LENTIL, PEA AND ROASTED CHERRY TOMATO SALAD WITH TAHINI DRESSING


     Getting ready for summer is a never ending struggle for me, as I am one of those people who leave it at the last minute. I always have an idea about what I want to do and look for tickets, possible accommodation options and what the food situation is in the destination, but I have a hard time deciding on it. A very important factor on making plans for vacations are your companions. Are your companion/s ready to make a commitment? Are they adventurous or like to keep it safe? Numerous determinants and factors contribute to your ideal and final choice of destination.
     However, next month might find me in the middle of Italy, savouring a big slice of pizza or eating two scoops of Italian ice-cream. Visiting this county never gets old I have to admit and there is nothing like living the Roman Holiday à la Audrey Hepburn, don't you think? I will just have to do my little research of what to see and look for in Florence and Siena and then hope for a nice weather and delicious adventures ahead. 




     Summertime brings another flavour to our food. Gone are the heavy sauces and the cheesy dishes this time around. At least for me. I like letting my stomach to relax a little bit from digestion and eat dishes that are light, but tasty of course. Salads or roasted meet is a good choice for this season. But salads sometimes tend to be this boring mixture of tossed green vegetables accompanied by some equally boring dressing. No, no. Not the way to enjoy your meal. 
     When I was thinking of a proper salad to make, my mind came to lentil salad. Lentils are normally eaten in a soup with some feta for me and bread on the side. They are however a wonderful ingredient for a warm or later cold salad. This salad might need a little more effort than what you would give for a salad in other circumstances. That said it is a delicious dish I enjoyed making and eating, with a wonderful combination of ingredients and an amazing tahini dressing you won't stop eating.


Lentil, Pea and Roasted Cherry Tomato salad with Tahini Dressing

ingredients (for 2 to 4 people)

for the salad
1 cup uncooked brown lentils
2 cups frozen peas
2 gloves garlic
1 bunch of cherry tomatoes (with around 10 tomatoes)
olive oil
rosemary leaves
50 gr of good quality feta cheese
2 tablespoons pinecones 
1/4 cup chopped cilantro
garnish: avocado slices

for the dressing
2 tablespoons tahini (sesame seed butter)
1 tablespoon soya sauce
1 tablespoon honey
3 tablespoons white vinegar
1/4 cup water
1/4 garlic powder

How do I make it?

1. Preheat oven to 170C for the cherry tomatoes. Prepare a baking pan with some baking sheet and place the bunch of cherry tomatoes on top. Sprinkle some olive oil generously on top and place the rosemary leaves on top of the tomatoes. Place the baking pan in the oven and roast the tomatoes for around 25 minutes or until they become soft and their juices start coming out.
2. Next, cook your lentils. Normally I cook the lentils with a ration of 1:2 in salted water (1 cup lentils, 2 cups water) and then when they have soaked the first amount of water I taste them to see if they need more water. You don't need too much water for this as they won't be part of a soup. So imagine you cook them as you would cooke your rice. Taste the lentils to check for firmness. We want them soft but not too mushy. 
3. Place some butter in a medium pan and in medium heat. Chop nicely the gloves of garlic and transfer them into the pan. When the garlic has turned slightly brown, pour inside the frozen peas and some salt. Mix through the cooking of the peas and pour some water inside if they start to stick on the pan. The peas need around 10 minutes of cooking, not too much since they were frozen and not fresh.
4. Now that you have all the ingredients ready, let's assemble the salad. In a mixing bowl mix together 1 1/2 cup of cooked lentils and the peas together. Pour inside the chopped cilantro, the pinecones and mix again. Take a big serving bowl, then carefully place the salad on the center of the bowl. Take the cherry tomatoes out of the oven or where you had them cooling off, and place them on top of the salad. Then, with your hands (wear gloves if you want to) crumble the feta cheese on top.
5. For the dressing, mix all the ingredients in a bowl and using a hand mixer or with a spoon, mix very well everything. You are aiming for a creamy dressing, so no lumps should be left. I used a mixed I have for making frothed milk or frappe coffee. When you're done pour the dressing on top of the salad you had assembled in the previous step. Place some avocado slices or anything else on top to garnish.

