TANGZHONG BREAD WITH BARLAUCH PESTO AND SUN-DRIED TOMATOES


     Who would have thought that this year would pass by so quickly and feel almost as if we haven't lived it yet. Like we missed this year. Speaking around with friends, there is a sentiment of mixed sadness with slight comfort that the year is about to finish. For us this year means staying in moody Zurich and cooking our own Christmas food as we plan to welcome close friends in limited numbers (an as per local regulations). Personally I read and interpret regulations daily in my job, so obeying them as well in my personal life is not that difficult. Since we are staying apart from our families this year we are trying to make the best of it and enjoy each moment of relaxation.

    Ποιος θα πίστευε ότι φέτος ο χρόνος θα περάσει τόσο γρήγορα και θα αισθανθούμε σχεδόν σαν να μην το ζήσαμε ακόμα. Σαν να χάσαμε τη φετινή χρονιά. Μιλώντας με φίλους, υπάρχει μια αίσθηση μικτής θλίψης με ελαφριά ανακούφιση ότι η χρονιά πρόκειται να τελειώσει. Για εμάς αυτό το έτος σημαίνει ότι μένουμε στη συννεφιασμένη Ζυρίχη και μαγειρεύουμε τα δικά μας χριστουγεννιάτικα φαγητά καθώς σκοπεύουμε να καλωσορίσουμε στενούς φίλους σε περιορισμένο αριθμό (σύμφωνα με τους τοπικούς κανονισμούς). Προσωπικά διαβάζω και ερμηνεύω κανονισμούς καθημερινά στη δουλειά μου, οπότε δεν δυσκολεύω να τηρήσω κανόνες και στην προσωπική μου ζωή. Δεδομένου ότι μένουμε μακριά από τις οικογένειές μας φέτος προσπαθούμε να αξιοποιήσουμε με το καλύτερο και να απολαύσουμε κάθε στιγμή χαλάρωσης.



     My husband is a true admirer of Japan and Japanese culture. From the tattoos on his legs to the food he likes to eat. Of course, in our bucket list before Covid-19 pandemic appeared, was to visit Japan with friends and make the most of this amazing culture. And what better way to learn about the culture than to make a traditional recipe? The idea then came to reproduce a bread making technique originating from Japan (and then captured in other Asian countries, such as China). The Tangzhong is a technique, which is also called "water roux". Essentially it's a paste of flour cooked in water or milk, which is then used in the bread you make to give it a soft texture and spongy form. It's the perfect texture that you would expect from a soft bread. The best part? You don't need to let it rise overnight or do too many things with your dough.

    Ο σύζυγός μου είναι αληθινός θαυμαστής της Ιαπωνίας και του ιαπωνικού πολιτισμού. Από τα τατουάζ στα πόδια του μέχρι το φαγητό που του αρέσει. Φυσικά, στη λίστα με χώρες να επισκεφτούμε, πριν εμφανιστεί η πανδημία Covid-19, ήταν και η Ιαπωνία και να αξιοποιήσουμε με το ταξίδι μας στο έπακρο αυτήν την καταπληκτική κουλτούρα. Και ποιος καλύτερος τρόπος να μάθετε έναν πολιτισμό από το να φτιάξετε μια παραδοσιακή συνταγή; Η ιδέα ήρθε να αναπαραγάγουμε μια τεχνική παρασκευής ψωμιού που προέρχεται από την Ιαπωνία (και στη συνέχεια εξελίχθηκε και σε άλλες ασιατικές χώρες, όπως η Κίνα). Το Tangzhong είναι μια τεχνική, η οποία ονομάζεται επίσης "water roux". Ουσιαστικά είναι μια πάστα από αλεύρι μαγειρεμένο σε νερό ή γάλα, το οποίο στη συνέχεια χρησιμοποιείται στο ψωμί που φτιάχνετε για να του δώσετε μια απαλή υφή και σπογγώδη μορφή. Είναι η τέλεια υφή που θα περιμένατε από ένα μαλακό ψωμί. Και το καλύτερο; Δεν χρειάζεται να αφήσετε τη ζύμη να ανέβει όλη τη νύχτα ή να κάνετε πάρα πολλά πράγματα με τη ζύμη σας.


