OATS, APPLE & RAISINS BREAKFAST SCONES WITH DULCE DE LECHE


      This post is dedicated to somebody special that didn't know what Internet probably is but would be happy to know that we will think of her for the rest of the days. 

     The week started overall well, but the weekend was even better. My best friend here in Zurich asked me to make her wedding cake in September and I was so, so happy of the proposal. As she wants a rather boho wedding, I thought of a naked cake would be the best choice. As any other professional cake maker (I totally am), I decided to make a cake testing with two flavours for her and her future husband to taste. Let me tell you, they loved both, but at the end of the day we had to decide on one flavour and go with it. You may have seen some of my posts on instagram with the cake. I sincerely fell in love with this mini version of a cake. And my friends did too.
     I also had the chance to go to the Limmatschwimmen! Zurich friends, HOW AMAZING was this? I thought it was going to be awkward, but in reality it was really fun and the river was full of people. Of course, many thanks to Stadt Zürich for organizing this event and let's hope next year's animal is a unicorn. For those of you you who don't know the event, it's basically swimming in the Limmat river for about 2km or 1,5 hours holding on to a floating animal. This ywar the animal was a sea horse. My friends also enjoyed the event, although one of the guys was unlucky that his animal got blown out and he was barely surviving on it.


      I apologise for not posting this recipe earlier, but some things got in the way with my new job and as I am an extremely, over the top anxious and responsible human being (as much as I hate it often), I had to devote some of my time to it. 
     Anyways, the recipe is finally being written in this post. Lately, I have been experiencing some nostalgia for Edinburgh or Great Britain in general. Maybe it's because I really am over summer and want fall to come. And what place or which country better represents fall than UK? The land of creamy porridge and buttery biscuits. It was no surprise that I was looking for recipes on healthier versions for biscuits, since I am making an effort to eat healthy as much as I can. And to me, a healthy breakfast sets the tone for the day. As so, I wanted to create biscuits that you could eat in the morning occasionally and not feel like you ate a cake or something. Plus, what better way to celebrate upcoming fall than an apple, cinnamon and raisin biscuit (drizzled with dulce de leche sauce if you feel fancy)? 


     Oats, Apple, Cinnamon and Raisins Breakfast Scones (with dulce de leche)

ingredients (for 12 scones)

1 cup oats
1 cup white flour
3/4 cup whole wheat flour
1/4 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1/2 cup softened butter
1 cup buttermilk
1 medium apple cut in small pieces or grated
2 teaspoons cinnamon
1/4 cup raisins

topping (optional): dulce de leche 

How do I make it?

1. Mix together the butter and sugar with an electrical mixer until the butter softens and the sugar has been incorporated. Then add the buttermilk and mix well again. In another bowl, mix together the oats, flours, baking soda, cinnamon and salt. When ready, start adding the mixture to the wet ingredients in 5 additions. 
2. Once everything is incorporated, stop the mixer and add the apple with raisins. Try to mix everything with a wooden spoon or your hands. In the end your dough might be slightly wet. Don't worry about this, the scones will be moist and not dry.
3. Preheat oven to 180 C. Use a round pan for cakes, place a baking paper and then transfer the dough in the pan. Bake for 20 minutes or until the scones are nicely brown. Let them cool for some minutes and then cut them into pieces, as you would cut a cake or a pizza.
4. If you wish, you can drizzle some premade dulce de leche sauce on top!

SWEDISH CINNAMON AND CARDAMOM KNOTS


     Do you know this feeling of everything getting into place? This is something I've been experiencing the last few days. Between studying, assignments deadlines and personal life, I started to lose my focus of what's important and how to enjoy everyday with a new adventure. Everyday is a day of new possibilities and can teach you different things. 
     I am sitting at a lovely cafe here in Zurich, where you can find busy business men, young students or entrepreneurs, bloggers like myself and people who have ideas and want to share them so badly. This is a day like this for me. Where I want to share my ideas and dreams with the outside world. Normally, I'm a very shy person, quiet and self-consious. You won't see me being the heart of the party, this is true. But when I have a strong opinion or feeling, I will fight my best fight in order to make this opinion as loud as possible.



