MINI RED VELVET CAKES WITH SOFT MIDDLE


     This time of the year has come again. A time to plan out the next few months ahead, before the snow starts to melt and flowers begin to flourish. It is almost the end of winter, by months at least, and I already start thinking about where to go for summer. Some of my co-students in University and I are thinking of doing a cruise trip in Greek islands this year. It would be a perfect opportunity for them to visit Greece with a local and for me to be a tour guide. I always love showing people around my favourite places.
     Before all this fun time, however, I am in the middle of writing my thesis for the Graduate program I follow at University of Luzern and I have so much work to do. Without trying to complain about it, it was a very fun experience, with lots of good friends in the way. I still can't believe almost two years have passed since I came to Switzerland. To me it still feels like yesterday I was packing my things and my two best friends surprised me with a photo-video of the three of us. Time passes by so, so quickly...
      



     Since it's February and some of you (us) are in love, no better reason exists to enjoy a warm and creamy red velvet cake with our other half. Red Velvet is a classic for Valentine's Day and I remember last year I didn't make something relevant, instead I made a chocolate smoothie. But this year, I wanted to make something different and experiment with the sweetness of chocolate and the sour taste of cream cheese. Initial thoughts were to create a lava cake with a runny middle and a warm exterior. However, things didn't go as well as planned and I ended up with a marvellous soft cake with a soft and creamy middle. Which was perfect after all!
     This recipe is quite easy and there is no need for you to master your skills in frosting and layering a cake. The recipe calls for all the ingredients you would normally find in a Red Velvet Cake in the form of a smaller cake that resembles a muffin. 

Mini Red Velvet Cakes with soft middle

ingredient (for 6 cakes)

1 cup flour (shifted)
1/2 cup butter melted
1/2 cup sugar
2/3 cup buttermilk
1 egg yolk
1 tablespoon cacao (shifted)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon apple cider (optionally)
2 tablespoons food colouring (if liquid, otherwise according to instuctions)

1/2 cup cream cheese (room temperature)
1/4 heavy cream
1/2 cup icing sugar

How do I make it?

1. First step is to prepare the soft middle of the cakes. In a bowl, mix together the cream cheese, heavy cream and icing sugar until smooth. If the mixture is runny, add a little more icing sugar. Cover the surface of a small pan with baking paper and with a spoon form small bites in the form of ball on the parchment paper, keeping them apart from each other. Place the pan in the fridge for at least 30 minutes. The bites need to be firm.
2. In the meanwhile, start preparing the cake batter. In a bigger bowl mix together all the dry ingredients, such as flour, sugar, cacao, baking soda and salt. Then pour inside the melted butter, the buttermilk, the egg yolk, vanilla extract, food colouring and apple cider. Start mixing really well with an electric mixer until you have a good and smooth batter. 
3. When the cream cheese bites are ready, start preheating the oven at 200 C. Then, take a muffin pan. Start filling 6 muffin cases with a full tablespoon of batter. Take a cream cheese bite and put it in the middle, by pushing it a little bit so that it sinks into the batter. With the remaining batter cover the top of all the 6 cakes.
4. Bake the cakes for 10 minutes. Remove from the oven and let them cool a little bit. 
5. To serve, place a flat pan on top of the muffin pan, keep the sides firmly and try to reverse the muffin pan onto the flat pan to get the cakes. Place the cakes onto a plate or plates and cover with some icing sugar! Enjoy with your loved one...