Tanzhong Bread with Bärlauch Pesto and Sun-Dried Tomatoes

ingredients

for bread-paste
40gr bread flour
200gr water

for rest of bread
580gr bread flour
60gr sugar
12gr salt
10gr dry yeast
10gr powdered milk
260gr milk
50gr egg
50gr cold butter

bärlauch pesto
3 to 4 tablespoons of pesto made with bärlauch (wild garlic leaves) or any other pesto

sun-dried tomatoes
10 sun-dried tomatoes
2 tablespoons olive oil
1/2 teaspoon garlic powder

How do I make it?
1. Take the ingredients for the bread paste and heat them together in a pot (medium heat) until a soft paste is created. Then put the paste in the fridge for  at least 2 hours (you can leave it more if you have time). You should take it out of the fridge at least one hour before going to step 2.
2. In a large bowl of standing mixer, put the flour, sugar, salt, dry yeast and powdered milk and mix well together, using the hook for doughs. Add the bread paste from step 1, the milk and egg to the dry mixture and place your mixer in slow speed in the beginning in order not to overspill the ingredients to your kitchen floor (or ceiling). You will see a soft dough being created in your mixing bowl. Add the butter to the dough and start mixing in medium to high speed to let the butter "melt" in your dough and get incorporated.
3. Let the dough sit in the mixing bowl, covered with a clean towel or plastic membrane, for 40 minutes to 1 hour. The dough will double or triple itself.
4. Divide your dough in two bigger and two smaller portions by rolling them into small bread rolls on a floured and clean surface. Your dough will be so soft, so this step will be very easy. Cover the rolls and let sit for another 15 minutes.
5. Take two rolls and roll the sides until you have a cylinder dough (to be used for shaping braids). You should create two big braids and two smaller ones (about half the side of the bigger one). Push lengthwise the surface of one big braid and one smaller with your fingers to create a sort of mould in the middle to place the fillings. 
6. For the pesto bread, simply take the tablespoons and try to place them in the centre of the mould you've created on the dough of each braid. Then taking the sides of the dough lengthways, try to close the braids slightly so that the filling doesn't slip out when you put the braids together and also during baking. Once you are done, take the larger braid (placing it horizontally) and in the middle place the smaller braid vertically. Push a bit at the spot where the two braids touch and then start braiding as you would do normally, by taking one side of the larger braid, then the other side and then continuing doing so until you have a nice braided loaf in the end. 
7. For the sun-dried tomatoes, you will do the same process as in step 6. To make the filling, simply place all your ingredients in a food processor and pulse well until you get a nice smooth paste with some bigger pieces of tomato inside.
8. When you're ready to bake the breads, preheat your oven to 180 C and then place the loafs in a large baking pan covered with some baking paper. Coat them with some egg yolk mixed with milk. Bake the breads for 25 minutes or until golden brown.

Ψωμί Tanzhong με Pesto Άγριου Σκόρδου και Λιαστή Ντομάτα

υλικά 

για πάστα ψωμιού 
40γρ αλεύρι ψωμιού 
200γρ νερό 

για υπόλοιπο ψωμιού 
580γρ αλεύρι ψωμιού 
60γρ ζάχαρη 
12γρ αλάτι 
10γρ ξηρή μαγιά 
10γρ γάλα σε σκόνη 
260gr γάλα 
50γρ αυγό 
50 γρ. κρύο βούτυρο 

για την pesto άγριου σκόρδου
3 έως 4 κουταλιές της σούπας πέστο φτιαγμένο με bärlauch (φύλλα άγριου σκόρδου) ή οποιοδήποτε άλλο πέστο 

για την λιαστή ντομάτα
10 λιαστές ντομάτες 
2 κουταλιές ελαιόλαδο 
1/2 κουταλάκι του γλυκού σκόνη σκόρδου 

