GREEK DESSERT "COPENHAGEN" - ΓΛΥΚΟ ΚΟΠΕΝΧΑΓΗ

     There are some recipes that you love and keep making over and over again. The more you make it, the better it gets with time. If you are lucky and have made an effort to keep notes, this recipe lives on and on through generations, as it gets passed on to your children and then their children and so on. Today I would like to share with you a special recipe. One that my beloved grandmother used to make for others, but enjoy herself as well. According to my mum, the dessert "Copenhagen" was one of her favourites. I vaguely remember my mum making it on special occasions in our home. It was loved by everyone and it didn't last for too long in our house. You were lucky if you got to eat a second piece.

     Υπάρχουν μερικές συνταγές που αγαπάς και συνεχίζεις να φτιάχνεις ξανά και ξανά. Όσο περισσότερο τις φτιάχνεις, τόσο καλύτερες γίνεται με τον καιρό. Εάν είστε τυχεροί και έχετε κάνει μια προσπάθεια να κρατήσετε σημειώσεις, αυτή η συνταγή ζει για γενιές και γενιές, καθώς περνάει στα παιδιά σας και στη συνέχεια στα παιδιά τους και ούτω καθεξής. Σήμερα θα ήθελα να μοιραστώ μαζί σας μια ιδιαίτερη συνταγή. Μία που έφτιαχνε η αγαπημένη μου γιαγιά για τους άλλους, αλλά την απολάμβανε και η ίδια. Σύμφωνα με τη μαμά μου, το γλυκό Κοπενχάγη ήταν ένα από τα αγαπημένα της. Θυμάμαι αμυδρά τη μαμά μου να το έφτιαχνε σε ειδικές περιστάσεις στο σπίτι μας. Αγαπήθηκε από όλους και δεν έμενε για πολύ στο σπίτι μας. Ήσουν τυχερός αν μπορούσες να φας ένα δεύτερο κομμάτι.

Greek Dessert "Copenhagen"

ingredients (for 10 to 12 pieces)

for the filling
3 cups ground almonds
1 cup white sugar
1 cup ground white rusk
6 eggs (separated egg yolks and whites)
1 tsp baking powder
1 tsp cinnamon & clove mix
12 phyllo pastry sheets (best for baklava)
some melted butter for the pastry sheets

for the sirup
3 1/2 cups white sugar
2 1/2 cups water
1 cinnamon stick
1 tbsp lemon juice
2 lemon slices

How do I make it?
1. Take a powerful stand mixer (or hand mixer and a bowl) and beat your egg whites until you have a firm meringue created. This will take a few minutes. Leave aside for later.
2. In a separate bowl, whisk together very well the egg yolks and the sugar until the yolks have whitened a bit and you have a fluffy mixture. Pour in the ground almonds, ground rusk, baking powder and cinnamon & clove mix and mix well with a wooden spoon. Lastly, pour inside the meringue you created in step 1 and mix well again with the wooden spoon until everything is incorporated. Try to do smooth movements with the spoon and not too quick, because we want the air created in the meringue to stay in our final mixture.
3. Take a medium baking pan and start placing the pastry sheets. First, pour some melted butter at the bottom and place carefully the first sheet. With your hands try to tap the sheet at the bottom and a bit at the corners to create a sort of mould for the filling to be added later. With a brush lightly brush the sheet with some melted butter. Add the next sheet repeating the taping at the bottom and corners and brushing with butter. Do this same step until you have placed 8 pastry sheets at the bottom of the baking pan. Pour inside the filling for the dessert and then smooth out the surface at the top. Add on top the remaining pastry sheets, but this time try to connect the sides of the top sheets with the bottom ones by pressing them at the sides. Remember to butter all your sheets one by one. Use a knife to cut the dessert in diamond shapes (you can see how I've cut it in the photos).
4. Preheat your oven to 180C and bake for 25 minutes or until the top pastry sheets are golden brown. 
5. At the last minutes of baking, start making the sirup in a large pot by adding all the ingredients. Once the sirup starts to boil in high heat, leave it boil for 5 minutes without stirring. Remain close to the sirup in case the sirup rises too much and spills out. After 5 minutes have passed turn off the heat and leave sirup to the side. 
6. When the dessert is ready from the oven, take it out and pour in the sirup evenly. Leave the dessert to cool off for a few minutes before cutting and serving.