     I have been busy with everything in life and not very active here on the blog. Two weekends ago, I got to spend some quality time with my dad...in Paris! Oh, God, how I adore this city. Beautiful streets, great food, a french smell in the air, sexy language, fashion everywhere. Its my dream destination, a place where I could see myself live for a long time. I still have it in the back of my mind, that maybe one day I will rent an apartment there next to a bakery and a flower shop and get everyday baguettes and flowers. What a life goal, right?
     Speaking of baguettes and baking, I had a creative moment the other day while I was studying for an exam. It's one of those moments when stress really fills me in an overwhelming way and I have to get it out of my system. This cathartic process led to the making of these cinnamon and cardamom knots. I don't remember if I have mentioned this before, but in 2011 I spent 3 (yeah three) whole months in Stockholm, where I was introduced to kanelbullar, aka cinnamon buns. It was love at first sight I have to say, as it is with every sweet baked good for me. There was no way I wan't going to recapture the magic and taste of these buns. 


    I won't lie. These beauties do take sometime to make. But the smell from all the spices you are going to use is just...amazing. Don't think about the effort, think about the pleasure you will get afterwards. 

Swedish Cinnamon and Cardamom buns (recipe by The Scandi Kitchen)

ingredients

250ml whole milk, lukewarm
80gr melted butter, slightly cooled
400-500gr white flour
13gr dried yeast or 25gr fresh yeast
40gr sugar
1 teaspoon cinnamon
1 teaspoon cardamom
1 egg beaten
1 teaspoon salt
chopped or slivered almonds

for the filling

100gr butter softened at room temperature
50gr sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon

for the syrup

1/4 cup honey 
4 tablespoons water


How do I make it?

1. If you use dried yeast, pour the milk into a bowl and sprinkle yeast, whisking it at the same time slightly. Cover the bowl and leave for 1 minutes to become bubbly. If you use active yeast, then you don't have to let it get bubbly and after you put it inside the warm milk and have done the whisking you go straight to step two.
2. In a standing mixer fitted with a dough hook, pour into the milk with yeast and add the melted butter. Start mixing, allowing everything to combine, then add the sugar and continue to mix.
3. In another bowl shift 400gr of your flour and add the cinnamon, cardamom and salt together. Start adding the flour to the bowl of the mixer in small doses. Add half of the beaten egg and keep the other half on the side. Watch carefully your dough and add some flour (you may need the whole extra 100gr). For me, it was needed for the dough. The dough has to be sticky, not dry, but if you poke it then it shouldn't stick to your finger. The author says it's better to be more on the sticky side than on the dry one, because then when you bake the knots you won't get moist knots.
4. When you're finished, cover the bowl with a clean towel and let it rise double its size for about 1 hour. 
5. Dust a clean surface with some flour, take out your dough and start kneading it, but not too much. It should be soft. Add more flour if needed. Using a rolling pin, roll out the dough to a 40x50cm or 16x20 in rectangle.
6. Time to make the filling. Place the soft butter, sugar, vanilla extract and cinnamon in a bowl and mix really well. Use a spatula to spread the filling evenly on the dough surface. Then roll have of the dough on top of the other. 
7. Use a knife or pizza cutter to cut 16 even strips of dough. Carefully take a strip and twist it a few times holding one end stable, then roll into a knot. You can see how the author makes the knots in this video. I found it very helpful to make the knots. Place each bun on the baking sheet of a big pan and once you're done with all of them, cover them with a towel and let them rise again for 30 minutes.
8. Preheat oven to 200 C. Brush each bun with the remaining beaten egg and bake them for 10 to 12 minutes. Be careful not to overbake them, they should be slightly golden brown. Take the pan out of the oven immediately once they're done and cover them with a damp clean towel to prevent dryness. 
9. To make the syrup, heat in a saucepan the honey with the water. Brush each bun with the syrup and then cover with chopped almonds.

HONEY ROASTED BANANA WITH QUARK AND WALNUTS


     It is so strange how time passes by. The one minute you meet a person you find too akward to be around with and the next minute you are together for three years, have traveled to two countries together, moved to a foreign country together and had more food indulgencies together than seperately. I don't like melodramatic thoughts and attitudes, I am more of a moment person. If I can enjoy it now and feel good about it now, then I don't care about it in the future. And I think this is a good way (maybe not the best) to experience every relationship. Think about how the relationship is now, in the present, and enjoy the very good moments. Yes, bad moments are always there, heck I fight everyday with my boyfriend since we moved in together, but try not to focus on those and most importantly, move on...
     To celebrate our little anniversary, my sweet boyfriend got me a rose bouquet, which I photographed and feautured in this recipe. I like the fact that it is not a red roses bouquet, as I find those to be a bit of cliche. Flowers always make me smile and bring out my creative personality. Not the squeeky, girly one, but the calm, serene and at peace self. Bright colors are the best way to make my mood and make me concetrate. As well as a clean and tidy space, I like my home to have a neutral vibe with a few hints of color. This can be easily achieved with flowers. My personal choices? Peonies and roses.