Πώς το φτιάχνω; 
1. Πάρτε τα υλικά για την πάστα ψωμιού και ´ ζεστάνετε μαζί σε μια κατσαρόλα (μέτρια φωτιά) μέχρι να δημιουργηθεί μια απαλή πάστα. Στη συνέχεια, βάλτε την πάστα στο ψυγείο για τουλάχιστον 2 ώρες (μπορείτε να την αφήσετε περισσότερο αν έχετε χρόνο). Πρέπει να βγάλετε την πάστα από το ψυγείο τουλάχιστον μία ώρα πριν πάτε στο βήμα 2. 
2. Σε ένα μεγάλο μπολ αναμικτήρα, βάζουμε το αλεύρι, τη ζάχαρη, το αλάτι, την ξηρή μαγιά και το γάλα σε σκόνη και ανακατεύουμε καλά, χρησιμοποιώντας το γάντζο για ζύμες. Προσθέστε την πάστα ψωμιού από το βήμα 1, το γάλα και το αυγό στο ξηρό μείγμα και τοποθετήστε το μίξερ σας σε αργή ταχύτητα στην αρχή, ώστε να μην υπερχειλίσετε τα συστατικά στο πάτωμα της κουζίνα σας (ή στην οροφή). Θα δείτε μια μαλακή ζύμη να δημιουργείται στο μπολ ανάμειξης. Προσθέστε το βούτυρο στη ζύμη και αρχίστε να ανακατεύετε σε μεσαία έως υψηλή ταχύτητα για να αφήσετε το βούτυρο να λιώσει στη ζύμη σας και να ενσωματωθεί. 
3. Αφήστε τη ζύμη να παραμείνει στο μπολ ανάμιξης, καλυμμένη με καθαρή πετσέτα ή πλαστική μεμβράνη, για 40 λεπτά έως 1 ώρα. Η ζύμη θα διπλασιαστεί ή τριπλασιαστεί. 
4. Χωρίστε τη ζύμη σας σε δύο μεγαλύτερες και δύο μικρότερες μερίδες τυλίγοντας τις σε μικρά ρολάκια σε μια αλευρωμένη και καθαρή επιφάνεια. Η ζύμη σας θα είναι τόσο μαλακή, οπότε αυτό το βήμα θα είναι πολύ εύκολο. Καλύψτε τα ρολά και αφήστε τα να ξεκουρασύντο για άλλα 15 λεπτά. 
5. Πάρτε δύο ρολά και ρολάρετε τις πλευρές έως ότου έχετε μια ζύμη κυλίνδρου (που θα χρησιμοποιηθεί για τη διαμόρφωση πλεξούδων). Πρέπει να δημιουργήσετε δύο μεγάλες πλεξούδες και δύο μικρότερες (περίπου μισό μέγεθος της μεγαλύτερης). Σπρώξτε κατά μήκος την επιφάνεια μιας μεγάλης πλεξούδας και μιας μικρότερης με τα δάχτυλά σας για να δημιουργήσετε ένα είδος καλουπιού στη μέση για να τοποθετήσετε τις γεμίσεις. 
6. Για το ψωμί με πέστο, απλώς πάρτε τις κουταλιές της σούπας και προσπαθήστε να τα τοποθετήσετε στο κέντρο του καλουπιού που έχετε δημιουργήσει στη ζύμη κάθε πλεξούδας. Στη συνέχεια, λαμβάνοντας τις πλευρές της ζύμης κατά μήκος, προσπαθήστε να κλείσετε τις πλεξούδες ελαφρώς, ώστε το γέμισμα να μην γλιστρήσει όταν βάζετε τις πλεξούδες μαζί και επίσης κατά το ψήσιμο. Μόλις τελειώσετε, πάρτε τη μεγαλύτερη πλεξούδα (τοποθετώντας την οριζόντια) και στη μέση τοποθετήστε την μικρότερη πλεξούδα κάθετα. Πιέστε λίγο στο σημείο όπου αγγίζουν οι δύο πλεξούδες και μετά ξεκινήστε να πλέκετε όπως θα κάνατε κανονικά, παίρνοντας τη μία πλευρά της μεγαλύτερης πλεξούδας, στη συνέχεια την άλλη πλευρά και στη συνέχεια συνεχίζοντας να το κάνετε μέχρι να έχετε ένα ωραίο καρβέλι σε σχήμα πλεξούδας στο τέλος. 
7. Για τις λιαστή ντομάτα, θα κάνετε την ίδια διαδικασία με το βήμα 6. Για τη γέμιση, απλώς τοποθετήστε όλα τα συστατικά σας σε έναν επεξεργαστή τροφίμων και σφυγμό καλά μέχρι να πάρετε μια ωραία λεία πάστα με μερικά μεγαλύτερα κομμάτια ντομάτας μέσα. 
8. Όταν είστε έτοιμοι να ψήσετε τα ψωμιά, προθερμαίνετε το φούρνο σας στους 180 C και στη συνέχεια τοποθετήστε τα ψωμιά σε ένα μεγάλο ταψί καλυμμένο με λίγο χαρτί ψησίματος. Καλύψτε τα με λίγο κρόκο αυγού αναμεμειγμένο με γάλα. Ψήνουμε τα ψωμιά για 25 λεπτά ή μέχρι να ροδίσουν.

