baker)

ingredients (for 10 to 12 pieces)

2 tablespoons flaxseed meal (or grounded flaxseeds) + 4 tablespoons cold water
420gr cooked and drained azuki beans
3 tablespoons olive oil
1/2 cup of brown or coconut sugar
1 teaspoon baking soda
70gr cacao unsweetened cocoa powder
1 teaspoon vanilla essence
50gr dark chocolate with dried fruit (I chose orange)

how do I make it?

1. Put the flaxseed meal with the cold water in a small bowl, mix well and let it sit for 15 minutes. 
2. Using a food processor mix together the beans, oil, sugar, baking soda, cocoa powder, soaked flaxseed meal and vanilla essence. Mix very well until you get a thick mixture without lumps created from uncut beans.
3. Prepare a medium tin you use normally brownies and pour inside the mixture. Top the brownies with chopped dark chocolate pieces.
4. Bake the brownies for 20 to 25 minutes at 175C, until you get a dry top. Let them cool before trying to eat them, as they will be quite moist.

CHILI CON CARNE ΜΕ ΨΗΜΕΝΕΣ ΤΟΡΤΙΓΙΕΣ - CHILI CON CARNE WITH TOASTED TORTILLAS


Τι πιο υπέροχο από ένα ζεστό πιάτο να γεμίσει την "κρυάδα" της καθημερινότητας; Το λεγόμενο "comfort food" εκτός από γεύση μας προσφέρει και μια αίσθηση "μαμάς και γιαγιάς" σε κάθε μπουκιά. Ο αξιαγάπητος Jamie Oliver στο καινούργιο του βιβλίο Comfort Food μας παρουσιάζει αμέτρητα φαγητά για να καλοπεράσουμε το χειμώνα - και όχι μόνο! Σύντομα θα καταλήξει στα χέρια μου και θα πρέπει να φοβάστε! 

Γενικά, μου αρέσουν τα πικάντικα φαγητά που πλησιάζουν λίγο την λατινική κουζίνα του Μεξικού, της Κούβας και του Περού. Το 'chili con carne', ένα φαγητό της Tex-Mex κουζίνας, δεν είναι κάτι άλλο από κιμά μαγειρεμένο αργά μαζί με πιπεριές τσίλι (καυτερές συνήθως), κόκκινα φασόλια, τομάτες και τσιπς τορτίγιας. Εγώ πρόσθεσα και λίγο γλυκό καλαμπόκι σε όλο αυτό το δημιούργημα για να προσθέσω χρώμα και λίγη παραπάνω γεύση.

What could be more wonderful than a hot plate to fill the "chilliness" of everyday life? The so-called "comfort food" except from taste, it offers a sense of "Mom and Grandma" in every bite. The lovable Jamie Oliver in his new book Comfort Food shows us countless foods to enjoy a cold winter - and more! Soon it will come up in my hands and you should be afraid!

Generally, I like spicy foods approaching a little the Latin cuisine of Mexico, Cuba and Peru. The 'chili con carne', a dish of Tex-Mex cuisine, it's not something other than meat cooked slowly with chili peppers (usually hot), red beans, tomatoes and tortilla chips. I added a little sweet corn to it to add color and a little more taste.

Chili con Carne με ψημένες τορτίγιες
συνταγή εμπνευσμένη από το Comedera

υλικά
(για 4 άτομα)

500 γρ κιμάς βόειος
400 γρ κόκκινα φασόλια
400 γρ τομάτες τριμμένες
300 γρ γλυκό καλαμπόκι
1 μέτριο κρεμμύδι
2 σκελίδες σκόρδο
1 κρεμμυδάκι πράσινο
λίγο φρέσκο κόλιανδρο
λίγο ελαιόλαδο
1 κουταλάκι κύμινο
1 κουταλάκι ρίγανη
1 κουταλάκι πάπρικα
1 κουταλάκι πιπέρι καγιέν
1 κουτάλι της σούπας σάλτσα Worcester
αλάτι και μαύρο πιπέρι

πώς θα το φτιάξω;

- Ξεκινήστε ψιλοκόβωντας το κρεμμύδι, το σκόρδο, το κρεμμυδάκι και τον κόλιανδρο (αν δεν έχετε φρέσκο δεν πειράζει). Ζεστάνετε καλά ένα μεγάλο τηγάνι με λίγο ελαιόλαδο και τσιγαρίστε το σκόρδο, το κρεμμύδι και το κρεμμυδάκι μέχρι να πάρουν χρώμα.
 - Στη συνέχεια, προσθέστε τον κιμά. Ανακατέψτε καλά ώστε να βοηθήσετε τον κιμά να γίνει και σταδιακά προσθέτετε το κύμινο, τη ρίγανη, το πιπέρι καγιέν, την πάπρικά , τη σάλτσα Worchester, αλάτι και λίγο πιπέρι.
- Αφήνουμε το μείγμα να βράζει για 5 λεπτά και στη συνέχεια προσθέτουμε τις τομάτες μας, φροντίζοντας να είναι σε ομοιόμορφα κομματάκια. Χαμηλώνουμε λίγο τη φωτιά και βράζουμε για 15 λεπτά. Εάν χρειάζεται προσθέστε λίγο νερό και δοκιμάστε εάν θέλει λίγο αλάτι παραπάνω.
- Σουρώστε τα κόκκινα φασόλια (αν είναι σε κονσέρβα) καλά και προσθέστε τα στο τηγάνι μετά από 15 λεπτά. Προσθέστε το καλαμπόκι σας και μαγειρέψτε για άλλα 5 λεπτά.
- Αποσύρετε από τη φωτιά και προσθέστε λίγο φρέσκο κόλλιανδρο από πάνω.
Σερβίρετε με ψημένες τορτίγιες τις οποίες θα κόψετε σε μικρά κομμάτια.


Chili con carne with toasted tortillas

ingredients (4 persons)

500 gr. ground beef
400 gr. kidney beens
400 gr. grinded tomatoes
300 gr. sweet corn
1 medium red onion
2 cloves garlic
2 green onion
some fresh coriander
some olive oil
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon cayenne pepper
1 tablespoon Worcester sauce
salt and black pepper

how do I make it?

- Start by chopping the onion, garlic, green onion and coriander (if you don't have fresh it does not matter). Heat a large pan with a little olive oil and saute the garlic, onion and green onion until browned.
  - Then add the minced meat. Stir well to help the mean get done and gradually add the cumin, oregano, cayenne, paprika, the Worchester sauce, salt and pepper.
- Allow the mixture to boil for 5 minutes and then add your tomatoes, making sure they are in uniformly pieces. Reduce the heat slightly and boil for 15 minutes. If necessary add a little water and add if you want a little more salt.
- Drain the red beans (if canned) well and add to the pan after 15 minutes. Add your corn and cook for another 5 minutes.
- Remove from heat and add a little fresh coriander on top.
Serve with toasted tortillas cut into small pieces.
