GINGERSNAP CAKE WITH BOURBON


     "If it isn't smelling like Fall, I am not eating it!" This could be a representing line of this years favourite season (for some of us). When you are a foodie at heart and a real lover of Autumn's best foods, then you really give your effort to try as many recipes as you can. Like myself, last Sunday when I tried to make for the first time apple cider donuts. However, since I had no donut hole pan, I did the obvious...tried to shape donut doughs. As you can already guess (and laugh at my attempt), this did not go well at all. I ended up with flattened out baked doughs of nothing! How great!
     In other news, I made a delicious pumpkin soup with carrots and potatoes as well and devoured it the whole week. I'm thinking of making a pumpkin pie next week that I haven't eaten for so long. When it comes to pies and pretty much anything I bake, I like to make everything from scratch. That means, even the buttery pie dough. I know that a lot of people use prepackaged ones, but I am a true believer of eating almost zero packaged food. It is an issue that bothers me quite a lot, because sometimes you just want to eat the damn cookie! But most of the times, I am the crazy lady reading the list of the ingredients and don't buy something unless I understand all of the ingredients.



     I always felt like an outsider when it comes to food and exercise. This is the first time I am saying this here, but there used to be a time when I was overweight. I don't like to use the f word, cause really who am I to judge? Especially my own self. Since that time I completely changed my lifestyle, going from eating junk food and lots of sweets, to eating fruit, vegetables and a hell lot amount of oatmeal. Although I am at a great stable weight for years, I feel a bit conscious about my food, where it comes from, how it has been processed. But now, it has more to do with a healthy living and not so much with losing weight.   
  Back a few years I wanted to get into Nutrition studies, after I majored from Nursing Sciences. I keep myself informed with new health trends, superfoods and a lot of health related news, but I adopt very few in my daily living for several reasons, the most important being...very few things work on everyone's body. No matter how healthy we eat, we exercise, we keep up with certain diets, in the end if we experience stress and unhappiness in our lives, then it will backfire everything.
     Few of my friends always ask me "How do you do it? How do you manage to cook, go to University, work and manage a blog, while being healthy?" I feel kind of bad when they ask me that, because I have no answer. I just do it. I don't feel like it's a big accomplishment.  And there are days that I eat Nutella out of the jar (ask my boyfriend). My point here is that trying to eat healthy does take some effort and commitment. But the goal is to be happy and feel great, not over stress ourselves about it.




     Now to the fun part of recipe. There is nothing better than plain old cake with your morning coffee, right? Also, there is nothing more delicious than a Gingersnap cake with a hint of bourbon inside. A simple recipe for all you folks who enjoy eating cake with a lot of ginger and spices. The initial intention was to use butter for this recipe. However, I find that olive oil makes every cake moist and not dry at all, so whenever I can, I incorporate it into recipes. 

Gingersnap cake with Bourbon

ingredients

3 cups all purpose flour
1/2 cup olive oil
3/4 cup honey
2 eggs
1 cup water
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
2 tablespoons Bourbon
icing sugar


how do I make it?

1. In a large bowl mix together honey and olive oil for about a minute or until smooth. Then start adding your eggs one at a time, mixing well after each addition. Finally add the Bourbon and mix for a few seconds again.
2. In another bowl, mix together your flour, ginger, cinnamon and ground cloves. Take the bowl in the first step and start pouring its content to this bowl, mixing with a spatula or spoon until you've added all the mixture.
3. Boil the water and place the baking soda in a smaller bowl. Once the water is boiled, pour in into the baking soda, while stirring with a spoon. Then transfer the hot mixture into your previous mixture and mix again with a spatula.
4. Preheat oven to 180 C and place a baking paper into your pan. You will need a medium to large rectangular pan. Pour the batter carefully into the pan and let it sit for a couple of minutes.
5. Bake your cake for 35-40 minutes or until it has a golden surface and a toothpick inserted into it comes out clean.
6. Let it cool completely and then coat it into a lot of icing sugar.