     To get you back into the mood of cooking and eating, I was googling recipes of what to do with quark cheese. If you don't know what quark is, then you must know that it is mostly used in Germany, Austria and Switzerland, as well as some other northern countries like the Scandinavian countries. It is quite sour and has a creamly somewhat crumbly texture. It reminds me of a greek cheese we have, called "Katiki" . As I googled I realised that in Germany they make a Käsekuchen or cheesecake with it, so I decided to give it a go in the future and see what happens. Austians also use it in strudels and other desserts.
     Today I missed most of the ingredients for a cheesecake, but my imagination didn't give up on me. I had a few extra bananas lying in the fridge, almost ready to go bad. Why let them go bad and not take advantage of them by roasting them? Yeah, you heard me right. In a life of a foodie or a gourmet eater, bananas are roasted with extra honey and cinnamon. Then, topped on a big and fluffy layer of quark, ready to be devoured in a few minutes...




Honey roasted banana with quark and walnuts

ingredients (for two persons)

2 medium ripe bananas
300gr quark
2 teaspoons cinnamon
2 tablespoons good quality honey
1 handful of walnuts

optional: other nuts

How do I make it?

1. Preheat your oven to 200 C. Slice your bananas lengthwise and place them on a heatproof pan. Sprinkle with honey generously and then with cinnamon. You can add as much as you like, I only put the ammount I used.
2. Roast your bananas for 10 minutes.
3. As your bananas are being roasted, take out two bowls. Fill bowls with almost same ammount of quark. Add some honey and the walnuts. 
4. Take your bananas out of the oven and transfer them carefully to the bowls of quark. 
5. Enjoy peacefully, while listening to some jazz music!

SUNDAY BRUNCH: CINNAMON SCONE BREAD


     Ο πειραματισμός στην κουζίνα και ιδιαίτερα στην ζαχαροπλαστική δεν ήταν πάντα το φόρτε μου! Μπορεί να άλλαζα κάποιο υλικό στη συνταγή και το αποτέλεσμα να ήταν τραγικό για εμένα και όσους τολμηρούς δοκίμαζαν. Με τα χρόνια όμως και ύστερα από αρκετές δοκιμές/αποτυχίες, ανακάλυψα πως δεν υπάρχει πιο όμορφο πράγμα από το να πειραματίζεσαι. Και γιατί όχι με τα γλυκά; Τα τελευταία χρόνια έχουν προκύψει αμέτρητες συνταγές "υβρίδια" από αυτόν τον πειραματισμό. Σας θυμίζω το γνωστό πλέον "μπουγατσάν" (μπουγάτσα+κρουασάν) που δημιουργήθηκε στη Θεσσαλονίκη πριν από 2 χρόνια από τον Δημήτρη Κοπαράνη και μάγεψε τους πάντες. Κάτι παρόμοιο με το cronut (croissant+donut) που είχε τρελάνει τους Νεοϋρκέζους όταν βγήκε.
     Η σημερινή συνταγή όχι δεν αποτελεί πατέντα για μελλοντικό πλασάρισμα πρωτότυπου εδέσματος. Όμως, η ιδέα πίσω της ακολουθεί δύο βάσεις συνταγών που υπάρχουν ήδη. Η πρώτη είναι το scone, δηλαδή το βουτυράτο μπισκότο-κέικ που λατρεύουν οι Εγγλέζοι και συνοδεύουν με το τσάι/καφέ τους. Η δεύτερη είναι το pull-apart bread. Το pull-apart bread είναι στην ουσία ένα κέικ που θυμίζει καρβέλι ψωμιού και έχει δημιουργηθεί ενώνοντας διαφορετικά κομμάτια ζύμης. Κόβεται πολύ εύκολα γιατί συνήθως ανάμεσα στα κομμάτια ζύμης υπάρχει γέμιση και δεν "κολλάει" το κέικ.



