DANISH RYE BREAD ROLLS STYLED TWO WAYS

There is nothing better than waking up on a Sunday morning only to smell some freshly brewed coffee and something being baked in the oven. Especially in winter months, this is my favourite way to wake up. That and my dog sniffing my face and wailing her tail. Last Sunday I was so happy that we had put some delicious dough into a big bowl to rise the night before and we could just pop it in the oven to bake. Currently, my obsession is rye bread and I thought "What better way to enjoy the cloudy days by having a delicious and homemade bread"?

---

     Δεν υπάρχει τίποτα καλύτερο από το να ξυπνάς πρωί Κυριακής και να μυρίζεις φρέσκο καφέ και κάτι να ψήνεται στον φούρνο. Ειδικά τους χειμερινούς μήνες αυτός είναι ο αγαπημένος μου τρόπος να ξυπνάω. Αυτός και το σκυλί μου να μυρίζει το πρόσωπό μου και να κουνάει χαρούμενα την ουρά της. Την περασμένη Κυριακή ήμουν τόσο χαρούμενη που είχαμε αφήσει λίγη ζύμη να σηκωθεί σε ένα μπολ το προηγούμενο βράδυ και το πρωί απλά μπορούσαμε να τη βάλουμε στο φούρνο να ψηθεί. Αυτή τη στιγμή το κόλλημά μου είναι το ψωμί σίκαλης και σκέφτηκα "Τι καλύτερος τρόπος να απολαύσεις τις συννεφιασμένες ημέρες από το να έχεις ένα νοστιμότατο και χειροποίητο ψωμί";

I admire the Scandinavians for their simplicity. Similar to the Japansese, they apply minimalism in their internal designs and food. They have simple recipes that are inspired by the local agriculture and climate, but definitely they are unique and tasty. The Dasish in particular have a staple in their homes called Rugbrød. This bread can be found in several varieties, but essentially is a rye based bread that contains rye flour, rye kernels and other seeds (pumpkin, sunflower and other). A simple slice of Rugbrød with butter is the basis of a Smørrebrød (open sandwich). In this recipe, we're not making the rye bread that I described exactly, but instead bread rolls that are close enough to a danish Rugbrød. We thought of showing different toppings, and the two chosen for this recipe were the winners!

Danish Rye Bread Rolls Styled Two Ways

Ingredients

For the rye bread rolls (makes about 8 rolls) / recipe inspired by Bronte Aurell in The ScandiKitchen
50gr rye kernels
25gr sunflower seeds (about 20gr more for topping)
25gr pumpkin seeds (about 20gr more for topping)
25gr crushed flaxseeds
7gr dried yeast
50ml lukewarm water
125 ml buttermilk
2 Tablespoons sunflower oil (or other vegetable oil)
1 teaspoon salt
1 teaspoon molasses
100gr rye whole wheat flour
250gr white flour (preferably strong type)
egg yolk for brushing

Topping 1: soft egg and trout
1 egg poached (can also use soft-boiled)
50gr trout in small pieces
handful of baby leaves (like spinach)
bean spread or other spread of choice
1 teaspoon chopped chives
balsamic cream

Toppin 2: cherry jam with "tomme fleurette" cheese
2 teaspoons cherry jam (or other not very sweet jam)
30gr "tomme fleurette" cheese (in Switzerland) or brie
handful of rucolla salad
handful of chopped walnuts

How do I make it?

For the bread rolls
1. Place the rye kernels, sunflower seeds, pumpkin seeds and flaxseeds in a medium pot with some water to cover. Boil the mixture for a few minutes in medium heat (approx. 5 minutes). Pour the mixture in a strainer and let cold water run through to cool and clean. Let to the side.
2. Pour the lukewarm water and dried yeast in a bowl and whisk well. Cover the bowl with plastic wrap and let it rest for 15 minutes.
3. Gently warm the buttermilk in a pan to lukewarm. Pour the buttermilk and activated yeast in a bowl of a stand mixer. Add the oil, salt, molasses and rye flour and mix well with a dough hook. Then add the rye kernels and seeds mixture from step 1. Start slowly adding the white flour until you get a slightly sticky and elastic dough. Cover the bowl with an elastic wrap and leave to rise overnight (best) or for 2 hours at least.
4. Flour a clean surface and transfer the dough which should be double in size at this stage. Knead the dough and add some flour if the dough is still sticky. Once the dough is ready and using a rolling pin (or hands) roll the dough to a 10 x 20 rectangle about 5cm thick. Cut the dough into 8 equal squares. Brush the surface of the rolls with the egg yolk and sprinkle some sunflower and pumpkin seeds on top.
5. Place the rolls in a pan with baking sheets. Cover them with a clean towel and let them rise for 30 minutes again. Bake the rolls in preheated oven at 180C for 15 minutes. Remove from the over and let them cool.