SWEDISH PEPPARKAKOR (GINGERSNAP COOKIES)


     Holidays can be stressful. Now I know what my mum was stressing about all those years. You see, when you are at your own house and experiencing holidays, that means that someone has to take care of sweets being around the house on those jolly days. So, who does that? Me. Obviously. But I will stop complaing, because I really enjoy baking (if you have not noticed yet) and this season is all about baking and smells coming from the kitchen. You just put on some Michael Buble music on and let the magic begin. 
      This is the month I am trying to do as many holiday recipes as possible. I initially wanted to show you all our traditional recipes for honey-dipped cookies called "melomakarona" or our buttery and icing sugar cookies called "kurampiedes". But, since my mum has not sent me yet her secret and delicious recipe (really the secret is good quality honey and fine butter), I am going with another traditional holiday recipe from a country I admire and want to visit again as it brings back so good memories.



     The first recipe I am trying this year is from Sweden, called "Pepparkakor" or else "Swedish Spicy Gingersnap cookies". If you ever been to Ikea and supported their food stuff, then you might have tried those. They are very thin and crispy cookies, smelling of spices like ginger, cinnamon, nutmeg and pepper. Glorious to your tastebuds and oh so amazing as a christmas gift. You can bake a whole bunch of them, since they are quite thin, and then wrap them in cute gift bags, write a nice christmas wish and give them to your special ones. They might remind you of gingerbread cookies, but these are more spicy and less soft than the gingerbread cookies. 
     The recipe I tried was based upon a recipe from The Cutlery Chronicles, which I found to be the best to try if you are a beginner baker. You can double it if you want to make more cookies, but my advice would be to try a batch at first and then if it is successful and easy for you to follow, repeat it for a second or third batch. My batch turned very good and I was really satisfied with it. I just grabed a big glass of milk and dipped the cookies inside. Sooooo good...



Swedish Pepparkakor or Pepparkaka (plural)

ingredients (makes 40 very thin cookies)

1 1/4 cups plain flour
1 tsp baking soda
1/4 teaspoon salt
90g unsalted butter
2 tablespoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon pepper
2/3 cup packed sugar
2 tablespoons molasses
1 large egg 

How do I make it?

1. Mix the flour, baking of soda and salt together in bowl. In the meantime, heat the butter in a pan over a medium heat until melted. Lower the heat to medium-low and continue to cook, swirling the pan frequently, until the foaming subsides and the butter is just beginning to brown. Turn off the heat.
2. Whisk in all the spices and then add the sugar and molasses to the butter mixture and whisk to combine until the sugar has melted and you have a smooth mixture. Add the egg and yolk and mix again with the whisk to combine. You should have a dark, sticky, smooth and glossy mixture.
3. Then, slowly add the flouring mixture into the egg-butter mixture and with the help of a spatula start mixing until you get a soft dough. Don't overmix it. Cover the bowl and put on the fridge for 2-3 hours.
4. When you want to roll the rough, bring it out of the fridge for 30 minutes. Flour a clean surface and take out your dough from the bowl. Start rolling gently the dough until you get a very thin almost 1 cm thick dough. The original recipe said 1mm, but then it is too difficult to lift the dough cookies.
5. Using a small cookie cutter, cut the wanted shapes (I used a small one) and then transfer your cookies to a baking sheet on top of a baking pan. Repeat steps 4-5 until there is no dough left.
6. Turn you oven to 130 C and bake cookies for 15 minutes. Then raise temperature too 180 C and bake for another 5 minutes. Cookies should be hard to touch and have dark edges.