     Σήμερα που είναι Κυριακή και έχετε (λογικά) παραπάνω χρόνο, δώστε λίγο από αυτόν στην προετοιμασία αυτού του κέικ. Θα σας αποζημειώσει για τον κόπο του, το εγγυώμαι. Η μόνη δυσκολία που θα συναντήσετε είναι στην μεταφορά των κομματιών ζύμης στο ταψί. Κατά τα άλλα είναι πολύ εύκολη και απλή συνταγή, ειδικά εάν είστε γνώστες των scones. Απολαύστε το με λίγο καφέ, χαλαρή μουσικούλα και ξεκινήστε όμορφα την ημέρα σας.

Cinnamon Scone Bread (pull-apart bread) 
*εμπνευσμένη από το Food52

υλικά
για τη γέμιση
4 κουταλιές αλεύρι
4 κουταλιές μαύρη ζάχαρη
2 κουταλιές άσπρη ζάχαρη
2 κουταλάκια κανέλα
1 κουτάλι κρέμα γάλακτος

για το κέικ
300γρ ή 2 1/2 κούπες αλεύρι
1/4 κούπας ζάχαρη
1 κούπα κρέμα γάλακτος
1 μεγάλο αυγό
1 κουταλάκι baking powder
80γρ παγωμένο βούτυρο
1/2 κουταλάκι σκόνη εσπρέσο
1/2 κούπα καρύδια χοντροκομμένα
1/4 κουταλάκι αλάτι
1 κουταλάκι υγρή βανίλια

πώς θα το φτιάξω;

1. Πρώτα φτιάξτε την γέμιση ανακατεύοντας όλα τα υλικά σας μαζί σε ένα μπολ. Εάν είναι πολύ ξηρό το μείγμα σας προσθέστε λίγο ακόμη κρέμα γάλακτος. Θέλουμε να είναι σαν πηκτή πάστα. Αφήστε το στην άκρη.
2. Σε ένα μεγάλο μπολ προσθέστε το αλεύρι, το baking powder, τη σκόνη εσπρέσο, το αλάτι και το βούτυρο (κομμένο σε κύβους). Με τα χέρια σας αρχίστε να ανακατεύετε με σκοπό να σχηματίσετε ένα ξηρό μείγμα που μοιάζει με χοντρή άμμο. Το βούτυρο θα αναμειχθεί με το αλεύρι τρίβοντάς το με τα χέρια σας μέχρι να μην υπάρχουν μεγάλα κομμάτια βουτύρου. Οι κινήσεις μοιάζουν με το πλάσιμο, μόνο που δεν δημιουργείται ζύμη. Όταν τελειώσετε προσθέστε τα καρύδια.
3. Στη συνέχεια, ανακατέψτε μαζί την κρέμα γάλακτος, το αυγό και την υγρή βανίλια πολύ καλά μέχρι να ομογενοποιηθούν. Μεταφέρετε το υγρό μείγμα στο μπολ με το ξηρό και ανακατέψτε ελαφρά με τα χέρια σας. Θα δημιουργηθεί μια ζύμη πολύ μαλακή και αφράτη.
4. Σε μια καθαρή επιφάνεια που θα αλευρώσετε, ανοίξτε τη ζύμη σας με ελαφριές κινήσεις και δημιουργήστε ένα παραλληλόγραμμο 20χ70 περίπου. Σκεφτείτε ότι θα πρέπει να χωρίσετε στη μέση το παραλληλόγραμμο και να πάρετε 10-12 ίσα κομμάτια. Η εικόνα εδώ θα σας βοηθήσει να μπείτε στο πνεύμα. Αλείψτε όλα τα κομμάτια με λίγη κρέμα γάλακτος.
5. Όταν έχετε τα κομμάτια σας ξεκινήστε αφήνοντας ένα κενό και στο επόμενο πασπαλίστε λίγη από τη γέμιση που φτιάξατε στην αρχή. Στην ουσία τα μισά κομμάτια θα είναι κενά και τα άλλα θα έχουν γέμιση. Ξεκινήστε με ένα κομμάτι που έχει γέμιση και τοποθετήστε ένα άλλο που δεν έχει. Προσθέστε γέμιση  και από πάνω τοποθετήστε ένα άλλο που να έχει γέμιση. Ακολουθήστε αυτό το μοτίβο γέμιση-κενό-γέμιση μέχρι να έχετε δημιουργήσει δύο μικρά πυργάκια.
6. Σε ένα παραλληλόγραμμο ταψί μεταφέρετε με προσοχή τα πυργάκια σας και στριμώχτε τα μεταξύ τους. Πασπαλίστε από πάνω λίγη γέμιση εάν σας έχει περισσέψει.
7. Ψήστε στους 180 βαθμούς για 45 λεπτά.