Γλυκό Κοπενχάγη

υλικά

για τη γέμιση
3 φλιτζάνια αλεσμένα αμύγδαλα
1 φλιτζάνι λευκή ζάχαρη
1 φλιτζάνι τριμμένη φρυγανιά
6 αυγά (χωρισμένοι κρόκοι και ασπράδια)
1 κουταλάκι του γλυκού μπέικιν πάουντερ
1 κουταλάκι του γλυκού μείγμα κανέλας & γαρύφαλλου
12 φύλλα ζαχαροπλαστικής (για μπακλαβά)
λίγο λιωμένο βούτυρο για τα φύλλα ζύμης

για το σιρόπι
3 1/2 φλιτζάνια λευκή ζάχαρη
2 1/2 φλιτζάνια νερό
1 ξυλάκι κανέλας
1 κουταλιά της σούπας χυμό λεμονιού
2 φέτες λεμονιού

Πώς θα το φτιάξω;
1. Πάρτε ένα δυνατό μίξερ βάσης (ή μίξερ χειρός και ένα μπολ) και χτυπήστε τα ασπράδια των αυγών σας μέχρι να δημιουργήσετε μια σφιχτή μαρέγκα. Αυτό θα διαρκέσει μερικά λεπτά. Αφήστε στην άκρη για αργότερα.
2. Σε ένα ξεχωριστό μπολ χτυπάτε πολύ καλά τους κρόκους των αυγών και τη ζάχαρη μέχρι να ασπρίσουν λίγο οι κρόκοι και να έχουμε ένα αφράτο μείγμα. Ρίχνετε μέσα τα αλεσμένα αμύγδαλα, την τριμμένη φρυγανιά, το μπέικιν πάουντερ και το μείγμα κανέλας & γαρύφαλλου και ανακατεύουμε καλά με μια ξύλινη κουτάλα. Τέλος ρίχνουμε μέσα τη μαρέγκα που δημιουργήσατε στο βήμα 1 και ανακατεύετε ξανά καλά με την ξύλινη κουτάλα μέχρι να ενσωματωθούν όλα. Προσπαθούμε να κάνουμε ομαλές κινήσεις με το κουτάλι και όχι πολύ γρήγορες, γιατί θέλουμε ο αέρας που δημιουργείται στη μαρέγκα να μείνει στο τελικό μας μείγμα.
3. Παίρνουμε ένα μέτριο ταψί και αρχίζουμε να τοποθετούμε τα φύλλα ζύμης. Αρχικά ρίχνουμε λίγο λιωμένο βούτυρο στον πάτο και τοποθετούμε προσεκτικά το πρώτο φύλλο. Προσπαθήστε με τα χέρια σας να πατήσετε το φύλλο στο κάτω μέρος και λίγο στις γωνίες για να δημιουργήσετε ένα είδος φόρμας για τη γέμιση που θα προστεθεί αργότερα. Με ένα πινέλο αλείφετε ελαφρά το φύλλο με λίγο λιωμένο βούτυρο. Προσθέστε το επόμενο φύλλο επαναλαμβάνοντας το πάτημα στο κάτω μέρος και τις γωνίες και αλείφοντας με βούτυρο. Κάντε το ίδιο βήμα μέχρι να τοποθετήσετε 8 φύλλα ζύμης στον πάτο του ταψιού. Ρίχνουμε μέσα τη γέμιση για το γλυκό και μετά λειαίνουμε την επιφάνεια στο πάνω μέρος. Προσθέστε από πάνω τα υπόλοιπα φύλλα ζύμης, αλλά αυτή τη φορά προσπαθήστε να συνδέσετε τα πλαϊνά των πάνω φύλλων με τα κάτω πιέζοντάς τα στα πλάγια. Θυμηθείτε να βουτυρώσετε όλα τα φύλλα σας ένα-ένα. Χρησιμοποιήστε ένα μαχαίρι για να κόψετε το γλυκό σε σχήματα ρόμβου (μπορείτε να δείτε πώς το έκοψα στις φωτογραφίες).
4. Προθερμαίνετε το φούρνο σας στους 180C και ψήνετε για 25 λεπτά ή μέχρι να ροδίσουν τα πάνω φύλλα ζύμης.
5. Στα τελευταία λεπτά του ψησίματος ξεκινήστε να φτιάχνετε το σιρόπι σε μια μεγάλη κατσαρόλα προσθέτοντας όλα τα υλικά. Μόλις το σιρόπι αρχίσει να βράζει σε δυνατή φωτιά, το αφήνουμε να βράσει για 5 λεπτά χωρίς να το ανακατεύουμε. Μείνετε κοντά στο σιρόπι σε περίπτωση που το σιρόπι φουσκώσει πολύ και χυθεί. Αφού περάσουν 5 λεπτά σβήνουμε τη φωτιά και αφήνουμε το σιρόπι στο πλάι.
6. Όταν το γλυκό είναι έτοιμο από το φούρνο, το βγάζουμε και ρίχνουμε το σιρόπι ομοιόμορφα. Αφήστε το γλυκό να κρυώσει για λίγα λεπτά πριν το κόψετε και το σερβίρετε.