MINI RED VELVET CHEESECAKES


   Μια φορά το χρόνο κάθε χρόνο έρχεται εκείνη η στιγμή που είτε λατρεύεις είτε απεχθάνεσαι. Όμως πολλές φορές μπορεί να συμβαίνουν και τα δύο. Όλοι μας έχουμε περάσει από τη μία άκρη στην άλλη, να περιμένουμε πως και πως να γιορτάσουμε με τον αγαπημένο/η μας και από την άλλη να σιχαινόμαστε την ημέρα εκείνη και να κανονίζουμε ότι πιο single πράγμα μπορούμε να κάνουμε, αρκεί να μην είμαστε μόνοι μας. Προσωπικά, ανήκω σε μια μέτρια κατάσταση όπου ναι μεν εάν είμαι σε σχέση μου αρέσει να χαρίζω δώρα και να κάνω γλυκανάλατα ρομαντικά πράγματα, από την άλλη αν δεν είμαι σε σχέση για μένα είναι μια ακόμα ημέρα που πέρασε.
     Το θέμα όμως είναι να βλέπουμε πάντα το θετικό κομμάτι μιας κατάστασης και στη συγκεκριμένη το θετικό κομμάτι είναι... ένα κομμάτι τζιζκέικ. Χεχεχε! Με άφθονη κρέμα τυριού, τραγανή βάση μπισκότου και θεσπέσιο κόκκινο χρώμα ώστε να μας φτιάξει τη διάθεση. Το red velvet cheesecake σε μικρογραφία, μπορεί να δώσει χαρά στα αγαπημένα μας πρόσωπα και κυρίως σε εμάς τους ίδιους, μόλις το καταβροχθήσουμε. Γι αυτό λοιπόν, αφήστε τις μιζέριες εάν δεν γιορτάζετε ή αν γιορτάζετε κάντε κάτι πρωτότυπο και φτιάξτε αυτό το θεσπέσιο σε όψη και γεύση red velvet cheesecake.



Mini Red Velvet Cheesecakes

υλικά (για 4 μερίδες)

160γρ μπισκότα σοκολάτας (τύπου πτι μπερ ή biscotti)
50γρ βούτυρο λιωμένο

200γρ / 1 πακέτο τυρί κρέμα (τύπου φιλαδέλφεια)
1/2 κούπα ζάχαρη
1/2 κούπα κρέμα γάλακτος
λίγο χρώμα ζαχαροπλαστικής

πώς θα το φτιάξω;

1. Θριμματίστε τα μπισκότα σας καλά μέχρι να γίνουν σκόνη. Έπειτα, ανακατέψτε τα μαζί με το λιωμένο βούτυρο σε ένα μπολ. Τοποθετήστε τις βάσεις που θα έχετε για τα μίνι τζιζκέικς σε ένα ταψί με χαρτί ψησίματος, προσθέστε λίγη ποσότητα (περίπου 2 κουταλιές) από το μείγμα της βάσης μπισκότου και πιέστε το ελαφρά ώστε να σχηματιστεί μια λεία επιφάνεια της στρώσης του μπισκότου.
2. Σε ένα άλλο μπολ μαλακώστε το τυρί κρέμα χτυπώντας το με μίξερ για 1 λεπτό περίπου. Έπειτα, προσθέστε τη ζάχαρη σιγά σιγά και ανακατέψτε πάλι. Τέλος, προσθέστε την κρέμα γάλακτος και ανακατέψτε πολύ καλά για περίπου 5 λεπτά μέχρι να σφίξει το μείγμα. Αφού σφίξει προσθέστε και το χρώμα ζαχαροπλαστικής (όσο χρειάζεται για να έχει το επιθυμητό κόκκινο) και συνεχίστε το ανακάτετεμα.
3. Περιχύστε το μείγμα πάνω από τις βάσεις μπισκότου προσεχτικά και όμοια σε όλες τις βάσεις. Καλύψτε την επιφάνεια με ένα χαρτί ψησίματος και τοποθετήστε στο ψυγείο για λίγες ώρες ή ιδανικά όλο το βράδυ.
4. Σερβίρετε παγωμένο με λίγη σαντιγύ για έξτρα γεύση!

ΚEKAKIA RED VELVET ΜΕ ΕΠΙΚΑΛΥΨΗ ΚΡΕΜΑΣ ΤΡΥΡΙΟΥ - RED VELVET MINI CAKES WITH CREAM CHEESE FROSTING


Πόσο το λατρεύω αυτό το κόκκινο χρώμα "βελούδου" που έχει αυτό το γλυκό. Για όσους δεν γνωρίζουν το red velvet cake, πρόκειται για ένα ζουμερό σοκολατένιο κέικ με απόχρωση κόκκινου, σαν κόκκινο βελούδο, σε πολλές στρώσεις. Από πάνω και ενδιάμεσα στολίζεται με μια λευκή στρώση από κρέμα τυριού που δίνει μια πιο ιδιαίτερη γεύση σε αυτό το υπέροχο κέικ. 
Το "στίστιμο" των στρώσεων του κέικ αποτέλεσε μια διασκεδαστική πρόκληση, αλλά το αποτέλεσμα μας αποζημίωσε! Προσωπικά λάτρεψα αυτόν το συνδυασμό σοκολατένιου κέικ με κρέμα τυριού και πρόκειται να τα ξαναφτιάξω πολύ σύντομα. Αντί για ένα μεγάλο κέικ, λοιπόν, τι θα λέγατε για μικρά κεκάκια σε λαχταριστό μέγεθος;