DANISH RYE BREAD ROLLS STYLED TWO WAYS

     There is nothing better than waking up on a Sunday morning only to smell some freshly brewed coffee and something being baked in the oven. Especially in winter months, this is my favourite way to wake up. That and my dog sniffing my face and wailing her tail. Last Sunday I was so happy that we had put some delicious dough into a big bowl to rise the night before and we could just pop it in the oven to bake. Currently, my obsession is rye bread and I thought "What better way to enjoy the cloudy days by having a delicious and homemade bread"?

     Δεν υπάρχει τίποτα καλύτερο από το να ξυπνάς πρωί Κυριακής και να μυρίζεις φρέσκο καφέ και κάτι να ψήνεται στον φούρνο. Ειδικά τους χειμερινούς μήνες αυτός είναι ο αγαπημένος μου τρόπος να ξυπνάω. Αυτός και το σκυλί μου να μυρίζει το πρόσωπό μου και να κουνάει χαρούμενα την ουρά της. Την περασμένη Κυριακή ήμουν τόσο χαρούμενη που είχαμε αφήσει λίγη ζύμη να σηκωθεί σε ένα μπολ το προηγούμενο βράδυ και το πρωί απλά μπορούσαμε να τη βάλουμε στο φούρνο να ψηθεί. Αυτή τη στιγμή το κόλλημά μου είναι το ψωμί σίκαλης και σκέφτηκα "Τι καλύτερος τρόπος να απολαύσεις τις συννεφιασμένες ημέρες από το να έχεις ένα νοστιμότατο και χειροποίητο ψωμί";



    I admire the Scandinavians for their simplicity. Similar to the Japansese, they apply minimalism in their internal designs and food. They have simple recipes that are inspired by the local agriculture and climate, but definitely they are unique and tasty. The Dasish in particular have a staple in their homes called Rugbrød. This bread can be found in several varieties, but essentially is a rye based bread that contains rye flour, rye kernels and other seeds (pumpkin, sunflower and other). A simple slice of Rugbrød with butter is the basis of a Smørrebrød (open sandwich). In this recipe, we're not making the rye bread that I described exactly, but instead bread rolls that are close enough to a danish Rugbrød. We thought of showing different toppings, and the two chosen for this recipe were the winners!

     Θαυμάζω τους Σκανδιναβούς για την απλότητά τους. Παρόμοια με τους Ιάπωνες, εφαρμόζουν τον μινιμαλισμό στον εσωτερικό σχεδιασμό και στο φαγητό. Έχουν απλές συνταγές που εμπνέονται από την τοπική γεωργία και το κλίμα, αλλά σίγουρα είναι μοναδικές και νόστιμες. Οι Δανοί έχουν ειδικότερα ένα βασικό προϊόν στα σπίτια τους που ονομάζεται Rugbrød. Αυτό το ψωμί μπορεί να βρεθεί σε διάφορες ποικιλίες, αλλά ουσιαστικά είναι ένα ψωμί με βάση τη σίκαλη που περιέχει αλεύρι σίκαλης, σπόρους σίκαλης και άλλους σπόρους (κολοκύθα, ηλίανθος και άλλα). Μια απλή φέτα Rugbrød με βούτυρο είναι η βάση ενός Smørrebrød (ανοιχτό σάντουιτς). Σε αυτήν τη συνταγή, δεν φτιάχνουμε το ψωμί σίκαλης που περιέγραψα ακριβώς, αλλά αντ 'αυτού ψωμάκια που είναι αρκετά κοντά σε ένα δανέζικο Rugbrød. Σκεφτήκαμε να δείξουμε διαφορετικά toppings, και οι δύο επιλογές που επιλέχθηκαν για αυτή τη συνταγή ήταν οι νικητές!


Danish Rye Bread Rolls Styled Two Ways

Ingredients

For the rye bread rolls (makes about 8 rolls) / recipe inspired by Bronte Aurell in The ScandiKitchen
50gr rye kernels
25gr sunflower seeds (about 20gr more for topping)
25gr pumpkin seeds (about 20gr more for topping)
25gr crushed flaxseeds
7gr dried yeast
50ml lukewarm water
125 ml buttermilk
2 Tablespoons sunflower oil (or other vegetable oil)
1 teaspoon salt
1 teaspoon molasses 
100gr rye whole wheat flour
250gr white flour (preferably strong type)
egg yolk for brushing

Topping 1: soft egg and trout
1 egg poached (can also use soft-boiled)
50gr trout in small pieces
handful of baby leaves (like spinach)
bean spread or other spread of choice
1 teaspoon chopped chives
balsamic cream

Toppin 2: cherry jam with "tomme fleurette" cheese 
2 teaspoons cherry jam (or other not very sweet jam)
30gr "tomme fleurette" cheese (in Switzerland) or brie
handful of rucolla salad
handful of chopped walnuts

How do I make it?