CABBAGE ROLLS WITH MEAT (ΛΑΧΑΝΟΝΤΟΛΜΑΔΕΣ)


     Cold weather asks for comforting food. But what is comfort food? We speak frequently about it, but never tried to explain what it means to us. The meaning is different to everyone. Usually the comfort comes from the warmth of the food and the feeling of fullness it gives us. But personally I find comfort food to be the one we cook with our families. The food that brings everyone around the table wanting to participate and help with. Such food is to be shared with loved ones and cherished by everyone.

   Ο κρύος καιρός θέλει comfort φαγητό. Αλλά τι κάνει το φαγητό comfort (άνεσης); Μιλάμε συχνά για αυτό, αλλά ποτέ δεν προσπαθήσαμε να εξηγήσουμε τι σημαίνει για εμάς. Η έννοια είναι διαφορετική για όλους. Συνήθως η άνεση προέρχεται από τη ζεστασιά του φαγητού και το αίσθημα πληρότητας που μας δίνει. Αλλά προσωπικά βρίσκω ότι το comfort φαγητό είναι αυτό που μαγειρεύουμε με τις οικογένειές μας. Το φαγητό που φέρνει όλους γύρω από το τραπέζι που θέλουν να συμμετέχουν και να βοηθήσουν. Τέτοιο φαγητό πρέπει να μοιράζεται με τους αγαπημένους και να το αγαπάμε όλοι.


     This time we thought of a recipe that is very common in Greek cuisine and a recipe that requires much love to be good (as per our grandmothers' and mothers' advice). It's a humble dish if you think about it, because it can also be made without the meat, just rice with vegetables. The cabbage rolls devoured in "avgolemono" is a Greek delicacy we used to eat when we were in Greece. So we decided to create a recipe close to those cabbage rolls we used to enjoy back home. It can be a little daunting to make the rolls (and time consuming), but it will pay off in the end.

     Αυτή τη φορά σκεφτήκαμε μια συνταγή που είναι πολύ κοινή στην ελληνική κουζίνα και μια συνταγή που απαιτεί μεγάλη αγάπη για να πετύχει (σύμφωνα με τις συμβουλές των γιαγιάδων και των μητέρων μας). Είναι ένα ταπεινό πιάτο αν το σκεφτείτε, γιατί μπορεί επίσης να φτιαχτεί χωρίς το κρέας, απλά με ρύζι και λαχανικά. Οι λαχανοντολμάδες που καταναλώνονται στο αυγολέμονο είναι μια ελληνική λιχουδιά που τρώγαμε συχνά όταν ήμασταν στην Ελλάδα. Αποφασίσαμε λοιπόν να δημιουργήσουμε μια συνταγή κοντά σε εκείνους τους λαχανοντολμάδες που απολαμβάνουμε όταν είμαστε Ελλάδα. Μπορεί να είναι λίγο αποθαρρυντικό να φτιάξετε τα ρολά (και χρονοβόρο), αλλά θα σας το ανταποδώσει και με το παραπάνω.