Oh, how I love this red "velvety"color this cake has. For those unfamiliar with the red velvet cake, it is a juicy chocolate cake with red color, like red velvet, in several layers. Above and intermediate decorated with a white layer of cream cheese, which gives a more distinctive flavor to this delicious cake.
The "layering" of the cake was a fun challenge, but the result was compensating! Personally I loved this combination of chocolate cake with cream cheese and plan on making it again very soon. Instead of a big cake, then, how about a delicious mini cake size?


Κεκάκια Red Velvet με επικάλυψη κρέμας τυριού

υλικά (για 5-6 κεκάκια)

για τα κέικς
250 γρ αλεύρι
15 γρ κακάο καλής ποιότητας
110 γρ βούτυρο (σε θερμοκρασία δωματίου)
300 γρ ζάχαρη κρυσταλλική
2 μεγάλα αυγά
1/2 κουταλάκι αλάτι
240 ml ξυνόγαλα
1 κουταλάκι baking powder
1 κουταλάκι εκχύλισμα βανίλιας
λίγο κόκκινο χρώμα ζαχαροπλαστικής

για την κρέμα τυριού
400 γρ τυρί κρέμα (τύπου Φιλαδέλφια)
300 ml κρέμα γάλακτος (35-36% λιπαρά)
100 γρ ζάχαρη άχνη
1 κουταλάκι εκχύλισμα βανίλιας

πώς θα το φτιάξω;

- Πρώτα φτιάχνουμε την κρέμα τυριού την οποία θα βάλουμε στο ψυγείο για τουλάχιστον μια ώρα. Σε ένα μεγάλο μπολ χτυπήστε με ένα μίξερ το τυρί κρέμα αρκετά μέχρι να μαλακώσει. Προσθέστε την ζάχαρη άχνη και το εκχύλισμα βανίλιας και συνεχίστε το χτύπημα μέχρι να δημιουργηθεί ένα ομοιογενές μαλακό μείγμα. Σταδιακά ρίξτε την κρέμα γάλακτος και συνεχίστε το ανακάτεμα με το μίξερ μέχρι να αφρατέψει αρκετά το μείγμα. Όταν τελειώσετε τοποθετήστε το μείγμα στο ψυγείο μέχρι να σφίξει (για μια ώρα τουλάχιστον).
- Προθερμάνετε τον φούρνο στους 170 C. Σε ένα μπωλ κοσκινίστε το αλεύρι με το κακάο και προσθέστε το αλάτι και το baking powder. Σε άλλο μπωλ χτυπήστε με ένα μίξερ το βούτυρο καλά, μέχρι να μαλακώσει. Προσθέστε τη ζάχαρη και συνεχίστε για 2 λεπτά περίπου. Ρίξτε τα αυγά ένα-ένα και χτυπήστε καλά μετά από κάθε προσθήκη. 
- Προσθέστε στο μείγμα σταδιακά το αλεύρι με τα άλλα υλικά και το ξινόγαλα, σε τρεις δόσεις. Χτυπήστε καλά μέχρι να δημιουργηθεί ένα ομοιόμορφο μείγμα. Τέλος, προσθέστε τη βανίλια και λίγο χρώμα ζαχαροπλαστικής. Εμείς χρησιμοποιήσαμε χρώμα σε μορφή τζελ, όπου δεν χρειάστηκε μεγάλη ποσότητα. Σας συμβουλεύω να χρησιμοποιήσετε καλής ποιότητας χρώμα για να σας βγει ένα έντονο κόκκινο χρώμα στο κέικ.
- Σε μια στρογγυλή φόρμα για κέικ με αποσπώμενο πάτο τοποθετήστε ένα χαρτί ψησίματος και ρίξτε όλο το μείγμα σας φροντίζοντας να πάει παντού. Ψήστε για 25-30 λεπτά, δοκιμάζοντας εάν το κέικ έχει γίνει με τη βοήθεια μιας οδοντογλυφίδας. Εάν η οδοντογλυφίδα σας βγει από το μείγμα χωρίς ίχνη υγρού περιεχομένου τότε το κέικ είναι έτοιμο. Όταν ψηθεί αφήστε το να κρυώσει για 20 λεπτά και μετά ξεφορμάρετέ το σε μια πιατέλα.