For the Topping 1
Cut one bread roll carefully in half sideways. Place the bottom of the roll in a plate and cover with your spread of choice. Top with the handful of salad, then the pieces of trout. Finally, put the egg on top. Sprinkle with the chives and the balsamic creme. Enjoy!

For the Topping 2
Cut one bread roll carefully in half sideways. Place the bottom of the roll in a plate and place a handful of rucolla salad. Top with the soft cheese of choice and then with the cherry jam. To finish, sprinkle some walnuts on top. Double enjoy!

Πώς το φτιάχνω;

Για το Topping 1

Για το Topping 2

TART WITH WINE POACHED PEARS AND MARZIPAN FILLING (SCANDINAVIAN RECIPE)

It has been quite a while since I posted a recipe to this blog. Almost over 4 months now. Sometimes it happens that life is so quick, exciting or even at time demanding, that one needs to set priorities. In my case, it was both demanding due to a new job I got last year, but also I didn't have the inspiration or the thrill that I used to get before. I felt like I needed more time to myself, to care for my mind and body, spend time with friends, travel and generally experience life. Not to say that I don't love making recipes and sharing them with you guys.
Which is why I have a brand new recipe that I made yesterday and it has a special ingredient I haven't used before. Marzipan is made of almonds and is simply an almond paste that is used to make sweets. I first encountered it when I was living in Stockholm and I first tasted some of their marzipan based sweets. In all honesty, those sweets can be found also at IKEA, but I didn't really taste the ones there. Also, after some googling, it seems that the Italians, and mostly the southern Italians, also use it in their sweets.  For me it was an interesting ingredient to work with and the result was better than expected!

The recipe is adapted by the book The Scandi Kitchen, which is a great cooking book to have if you enjoy the Scandinavian food and the simplicity sometimes that exists in their cuisine. The actual recipe calls for Glögg, which is similar to Glühwein or Mulled wine. In another words, a spiced and slightly sweetened wine. I didn't have any mulled wine in my pantry, so I had to introduce some of the spices myself and I share this recipe as well with you. Otherwise, you can skip this part and use a spiced wine.
Also, another slight modification I did was to use a round cake pan instead of a tart pan that was required for this recipe. I know, that's not the best thing to do, when you're trying to recreate a recipe. But I often miss one or two ingredients and I have to substitute them. I don't suggest it to you, though, as this recipe is much better for a tart pan, especially during baking.

Tart with wine poached pears and Marzipan filling (adapted from Scandi Kitchen)

ingredients

for the pears
3 medium sized pears
500ml red wine
2 star anise
3 to 4 cloves
1 stick of cinnamon

for the dough
1 egg
150gr cold butter
220gr all purpose flour
40gr sugar
1 teaspoon water

for the marzipan filling
150gr marzipan (in pieces)
100gr butter in room temperature
100gr sugar
2 eggs
1 teaspoon cocoa powder
60gr flour
1 teaspoon vanilla essence or powder

to serve
almond flakes (toasted)
sirup from sweetened cherries

How do I make it?

1. First step is to make the dough. Cut the cold butter into small pieces and put it in a food processor along with flour. Pulse for half a minute to incorporate well. Then, transfer to a bowl of a standing mixer, add the sugar and egg and mix well until a sort of dough is created. Add the teaspoon of water, mix again and stop. Use your hands to shape the dough into a ball, making sure that you slightly kneed it to incorporate every last piece of flour or other ingredient left on the bowl. Wrap the dough in plastic wrap and let it sit in the fridge.
2. Now, make the pears. In a large pot pour the wine and the spices and cook on low heat. Peel and core the pears (cutting them in half) and place them in the pot. Close the lid of the pot and once it starts boiling, let it boil for a few seconds and then close the heat. When the wine has stopped boiling open then lid and let the pears cool down. I took the pot outside in the balkon and that sped up things quite a bit.
3. Take the dough out of the fridge. Next thing is to make the marzipan feeling. Place the smooth butter in a bowl of a mixer again and beat until smooth for about two minutes on medium to high speed. Then, pour in the sugar and beat for another one minute. Add in the marzipan pieces in three doses and beat well. Last add the flour, eggs, cocoa powder and vanilla essence and give it a good final beat until you have a smooth creamy filling. Set aside.
4. Preheat the oven to 180 C. Take the dough, flour a clear surface and roll out the dough into a round shape. Don't worry it doesn't need to be be perfect. Place the rolled out dough into a tart pan or a cake pan like I did. Make sure to place any excess dough in the sides of the pan. With a fork, pinch lightly the bottom and sides of the dough. Place a baking sheet on top of the dough and fill it with almonds, cashews and any other nuts. This step is optional. You can also place baking beans or any other "heavy" legume, nut, to keep the baking sheet in place and prevent the dough to rise too much. Bake the dough for 10 to 15 minutes, until lightly golden.
5. Take the dough out and let it cool for 10 minutes. Then, pour inside the marzipan filling evenly to the surface of the dough. Cut the pears into thin slices and place them in group of four to five slices on top of the filling creating a round pattern (as pictured here). Bake the tart for 20 to 25 minutes, or if you use a cake pan for 30 minutes, until the filling is set in the sides and middle.
6. Let it cool before serving for about 10 to 15 minutes. Decorate with some toasted almond flakes and drizzle some cherry sirup on top. Enjoy with some milk or a cup of coffee.