RED LENTIL FALAFEL SUMMER BOWL


     Surviving the heatwave is a really tough task. Especially when you are used to having an air/conditioning when the temperature rises in extreme speed. This last week has been 33 C or 34 C in Zurich, with most of the days being windless. One way to make it through is to swim in the local pools here and pray for some rain soon. But the high temperature is not only happening in Switzerland, but the rest of Europe as I heard on the news the other day. Global warming says hello again!
     Anyways, for those of you who follow me on Instagram, I posted a photo the other day of the cheesecake ice cream I made last year and asked you for new ice cream ideas. I got some responses and will be soon making some really creamy and hopefully delicious ice cream. If you have any more ideas you would like to share here, please leave me a comment below.



     During the summer I realised that you cannot leave food for a longer time without eating it, even in the fridge. Cleaning up your pantry and combining leftovers for new recipes is the ideal thing to do in this hot weather.  Which brings me to this recipe I created in the spur of the moment. Red lentil falafels. I love falafels and I recently learned to like red lentils. Red lentils have a nutty flavour and don't need to be cooked for long time, actually only 7 to 10 minutes. For an impatient and hungry person like myself, this is a perfect deal. 
     This is a lighter version of the original falafels, but I can assure you it lacks no taste at all. I chose to bake these falafels, because during summer I cannot stand frying things. Feel free however to fry them if you have experience with falafels before or just wish something less healthy. I feel that this is a recipe I will be making a lot of times. The best thing about it is that you can make a big batch of falafels and then keep them in fridge. That way you can pair them either in salads or any other way you want to. 


Red Lentil Falafel Summer Bowl

ingredients for red lentil falafels (makes about 10-12 balls)

1 cup dry red lentils, rinsed
2 cups cooked chickpeas
2 garlic cloves
1/4 cup olive oil
1/4 fresh chopped parsley
1 teaspoon cumin
1 teaspoon sweet paprika
2 tablespoons good quality tahini (sesame seed butter)
1/4 cup oat flakes (and more if needed)
salt as needed

for the summer bowl (serves two)

2 1/2 cups fresh baby spinach
1/2cup chopped Greek feta
1/2 avocado sliced
2 tablespoons flaxseeds 
2 tablespoons olive oil
4 tablespoons balsamic vinegar
2 tablespoons tahini
1 tablespoon honey

how do I make it?

1. First step is to cook the red lentils according to instructions. Normally, they are cooked with 2 cups of water for 7 to 10 minutes or until soft. make sure you rinse them before cooking them and while cooking them make sure they don't overcook and turn into a mush.
2. Let the lentils cool and drain them letting all the excess water.
3. In a food processor, put all of the ingredients needed for the falafels. Season with salt as much as you want. What I like to do is taste for saltiness after I mix everything together. Set your food processor to high speed and mix very well. You need a quite thick mixture that is a bit moist. Open the lid of the processor and check with clean hands if the mixture is too moist or liquid. If it is, put some more oat flakes inside and mix again. When you feel the mixture is ready, transfer the bowl of the processor in the fridge for 20 minutes.
4. Preheat the over to 200 C. Get out your mixture and with clean hands or wearing gloves, start making medium size falafel bowls. I made them in a size between a golf and a tennis ball. Prepare a baking pan and place your falafels with some distance between them.
5. Sprinkle with some extra olive oil and bake for 20 minutes or until golden brown.
6. To prepare the salad bowls, rinse the spinach and transfer into two bowls. Place two or three falafels in each bowl. Place the chopped feta and sliced avocado in the bowls. Sprinkle the flaxseeds. Last, prepare your tahini dressing by mixing everything together. Pour into the bowls and enjoy the salad bowls in the next 30 minutes maximum!