For the bread rolls
1. Place the rye kernels, sunflower seeds, pumpkin seeds and flaxseeds in a medium pot with some water to cover. Boil the mixture for a few minutes in medium heat (approx. 5 minutes). Pour the mixture in a strainer and let cold water run through to cool and clean. Let to the side.
2. Pour the lukewarm water and dried yeast in a bowl and whisk well. Cover the bowl with plastic wrap and let it rest for 15 minutes.
3. Gently warm the buttermilk in a pan to lukewarm. Pour the buttermilk and activated yeast in a bowl of a stand mixer. Add the oil, salt, molasses and rye flour and mix well with a dough hook. Then add the rye kernels and seeds mixture from step 1. Start slowly adding the white flour until you get a slightly sticky and elastic dough. Cover the bowl with an elastic wrap and leave to rise overnight (best) or for 2 hours at least.
4. Flour a clean surface and transfer the dough which should be double in size at this stage. Knead the dough and add some flour if the dough is still sticky. Once the dough is ready and using a rolling pin (or hands) roll the dough to a 10 x 20 rectangle about 5cm thick. Cut the dough into 8 equal squares. Brush the surface of the rolls with the egg yolk and sprinkle some sunflower and pumpkin seeds on top.
5. Place the rolls in a pan with baking sheets. Cover them with a clean towel and let them rise for 30 minutes again. Bake the rolls in preheated oven at 180C for 15 minutes. Remove from the over and let them cool.

For the Topping 1
Cut one bread roll carefully in half sideways. Place the bottom of the roll in a plate and cover with your spread of choice. Top with the handful of salad, then the pieces of trout. Finally, put the egg on top. Sprinkle with the chives and the balsamic creme. Enjoy!

For the Topping 2
Cut one bread roll carefully in half sideways. Place the bottom of the roll in a plate and place a handful of rucolla salad. Top with the soft cheese of choice and then with the cherry jam. To finish, sprinkle some walnuts on top. Double enjoy!

Δανέζικο ψωμί σίκαλης με δύο τρόπους

Συστατικά

Για τα ψωμάκια σίκαλης (κάνει περίπου 8 ψωμάκια) / συνταγή εμπνευσμένη από την Bronte Aurell στο The ScandiKitchen
50γρ πυρήνες/σπόροι σίκαλης
25γρ σπόροι ηλίανθου (περίπου 20 γραμμάρια περισσότερο για το τέλος)
25γρ σπόροι κολοκύθας (περίπου 20 γραμμάρια περισσότερο για το τέλος)
25γρ αλεσμένος λιναρόσπορος
7γρ ξηρή μαγιά
50 ml χλιαρό νερό
125 ml βουτυρόγαλα (buttermilk)
2 κουταλιές ηλιέλαιο (ή άλλο φυτικό έλαιο)
1 κουταλάκι του γλυκού αλάτι
1 κουταλάκι του γλυκού μελάσα
100γρ αλεύρι ολικής αλέσεως σίκαλης
250γρ. λευκό αλεύρι (κατά προτίμηση σκληρό)
κρόκος αυγού για το τέλος

Εκδοχή 1: μαλακό αυγό και πέστροφα
1 αυγό ποσέ (μπορεί επίσης να χρησιμοποιηθεί soft-boiled)
50γρ πέστροφα σε μικρά κομμάτια
χούφτα φύλλα baby spinach
spread φασολιών ή άλλη επιλογή
1 κουταλάκι του γλυκού ψιλοκομμένο σχοινόπρασο
βαλσάμικο κρέμα

Εκδοχή 2: μαρμελάδα κεράσι με τυρί "tomme fleurette"
2 κουταλάκια του γλυκού μαρμελάδα κεράσι (ή άλλη όχι πολύ γλυκιά μαρμελάδα)
30γρ τυρί "tomme fleurette" (στην Ελβετία) ή brie
χούφτα σαλάτα rucolla
χούφτα ψιλοκομμένα καρύδια

Πώς το φτιάχνω;