ΚΡΥΑ ΣΟΥΠΑ ΑΠΟ ΠΑΤΖΑΡΙΑ, ΠΙΠΕΡΟΡΙΖΑ ΚΑΙ ΓΑΛΑ ΚΑΡΥΔΑΣ


     Έχω να δηλώσω πως ξαναερωτεύτηκα το ροζ αυτό το καλοκαίρι. Για κάποιο λόγο το είχα εξοστρακίσει από την γκαρνταρόμπα μου (και τη ζωή μου) και φέτος το καλοκαίρι κάτι σαν να έκανε πάλι κλικ. Σε συνδυασμό με ένα τζιν σορτσάκι ή με ένα ψηλόμεσο λευκό σορτς, τα ροζ μπλουζάκια ή πουκάμισα που κυκλοφορούν στην αγορά δείχνουν τόσο όμορφα και προσδίδουν μια χαμένη ανεμελιά που έλειπε από τη μουντάδα της χειμωνιάτικης ενδυμασίας. Αν δεν σας αρέσει το πολύ έντονο ροζ υπάρχει και η παλέτα των παστέλ χρωμάτων που ταιριάζει εξίσου όμορφα σε αυτό το καλοκαίρι του 2016. 
     Το έντονο και ζωντανό ροζ δεν μπορεί να απουσιάζει από το πιάτο μας. Και το ιδανικό τρόφιμο για να αποδώσει μια απόχρωση σχεδόν μοναδική είναι το παντζάρι. Δεν ήμουν πάντοτε φαν των παντζαριών. Μάλιστα απορούσα που η μητέρα μου τα έτρωγε πολύ συχνά το καλοκαίρι σε συνδυασμό με σκορδαλιά (που ούτως ή άλλως αντιπαθώ). Έτσι, χρόνια πήγαν χαμένα χωρίς να έχω απολαύσει τη γεύση τους και συνειδητοποίησα πως είναι αρκετοί εκείνοι στους οποίους δεν αρέσουν. Το όμορφο με τα παντζάρια, πέρα από το χρώμα που αποδίδουν σε οποιοδήποτε φαγητό συμμετέχουν, είναι η γλυκιά τους γεύση και το πόσο αρμονικά δένουν με το γάλα καρύδας και την πιπερόριζα (ginger). 



     Τους καλοκαιρινούς μήνες η σούπα δεν είναι κάτι που σκέφτεται κάποιος να φάει μέσα στον καύσωνα που προσπαθεί να αντιμετωπίσει. Όμως, είναι ορισμένες σούπες που τρώγονται μόνο κρύες (όπως τα gazpacho) ή γίνονται καλύτερες όταν κρυώνουν. Η gazpacho σούπα είναι μια ισπανική κρύα σούπα που κυρίως φτιάχνεται από ντομάτα και είναι αρκετά πηχτή και νόστιμη. Η δική μου πρόταση είναι να δοκιμάσετε μια κρύα σούπα φτιαγμένη κυρίως από παντζάρια και εμπλουτισμένη με ελαφρύ γάλα καρύδας. Ένας μοναδικός συνδυασμός γεύσεων που θα σας ικανοποιήσει, ειδικά εάν είστε λάτρεις της καρύδας. Εκτός από γεύση δίνει μια πιο πηκτή υφή στη σούπα κάνοντάς την ιδανικό και χορταστικό γεύμα.

Κρύα σούπα από παντζάρια, πιπερόριζα και γάλα καρύδας

υλικά (για 4 άτομα)

1 κρεμμύδι ψιλοκομμένο
1 σκελίδα σκόρδο ψιλοκομμένο
2 καρότα κομμένα σε ροδέλες
2 κουταλιές φρέσκια πιπερόριζα (ginger) ψιλοκομμένη
2 μεγάλα παντζάρια καθαρισμένα και κομμένα σε κύβους
1 σφυνάκι λευκό κρασί
2 κούπες ζωμό κοτόπουλου
1 1/2 κούπα γάλα καρύδας
λίγο ελαιόλαδο
αλάτι, πιπέρι

συνοδευτικά: φέτα, παξιμάδι ολικής άλεσης, ψημένα φιστίκια Αιγίνης

πώς θα το φτιάξω;

1. Σε μια μεσαία κατσαρόλα προσθέστε λίγο ελαιόλαδο και σωτάρετε ελαφρά το κρεμμύδι και το σκόρδο, χωρίς να κοκκινίσουν. Μετά από λίγο προσθέστε τα καρότα και τα παντζάρια και συνεχίστε το σωτάρισμα. Προσθέστε αλάτι και πιπέρι κατά προτίμηση.
2. Μόλις αρχίσουν να πίνουν τα ζουμιά τους προσθέστε το κρασί και αφήστε το για λίγο να εξατμιστεί. Έπειτα, προσθέστε το ζωμό από κοτόπουλο και σκεπάστε την κατσαρόλα. Αφήστε τα λαχανικά να βράσουν για λίγο μέσα στο ζωμό. Ελέγξτε αν έχουν βράσει τα καρότα και τα παντζάρια με τη βοήθεια ενός πιρουνιού. Όταν είναι έτοιμα κλείστε τη φωτιά και αφήστε τα να κρυώσουν για περίπου 10 λεπτά.
3. Σε ένα μπλέντερ προσθέστε το γάλα καρύδας και έπειτα τα βρασμένα λαχανικά μαζί με το υγρό τους και θέστε σε γρήγορη λειτουργία το μπλέντερ για 2-3 λεπτά μέχρι να γίνουν όλα τα υλικά μια πηχτή μάζα.
4. Αφήστε τη σούπα να κρυώσει για λίγο και σερβίρετε σε βαθιά μπολ. Συνοδέψτε με λίγη φέτα και παξιμάδια ολικής άλεσης εάν θέλετε. Εναλλακτικά μπορείτε να πασπαλίσετε λίγα ψημένα φυστίκια Αιγίνης.