ΣΑΛΑΤΑ ΜΕ ΓΛΥΚΟΠΑΤΑΤΑ, ΠΡΑΣΙΝΟ ΜΗΛΟ ΚΑΙ ΤΥΡΙ PROVOLONE


     Κάθε αλλαγή στη ζωή μας πρέπει να μας γεμίζει με ενθουσιασμό, δύναμη και όρεξη να συνεχίσουμε με τα καινούργια δεδομένα που μας δίνονται προσπαθώντας να νιώθουμε ευτυχία και την επιτυχία των στόχων μας. Έτσι, αισθάνομαι και εγώ αυτές τις ημέρες που πλησιάζει το τέλος μιας εποχής στη δουλειά που ήμουν για 2 χρόνια εδώ στην Ελλάδα και αρχίζει κάτι νέο κάπου λίγο πιο μακριά, στη Ζυρίχη της Ελβετίας. Έχω καλό προαίσθημα, πως όλα θα έρθουν όπως πρέπει, γιατί μέχρι στιγμής αυτό ακριβώς έγινε. Ο χρόνος θα περάσει, το καλοκαίρι θα φύγει όμορφα μεν, γρήγορα δε, και από τέλη Αυγούστου θα βρίσκομαι σε μια πόλη που συνδυάζει το μοντέρνο με το παλιό, είναι καταπράσινη, έχει καιρό ανάλογο του Λονδίνου και όλοι μιλούν Γερμανικά (και Αγγλικά εντάξει). Θα πρέπει να ζοριστώ να μάθω μια άλλη γλώσσα, να γνωρίσω καινούργιους ανθρώπους και να ενταχθώ σε μια καινούργια πραγματικότητα που με ενθουσιάζει και με φοβίζει παράλληλα. Αυτό τελικά σημαίνει να ενηλικιώνεσαι...
     Πέρα από τις υπαρξιακές μου ανησυχίες που μοιράστηκα μαζί σας, έχω και μια συνταγή για σαλατούλα που μπορεί να σας συναρπάσει και να σας χορτάσει αρκετά. Το μαγικό (εάν θέλετε να το πείτε έτσι) συστατικό της είναι η ψημένη γλυκοπατάτα. Αυτό το λαχανικό πραγματικά νοστιμίζει κάθε πιάτο. Από διατροφικής άποψης μπορεί να ακούγεται σαν θερμιδική βόμβα, όμως, είναι πιο υγιεινή από την κλασική πατάτα καθώς περιέχει ανθεκτικό άμυλο που χορταίνει και δεν οδηγεί στην γρήγορη πτώση του σακχάρου του αίματος. Το πράσινο μήλο εξισορροπεί τη γλυκάδα της γλυκοπατάτας μαζί με το πικάντικο τυρί provolone που δίνει την απαραίτητη αλμυρή γεύση. 



Σαλάτα με ψητή γλυκοπατάτα, πράσινο μήλο και τυρί provolone

υλικά (για 2 μερίδες)

1 γλυκοπατάτα μεγάλη
4 κούπες ανάμεικτη σαλάτα πράσινη
1 πράσινο μήλο
50γρ τυρί provolone (πικάντικο ή κανονικό) σε κύβους
2 αυγά βραστά
2 κουταλιές σησαμέλαιο
2 κουταλιές σος σόγιας
χυμό από ένα λεμόνι

πώς θα το φτιάξω;

1. Ξεφλουδίστε την γλυκοπατάτα και κόψτε την σε μικρούς κύβους. Προθερμάνετε το φούρνο στους 180 C στο γκριλ και τοποθετήστε τους κύβους γλυκοπατάτας σε ένα ταψί με χαρτί ψησίματος. Ψήστε για 10-15 λεπτά.
2. Σε ένα μπολ προσθέστε την πράσινη σαλάτα. Κόψτε το πράσινο μήλο σε λεπτές φέτες (μην το ξεφλουδίσετε) και προσθέστε τες στη σαλάτα. Προσθέστε επίσης τη ψημένη γλυκοπατάτα και το τυρί provolone.
3. Αναμείξτε μαζί το σησαμέλαιο, το χυμό από λεμόνι και τη σος σόγιας. Περιχύστε τη σαλάτα με το μείγμα και ανακατέψτε καλά.
4. Μοιράστε τη σαλάτα σε 2 μπολ και προσθέστε σε κάθε μπολ τα βραστά αυγά κομμένα στη μέση.