ΦΘΙΝΟΠΩΡΙΝΟ BIRCHER MUESLI ΜΕ ΑΧΛΑΔΙ, ΑΜΥΓΔΑΛΑ ΚΑΙ ΜΠΑΧΑΡΙΚΑ


     Είχα καιρό να απολαύσω τον ύπνο μου και να έχω ένα γεμάτο και δημιουργικό πρωινό. Πρόλαβα να κάνω δουλειές που είχα αφήσει για όποτε θα είχα χρόνο, συμμάζεψα λίγο το χάος που επικρατεί στο γραφείο μου και βρήκα χρόνο να ασχοληθώ λίγο με τη φωτογραφία και τη μαγειρική. Τις δυο μου τελευταίες αγάπες. Χάζεψα αμέτρητα blogs και συνειδητοποίησα πόσο όμορφο είναι να διηγείσαι μια ιστορία μέσω της φωτογραφίας, το λεγόμενο storytelling. Πιο συγκεκριμένα κόλλησα με το blog μιας φωτογράφου, η οποία κατοικεί εδώ και λίγο καιρό στο Άμστερνταμ και πραγματικά η δουλειά της είναι εκπληκτική. 
    Αυτό ήταν η αφορμή να ψάξω άπειρες ώρες στον υπολογιστή για νέους φακούς για τη φωτογραφική μου μηχανή, tutorials για το lightroom και κυρίως να πάρω έμπνευση από πολλές πηγές και ανθρώπους. Στο μέλλον, λοιπόν, είναι πολύ πιθανό να αρχίσω να χρησιμοποιώ την τεχνική της "αφήγησης μιας ιστορίας (storytelling) και την απαθανάτιση προσώπων στη ζωή μου είτε από φιλικά, συγγενικά πρόσωπα είτε από τυχαία πρόσωπα στην καθημερινότητά μου. 



     Παράλληλα ετοίμασα μια συνταγή πολύ φθινοπωρινή που μπορεί να σας συντροφέψει στα μουντά πρωινά που έρχονται. Μοσχομυρίζει μπαχαρικά και φρούτα, ενώ είναι πολύ εύκολη στην προετοιμασία. Έχω ξανακάνει μια παρόμοια συνταγή παλιότερα (Bircher Muesli με ακτινίδιο και gogi berries), αλλά κάθε φορά οι γεύσεις αλλάζουν και το αποτέλεσμα δεν σταματά είναι μοναδικό. Τώρα είναι η εποχή των μήλων και των αχλαδιών και εγώ εκμεταλλεύτηκα αυτή την ευκαιρία για να σας ετοιμάσω λίγο Bircher Muesli με αχλάδι και ζεστά μπαχαρικά. Μην πάει ο νους σας σε Πολίτικη Κουζίνα και σουτζουκάκια σμυρνέικα. Εδώ μιλάμε για κανέλα και πιπερόριζα που ξεχειλίζουν από άρωμα και γεύση.




Bircher Muesli με αχλάδι, αμύγδαλα και μπαχαρικά

υλικά (για 2 άτομα)

1 κούπα βρώμη
1 κούπα γάλα
1 κουταλάκι κανέλα
1/4 κουταλάκι πιπερόριζα
1/2 κούπα σταφίδες
1/2 κούπα αμύγδαλα χοντροκομμένα
1 αχλάδι

πώς θα το φτιάξω;

1. Σε ένα μεγάλο μπολ ανακατέψτε μαζί τη βρώμη, την κανέλα και την πιπερόριζα. Προσθέστε το γάλα και ανακατέψτε καλά.
2. Έπειτα, προσθέστε τις σταφίδες και μεταφέρετε το περιεχόμενο σε δύο μικρά βάζα ή σε ένα μεγάλο. Αφήστε το μείγμα στο ψυγείο όλη την νύχτα.
3. Όταν θέλετε να σερβίρετε, αδειάστε το μείγμα σε 2 μπολ και πασπαλίστε από πάνω λίγα αμύγδαλα. Τέλος, ξεφλουδίστε το αχλάδι και κόψτε το σε μικρούς κύβους. Μοιράστε τα κομμάτια στα δύο μπολ και απολαύστε.