SWEDISH CINNAMON AND CARDAMOM KNOTS

Do you know this feeling of everything getting into place? This is something I've been experiencing the last few days. Between studying, assignments deadlines and personal life, I started to lose my focus of what's important and how to enjoy everyday with a new adventure. Everyday is a day of new possibilities and can teach you different things.
I am sitting at a lovely cafe here in Zurich, where you can find busy business men, young students or entrepreneurs, bloggers like myself and people who have ideas and want to share them so badly. This is a day like this for me. Where I want to share my ideas and dreams with the outside world. Normally, I'm a very shy person, quiet and self-consious. You won't see me being the heart of the party, this is true. But when I have a strong opinion or feeling, I will fight my best fight in order to make this opinion as loud as possible.

I have been busy with everything in life and not very active here on the blog. Two weekends ago, I got to spend some quality time with my dad...in Paris! Oh, God, how I adore this city. Beautiful streets, great food, a french smell in the air, sexy language, fashion everywhere. Its my dream destination, a place where I could see myself live for a long time. I still have it in the back of my mind, that maybe one day I will rent an apartment there next to a bakery and a flower shop and get everyday baguettes and flowers. What a life goal, right?
Speaking of baguettes and baking, I had a creative moment the other day while I was studying for an exam. It's one of those moments when stress really fills me in an overwhelming way and I have to get it out of my system. This cathartic process led to the making of these cinnamon and cardamom knots. I don't remember if I have mentioned this before, but in 2011 I spent 3 (yeah three) whole months in Stockholm, where I was introduced to kanelbullar, aka cinnamon buns. It was love at first sight I have to say, as it is with every sweet baked good for me. There was no way I wan't going to recapture the magic and taste of these buns.

I won't lie. These beauties do take sometime to make. But the smell from all the spices you are going to use is just...amazing. Don't think about the effort, think about the pleasure you will get afterwards.

Swedish Cinnamon and Cardamom buns (recipe by The Scandi Kitchen)

ingredients

250ml whole milk, lukewarm
80gr melted butter, slightly cooled
400-500gr white flour
13gr dried yeast or 25gr fresh yeast
40gr sugar
1 teaspoon cinnamon
1 teaspoon cardamom
1 egg beaten
1 teaspoon salt
chopped or slivered almonds

for the filling

100gr butter softened at room temperature
50gr sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon

for the syrup

1/4 cup honey
4 tablespoons water

How do I make it?

1. If you use dried yeast, pour the milk into a bowl and sprinkle yeast, whisking it at the same time slightly. Cover the bowl and leave for 1 minutes to become bubbly. If you use active yeast, then you don't have to let it get bubbly and after you put it inside the warm milk and have done the whisking you go straight to step two.
2. In a standing mixer fitted with a dough hook, pour into the milk with yeast and add the melted butter. Start mixing, allowing everything to combine, then add the sugar and continue to mix.
3. In another bowl shift 400gr of your flour and add the cinnamon, cardamom and salt together. Start adding the flour to the bowl of the mixer in small doses. Add half of the beaten egg and keep the other half on the side. Watch carefully your dough and add some flour (you may need the whole extra 100gr). For me, it was needed for the dough. The dough has to be sticky, not dry, but if you poke it then it shouldn't stick to your finger. The author says it's better to be more on the sticky side than on the dry one, because then when you bake the knots you won't get moist knots.
4. When you're finished, cover the bowl with a clean towel and let it rise double its size for about 1 hour.
5. Dust a clean surface with some flour, take out your dough and start kneading it, but not too much. It should be soft. Add more flour if needed. Using a rolling pin, roll out the dough to a 40x50cm or 16x20 in rectangle.
6. Time to make the filling. Place the soft butter, sugar, vanilla extract and cinnamon in a bowl and mix really well. Use a spatula to spread the filling evenly on the dough surface. Then roll have of the dough on top of the other.
7. Use a knife or pizza cutter to cut 16 even strips of dough. Carefully take a strip and twist it a few times holding one end stable, then roll into a knot. You can see how the author makes the knots in this video. I found it very helpful to make the knots. Place each bun on the baking sheet of a big pan and once you're done with all of them, cover them with a towel and let them rise again for 30 minutes.
8. Preheat oven to 200 C. Brush each bun with the remaining beaten egg and bake them for 10 to 12 minutes. Be careful not to overbake them, they should be slightly golden brown. Take the pan out of the oven immediately once they're done and cover them with a damp clean towel to prevent dryness.
9. To make the syrup, heat in a saucepan the honey with the water. Brush each bun with the syrup and then cover with chopped almonds.