Για τα ψωμάκια
1. Τοποθετήστε τους πυρήνες σίκαλης, τους ηλιόσπορους, τους σπόρους κολοκύθας και τους λιναρόσπορους σε μια μεσαία κατσαρόλα με λίγο νερό για να το καλύψετε. Βράζουμε το μείγμα για λίγα λεπτά σε μέτρια φωτιά (περίπου 5 λεπτά). Ρίξτε το μείγμα σε ένα σουρωτήρι και αφήστε το κρύο νερό να περάσει για να κρυώσει και να καθαριστεί. Αφήστε το μείγμα στο πλάι.
2. Ρίξτε το χλιαρό νερό και την ξηρή μαγιά σε ένα μπολ και χτυπήστε καλά. Καλύψτε το μπολ με πλαστικό περιτύλιγμα και αφήστε το να ξεκουραστεί για 15 λεπτά.
3. Ζεστάνετε απαλά το βουτυρόγαλα σε μια κατσαρόλα για να γίνει χλυαρό. Ρίξτε το βουτυρόγαλα και την μαγιά σε ένα μπολ stand mixer. Προσθέστε το έλαιο, το αλάτι, τη μελάσα και το αλεύρι σίκαλης και ανακατέψτε καλά με ένα γάντζο ζύμης. Στη συνέχεια, προσθέστε τους πυρήνες σίκαλης και το μείγμα σπόρων από το βήμα 1. Ξεκινήστε αργά προσθέτοντας το άσπρο αλεύρι μέχρι να έχετε μια ελαφρώς κολλώδη και ελαστική ζύμη. Καλύψτε το μπολ με ένα ελαστικό περιτύλιγμα και αφήστε τη ζύμη να ξεκουραστεί όλη τη νύχτα (καλύτερα) ή τουλάχιστον για 2 ώρες.
4. Αλευρώστε μια καθαρή επιφάνεια και μεταφέρετε τη ζύμη που θα πρέπει να έχει διπλό μέγεθος σε αυτό το στάδιο. Ζυμώνουμε τη ζύμη και προσθέτουμε λίγο αλεύρι εάν η ζύμη είναι ακόμα κολλώδης. Μόλις η ζύμη είναι έτοιμη και χρησιμοποιώντας έναν πλάστη (ή τα χέρια) ρολλάρετε τη ζύμη σε ένα ορθογώνιο 10 x 20 επιφάνειας και πάχους περίπου 5 εκατοστών. Κόψτε τη ζύμη σε 8 ίσα τετράγωνα. Βουρτσίστε την επιφάνεια των κυλίνδρων με τον κρόκο του αυγού και πασπαλίστε μερικούς σπόρους ηλίανθου και κολοκύθας στην κορυφή.
5. Τοποθετήστε τα ρολά σε ένα ταψί με φύλλα ψησίματος. Καλύψτε τα με μια καθαρή πετσέτα και αφήστε τα να σηκωθούν ξανά για 30 λεπτά. Ψήνουμε τα ρολά σε προθερμασμένο φούρνο στους 180C για 15 λεπτά. Αφαιρέστε από πάνω και αφήστε τα να κρυώσουν.

Για το Topping 1
Κόψτε προσεκτικά ένα ρολό ψωμιού στη μέση πλαγίως. Τοποθετήστε το κάτω μέρος του ψωμιού σε ένα πιάτο και καλύψτε με το spread της επιλογής σας. Προσθέστε τη χούφτα σαλάτας και μετά την πέστροφα. Τέλος, βάλτε το αυγό στην κορυφή. Πασπαλίζουμε με το σχοινόπρασο και την κρέμα βαλσάμικο. Απολαύστε!

Κόψτε προσεκτικά ένα ρολό ψωμιού στη μέση πλαγίως. Τοποθετήστε το κάτω μέρος του ψωμιού σε ένα πιάτο και τοποθετήστε μια χούφτα σαλάτα rucolla. Γεμίστε με το μαλακό τυρί της επιλογής και στη συνέχεια με τη μαρμελάδα κεράσι. Για να τελειώσετε, πασπαλίστε μερικά καρύδια στην κορυφή. Διπλή απόλαυση!

HEALTHY BANANA AND OATMEAL BREAD (AND SOME TALK ABOUT EMOTIONAL EATING)


     It's been a while since I've written a recipe. I won't tell you clichés about how busy life is, because that's what it's like to most of people. The truth is I lacked the inspiration in my life I really needed. I am a sensitive and emotional human being and most of the times if I feel uninspired it shows up in every aspect of my life. So, my blogging life was affected as well. Since the last time I blogged, I've been to an amazing trip in Greece to Elafonisos island with my two best girlfriends. We had such a relaxing time, doing almost nothing but sunbathing, swimming and eating during the night. What else did we need? Just some quiet for a while...
     But it's not only my everyday life that gets affected by emotions,it's food as well. With food I share a love and hate relationship for a lot of years. I almost never like to talk about it and really, who cares? I enjoy food very much, but sometimes when stress sneaks into my life, I overuse food for the wrong reasons. Then I stress about food, which leads to more stress, which leads to more food and...you get the picture. 
     I've read a lot of articles talking about "listening to your body" and I always thought they were talking nonsense or made it seem so simple, when it's not. Willpower. Such a strong word and also so far to reach sometimes. And what about having an order in your life? 