ΣΑΛΑΤΑ ΜΕ ΡΟΚΑ, ΚΙΝΟΑ, ΚΟΥΚΟΥΝΑΡΙ, ΚΟΛΟΚΥΘΟΣΠΟΡΟ ΚΑΙ ΦΡΑΟΥΛΕΣ


     Είναι πραγματικά δύσκολο να είσαι μακριά από τον άνθρωπό σου, το ταίρι σου. Συνεχώς σκέφτεσαι πόσο πιο όμορφα θα ήταν να του λες όσα γίνονται στη ζωή σου από κοντά και όχι από το τηλέφωνο, να τον πάρεις μια αγκαλιά και να δεις το χαμόγελό του. Εδώ και ένα μήνα βιώνω αυτή την κατάσταση και ενώ σε λίγο καιρό πρόκειται να είμαστε μαζί όλη μέρα δεν παύει να είναι αρκετά δύσκολο. Πολλά πράγματα θα αλλάξουν στη ζωή μου μετά το καλοκαίρι και όντας υποστηρικτής των αλλαγών δεν μπορώ από το να ενθουσιαστώ για αυτές που πρόκειται να έρθουν.
     Μέσα στην καλοκαιρινή τρέλα και αναμονή, ψάχνω μανιωδώς το μέρος όπου θα απολαύσω τις φετινές καλοκαιρινές μου διακοπές. Πριν λίγες μέρες μπήκε στο μυαλό μου να επισκεφτώ τα πανέμορφα Χανιά με τις μοναδικές παραλίες και τα γραφικά σοκάκια. Σαν άλλη αρχαία Ελληνίδα φαντάζομαι τον εαυτό μου να φοράει ένα ολόλευκο φόρεμα και ένα ζευγάρι μαύρα σανδάλια που δένουν λίγο κάτω από το γόνατο. Δίπλα μου θα βρίσκεται είτε ένα πιάτο με φρούτα είτε ένα πιάτο με σαλάτα, δηλαδή αυτά κυρίως που τρώμε την περίοδο του καλοκαιριού. Γι αυτό σας ετοίμασα μια ωραία καλοκαιρινή σαλάτα με ρόκα, κινόα, ξηρούς καρπούς και φυσικά φράουλες.


     Πρόκειται για μια σαλάτα που αποτελεί πλήρες και χορταστικό γεύμα. Ίσως σας φανεί ελαφρώς γλυκιά. Στην περίπτωση αυτή μπορείτε να μην προσθέσετε την κρέμα από βαλσάμικο που προτείνω ως dressing στη συνταγή. Θέλει λίγη παραπάνω προσπάθεια από μια χωριάτικη σαλάτα, όμως, εάν έχετε βαρεθεί να τρώτε συνέχεια το ίδιο είδος σαλάτας και θέλετε να αλλάξετε γεύση, τότε σας την προτείνω ανεπιφύλακτα. Οι φράουλες είναι το αγαπημένο μου ανοιξιάτικο φρούτο και κάθε χρόνο προσπαθώ να τρώω όσες περισσότερες γίνεται. Μετά έρχεται η εποχή των νεκταρινιών και πνίγω τον πόνο της απώλειας της φράουλες (λόγω τέλους εποχής) σε αυτά.

Σαλάτα με ρόκα, κινόα, κουκουνάρι, κολοκυθόσπορο και φράουλες

υλικά (για 1 άτομο)

1 κούπα βρασμένη κινόα
2 κούπες ρόκα, καθαρισμένη
1 αγγούρι μεσαίο
1 κουταλιά κουκουνάρι
1 κουταλιά κολοκυθόσπορο
8 φράουλες
2 κουταλιές νιφάδες παρμεζάνας
αλάτι, ελαιόλαδο
κρέμα μπαλσάμικο ή 2 κουταλιές μπαλσάμικο ξύδι

πώς θα το φτιάξω;

1. Αρχικά πλύντε καλά τη ρόκα σας. Χοντροκόψτε την φροντίζοντας να πετάξετε τα κοτσάνια της και να αφήσετε μόνο τα φύλλα της.
2. Ξεφλουδίστε το αγγούρι και κόψτε το σε μικρούς κύβους. Βράστε τη κινόα σας σύμφωνα με τις οδηγίες της συσκευασίας.
3. Σε ένα τηγάνι καβουρδίστε σε μέτρια φωτιά για λίγα λεπτά το κουκουνάρι και τον κολοκυθόσπορο. Προσοχή να μην σας αρπάξουν!
4. Σε ένα μεγάλο πιάτο προσθέστε τη ρόκα στη βάση, από πάνω τους κύβους από το αγγούρι. Συνεχίστε απλώνοντας την κινόα, ενώ από πάνω περιχύστε το καβουρδισμένο κουκουνάρι και τους κολοκυθόσπορους. Αλατίστε όσο επιθυμείτε και προσθέστε 2 με τρεις κουταλιές ελαιόλαδο.
5. Προσθέστε μερικές νιφάδες από παρμεζάνα. Τέλος, κόψτε τις φράουλες στη μέση ή σε μικρότερα κομμάτια εάν είναι μεγάλες. Τοποθετήστε τες στην κορυφή της σαλάτας και περιχύστε με λίγη κρέμα από βαλσάμικο ή εάν δεν έχετε κρέμα, τότε κανονικό βαλσάμικο ξύδι. Απολαύστε αμέσως!