Red velvet mini cakes with cream cheese frosting

ingredients (makes about 5-6 mini cakes)

for the cakes
250 gr sifted flour
15 gr good quality cocoa
110 gr butter (room temperature)
300 gr granulated sugar
2 large eggs
1/2 teaspoon salt
240 ml buttermilk
1 teaspoon baking powder
1 teaspoon vanilla extract
red food coloring

for the cream cheese frosting
400 gr cream cheese
300 ml heavy cream (whipping)
100 gr icing sugar
1 teaspoon vanilla extract

how do I make it?
- First make the cream cheese frosting, which you will put in the refrigerator for at least one hour. In a large bowl with a mixer beat the cream cheese until smooth. Add the icing sugar and vanilla extract and continue beating until a nice mixture is created. Gradually pour in your heavy cream and continue stirring with the mixer until the mixture is fluffy enough. When finished put the mixture in the refrigerator until tight (for one hour at least).
- Preheat the oven to 170 C. In a bowl, sift the flour with the cocoa and add the salt and baking powder. In another bowl, beat well with a mixer the butter until smooth. Add the sugar and continue for approximately 2 minutes. Add the eggs one at a time and beat well after each addition.
- Add to the mixture the flour with the other ingredients and the buttermilk, in three additions. Beat well until a uniform mixture is created. Finally, add the vanilla and a little food coloring. We used color in gel form, which did not need a large quantity. I advise you to use good quality color, because you want a bright red color for your cake.
- In a round cake tin with removable bottom place a baking paper and pour the whole mixture making sure it goes everywhere. Bake for 25-30 minutes, testing if the cake is made with the aid of a toothpick. If the toothpick comes out of the mixture untracked of liquid content then the cake is ready. When the cake is ready allow it to cool for 20 minutes and then take it out from the it placing it on a platter.


Το στήσιμο
Με τη βοήθεια ενός ποτηριού με μεγάλο στόμιο ή πιο εύκολα με μια μικρή κουπάτ σε στρογγυλό σχήμα κόψτε το κέικ σε στρογγυλά σχήματα μέχρι να κόψετε όλη την επιφάνειά του. Ότι σας περισσέψει μην το πετάξετε! Υπάρχει συνέχεια..
Κόψτε κάθε κομμάτι στη μέση ή σε τρία μέρη αναλόγως πόσο έχει φουσκώσει το κέικ σας. Βγάλτε την κρέμα τυριού από το ψυγείο φροντίζοντας να έχει σφίξει αρκετά. Σε ένα χαρτί ψησίματος τοποθετείστε μια στρώση κέικ και μία στρώση κρέμας τυριού, δημιουργώντας τρεις στρώσεις από κέικ. Στην τελευταία στρώση καλύψτε όλο το κέικ με την κρέμα τυριού. Σαν τελευταίο στυλιστικό βήμα τρίψτε ότι απέμεινε από το κέικ σας από πάνω ώστε να έχετε μικρά "ψίχουλα" σε κάθε μπουκιά.

The layering
With the help of a glass with a wide rim or more easily with a small cookie cutter in round shape, cut the cake into round shapes up to cut across the whole surface. Whatever of the cake is left, don't throw it away! We'll use it in a bit...
Cut each piece in half or into three parts depending on how much your cake has inflated. Remove cream cheese from the fridge making sure it is tight enough. On a baking sheet, place one cake layer and a cream cheese layer, creating three layers of cake. In the last layer cover the entire cake with the cream cheese. As a final step of food styling grind the remains of your cake at the top, as to have small "crumbs" in every bite.