   It often seems that when chaos exists in your life, it's the reflected chaos inside you that you look at. 



So, I had to do something about it.



     In my journey towards realising what my body is saying to me, I tried for the last two months to keep a journal. Not a calorie and food intake journal, but an emotional journal.  Every time I am hungry I make a note about how I am feeling at that time of the day. Then I can see which days or periods during the day I am really hungry and when I am just bored, angry, stressed or sad about something going on in my life. It's really a silly task to let myself realise sometimes that it's not hunger that's making me crazy and not being able to concentrate on something else. It's my own emotional chaos that is recking everything. If anything sounds familiar to you, then maybe you should give it a try and see if something clicks in your head. You can also read this article I found that talks suggests doing a Broccoli test before you eat anything. It also talks a lot about emotional eating. 




     Another major change in my life that helped me a lot with my relationship with food was exercise. But not once or twice a month exercise. Daily one, with a few breaks between the week. My plan? Plan ahead... Every Sunday I make a schedule about possible gym days, running or Pilates during the week and give it my best to try to do them all. So far it has really helped that in my new internship position we have a pretty good gym where I spend all my lunchtime days there. I am pretty sure my classmates and colleagues think I am a freak for doing so, but it really makes me feel amazing afterwards. I am doing a lot of HIIT sessions combined with running and Pilates, which I can never give up. 
     In this spirit of a healthier body and mind, I made a recipe this morning for a healthy banana bread with oatmeal, oat milk and walnuts. It's a real treat and since it's not very sweet, it's a good choice for breakfast. What I like doing with it is toasting it slightly and then slather on top some crunchy peanut butter. I am already hungry talking about it!

Healthy Banana and Oatmeal bread

ingredients (for one loaf)

2 large ripe bananas smashed and one not so ripe
1/4 cup oatmilk (or any other type of milk)
1/3 cup olive oil or vegetable oil
1 cup whole wheat flour
3/4 cup oats
1 teaspoon cinnamon
2 eggs
2 tablespoons honey or maple syrup
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup crushed walnuts

how do I make it?

1. Preheat oven to 180 C. In a large bowl whisk together the oil and honey. Then pour inside the eggs and whisk again very well until everything is combined. Add the milk and smashed bananas. 
2. Lastly add the flour, oats, baking soda, baking powder, cinnamon and salt and mix everything very well. Mix in the walnuts.
3. In a prepared loaf pan pour the bread dough. Take your other banana and slice in lengthwise. Top the unbaked bread with the two halves of banana. 
4. Bake the bread for 40 minutes or until slightly golden brown. 
5. Let it cool for about 10 minutes and then enjoy it while it's still warm.

Hummus tartines with Greek feta cheese, cherry tomatoes and walnuts


     How quickly time passes amazes me everyday. In one minute I am flying, sleep deprived, to Paris Airport of Charles de Gaulle, and the next minute I am packing my things to fly back to Zurich. Last weekend was spent walking up and down Rue de Rivoli, taking a bite at rue Lucien Sampaix next to the Place de la Republique and enjoying one pastry after the other. I was in Paris, dear friends, where each time I go gets even better than the previous. 
     I will stop rambling about the amazing time I had in Paris, as I intend to do it in another special post just about this city. Back to the cooking, I love that Spring makes its vibrant appearance again this year. Amazing weather, colours everywhere, strawberries will come around late April to May (the fresh ones) and in two week I will fly back to Greece for Easter. Before that, I plan to make some Easter recipes for you. I know I haven't been very active lately, but as an adult with responsibilities and studies, I have to study and be responsible.