Smoothie με φραουλα, ροζ γκρειπφρουτ και τζιντζερ


Η εποχή της άνοιξης ήρθε για να μείνει! Τέλος τα μουντά πρωινά, οι κρύες νύχτες και άλλα χαρακτηριστικά του χειμερινού καιρού. Η φράουλα, το πιο αντιπροσωπευτικό φρούτο της άνοιξης, έχει αρχίσει να εμφανίζεται στις λαϊκές αγορές δειλά δειλά. Το έντονο κόκκινο χρώμα της και η γλυκιά, φρουτώδης γεύση της είναι από τα χαρακτηριστικά που την κάνουν το τέλειο ζευγάρι σε οποιοδήποτε πιάτο, χυμό, smoothie, γλυκό ή ό,τι άλλο σκεφτείτε. Ταιριάζει ιδανικά σε δροσερές σαλάτες, σε ελαφριά γλυκά και στο πρωινό γεύμα.
Το ροζ γκρέιπφρουτ από την άλλη, αρχικά δίνει μια γλυκιά γεύση που στο τέλος αφήνει μια πικρίλα, όχι πολύ έντονη όμως. Οι ευεργετικές για το πεπτικό σύστημα ιδιότητες του γκρέιπφρουτ είναι στους περισσότερους γνωστές, όμως, υπάρχει μια σύγχυση ως προς την πραγματική του δράση. Δεν είναι λιποδιαλυτικό, καθώς δεν υπάρχουν τροφές που από μόνες τους να καίνε τα λίπη(!) Έχει,όμως, την ιδιότητα να δεσμεύει ελεύθερα λιπαρά οξέα που καταναλώνονται με το φαγητό. Γι αυτό, υποστηρίζεται ότι το να τρώμε μισό γκρέιπφρουτ ή να πίνουμε ένα ποτήρι χυμό του φρούτου αυτού μετά το φαγητό βοηθά στην καλύτερη πέψη και μικρότερη αποθήκευση λίπους. 


Το τζίντζερ ή πιπερόριζα είναι μια ρίζα που προέρχεται από την Ανατολή, την οποία χρόνια τώρα χρησιμοποιούν οι Κινέζοι σε διάφορες θεραπείες τους με αιθέραια έλαια και βότανα. Το τζίντζερ βοηθά στην ανακούφιση στομαχικών ερεθισμών και άλλων προβλημάτων του πεπτικού συστήματος. Περιέχει πολλές πολυφαινόλες (όπως το κόκκινο κρασί) που είναι γνωστές για την αντιοξειδωτική τους δράση. Επιπλέον, βοηθά στην ενίσχυση του ανοσοποιητικού συστήματος και την μείωση της αρτηριακής πίεσης.

Το smoothie αυτό αποτελεί ένα τέλειο ρόφημα το πρωί λίγο πριν φάτε κανονικό πρωινό (δημητριακά, τοστ ή ότι άλλο τρώτε το πρωί). Θα σας τονώσει και θα σας γλυκάνει παράλληλα. Εγώ πήρα και δεύτερο ποτήρι στη δουλειά μαζί!


Smoothie με φράουλα, ροζ γκρέιπφρουτ και τζίντζερ

υλικά (για 2 ποτήρια)

10 μεγάλες φράουλες
1 μεσαίο ροζ γκρέιπφρουτ
μισό πράσινο μήλο
1 κουταλάκι τριμμένο τζίντζερ
λίγο χυμό μήλου
μέλι προαιρετικά

πώς θα το φτιάξω;

Σε ένα καλό μπλέντερ προσθέτετε πρώτα το χυμό μήλου και έπειτα τις φράουλες, το γκρέιπφρουτ και το πράσινο μήλο. Τέλος, προσθέτετε το τζίντζερ και ανακατεύετε πολύ καλά για περίπου 1 λεπτό ή μέχρι να γίνει ένα ομοιογενές μείγμα. Σερβίρετε σε ελαφρώς παγωμένα ποτήρια.