     My boyfriend got us a bread maker two days ago. A BREAD MAKER! All you bread lovers I know you get me. I mean, I love bread and even more I love it when it's fresh and warm and crispy. Late at night, we decided to make our first bread with whatever we had in our kitchen pantry and voilà! A delicious and small loaf of bread that took three hours to make, was finally waiting for us to eat and savour.
     The idea for purchasing a bread maker came to us, when a good friend and head chef invited us for dinner with his wife and we enjoyed a lot of Turkish inspired food. With the food there was this amazing loaf of bread served on the table and we had to ask where it was coming from... The answer was, a bread maker. If you know me a little, you know I love homemade food and healthy that food even better. So, the idea to have a loaf of bread waiting for you without having to do the extra kneading it requires, sounded perfect to me. Don't get me wrong. The process of kneading and waiting for the bread to rise can be quite cathartic. But, whenever time is of essence, a bread maker can help.
     There was no better way to celebrate this, but to make a recipe with the remaining bread slices. And there was some homemade hummus calling me from the fridge that I most certainly, HAD to use. This is another way of letting you know, it was fridge clearance day! But who cares, when there is good food and good matching of food? The most important ingredient for this recipe I think is good hummus, so I left an easy recipe from the blog archive further down for you to make if you feel adventurous.

Hummus tartines with Greek feta cheese, cherry tomatoes and walntus 

ingredients

2 slices of bread of choice
1/2 cup of homemade or store-bought hummus
3 to 4 cherry tomatoes
1/2 cup Greek feta cheese crumbles
a handful of crushed walnuts
olive oil
sea salt
oregano (optional)


how do I make it?

1.Toast your slices of bread in a toaster as wanted. Cut your cherry tomatoes in small slices.
2.Spead a generous amount of hummus on each slice.
3.Start adding your toppings. First, add the slices of cherry tomatoes. Continue by topping the feta crumbles and walnuts.
4.Splash some sea salt as wanted and some olive oil. If you feel adventurous, add some oregano on top.
5.Enjoy your tartines with company or by your self.

GARLIC, HAM AND SWISS CHEESE BEER BREAD, VIMA GOURMET FOOD BLOG AWARDS 2016


     New month, new beginnings. This year I seem to be a master in those. This year started extremely well, as I took a trip back home, where I met my friends again and was nurtured by my family. During January I've been reading a lot of books, studying a foreign language and being less anxious about food and life in general. Now, February is here ad I cannot wait to see what is ahead of me. I booked another ticket to Paris this March, where I will meet my dad (he will come from Greece) and we will explore Paris again like we used to do when I was a teenager. I missed that so much! Plus, my dad is the only person who completely understand my utter fascination with this city and everything it offers.
     Other than daydreaming of Paris (which I should stop), I made the perfect recipe for a cold night in with some friends coming over. On the last day of January, the weather decided to change a bit from being freaking cold to being freaking wet. That meant...staying inside, because you could not get out without getting soaking wet. So, what better that to make something comforting to eat, right?
     The idea for this recipe was inspired and sponsored by greek brewing company, Amstel as part of this year's food blog awards hosted by culinary magazine Vima Gourmet in Greece. This savoury beer bread seems more like something your brother, boyfriend or guy friends would only eat, since it contains a whole can of beer. But it can be just as good for everyone, expect children and pregnant women. The ham, garlic and authentic swiss cheese really go well with beer as you will realise when you taste this bread. It comes out asa very soft yet thick bread that leaves a slight taste of good quality beer on the mouth when you eat it. My suggestion? Since it's winter and you'd rather stay inside, invited some friends over and start baking!




Garlic, Ham and Swiss cheese Beer Bread (sponsored by Amstel Beer)

ingredients (for one loaf)

3 cups of all purpose flour
2 tablespoons sugar
1 teaspoon salt
1 teaspoon baking powder
2 garlic gloves
1 cup ham chopped
1 cup swiss cheese + extra for topping
1 can of Almstel beer (330ml)
olive oil
2 tablespoons of melted butter

How do I make it?

1. Put a tablespoon or two of olive oil in a medium pan and sautee in medium heat the garlic with the ham until golden brown. Put pan aside.
2. In a large bowl shift your flour cup by cup. Add the sugar, salt and baking powder to the bowl. Make a whole inside the bowl and put in the sauteed ham and the cup of cheese. 
3. Pour in the entire can of beer. With a big wooden spoon start mixing everything together until you get a soft dough. 
4. Graise one loaf pan with one tablespoon of butter. Set your oven to 180 C. Transfer the dough carefully to the graised load pan and make sure it fills the pan evenly. Pour the second tablespoon of butter on top of the loaf.
5. Bake your bread for 35 minutes or until lightly golden. If you want to add some extra cheese on top, after your bread has been baked for 25 minutes, open the oven, carefully taking the pan out and add some cheese on top. Then transfer again in the oven to bake for the remaining time.