Cabbage rolls with meat 

Ingredients

1 whole Savoy cabbage (or white cabbage)

300gr minced meat (beef or pork)

1 carrot in small dices

1 onion in small dices

1 leek finely chopped

half cup uncooked rice (preferably Arborio)

100ml white wine

2 tablespoons tomato paste

salt, pepper 


for "avgolemono" (lemon-egg sauce)

2 eggs

juice from 1 lemon

1 teaspoon cornstarch

paprika


How do I make it?

1. In a medium pot, sauté in medium heat the carrot, onion and leek until slightly brown and soft. Then pour in the minced meat and cook until the meat starts releasing its juices. Pour inside the tomato paste and the wine. When the wine evaporates completely, switch off the heat and put inside the rice and leave it aside.

2. Put a large pot with water and salt to boil. With the knife, remove the centre of the cabbage (the hard part) and put the cabbage with the opening (from removing the hard part) on top. Boil the cabbage for approximately 7 minutes, then take it off the heat and start taking off the cabbages leaves. Place the leaves in a strainer. Keep the outer leaves and the really small ones in the centre of the cabbage and arrange them at the bottom of the pot you used for boiling, after removing the water. We need this layer of leaves in order to prevent the rolls from sticking on the bottom or getting burnt.

3. Take a leaf and with a tablespoon take some minced meat mixture and place it in one side of the leaf. Roll a bit the side with minced meat  then fold the leaf from left and right side and roll all the way to the end of the leaf (like a burrito). You will repeat the same process for each roll. Place each roll in the bot from step 2 in a spiral way, making sure you fit them tightly next to each other. Fill in the pot with vegetable stock or tap water until all the rolls are covered. Place a plate upside down (fitting the diameter of the pot) on top of the rolls to keep them together.

4. In low heat cook the rolls for 40 minutes. When the rolls are ready you take the juice and the 2 eggs in one bowl and whisk them very well until frothy. Add the cornstarch inside the bowl and whisk well again. With a ladle take some water from the pot where the rolls were cooked. Start to gradually pour the water inside the bowl, whisking well at all times. Once you are done add the paprika, whisking to incorporate and pour inside the pot containing the rolls. Serve immediately and enjoy!

Λαχανοντολμάδες με κρέας

Υλικά

1 ολόκληρο λάχανο Savoy (ή λευκό λάχανο)

300 γραμμάρια κιμά (βόειο κρέας ή χοιρινό)

1 καρότο σε μικρά ζάρια

1 κρεμμύδι σε μικρά ζάρια

1 πράσο ψιλοκομμένο

μισό φλιτζάνι άψητο ρύζι (κατά προτίμηση Arborio)

100 ml λευκό κρασί

2 κουταλιές της σούπας πάστα ντομάτας

αλάτι πιπέρι


για το αυγολέμονο

2 αυγα

χυμός από 1 λεμόνι

1 κουταλάκι του γλυκού άμυλο αραβοσίτου

πάπρικα


Πώς το φτιάχνω;

1. Σε μέτρια κατσαρόλα, σοτάρουμε σε μέτρια φωτιά το καρότο, το κρεμμύδι και το πράσο μέχρι να ροδίσουν και να μαλακώσουν. Στη συνέχεια ρίχνουμε τον κιμά και μαγειρεύουμε μέχρι να αρχίσει το κρέας να απελευθερώνει τους χυμούς του. Ρίχνουμε μέσα στον τοματοπολτό και το κρασί. Όταν το κρασί εξατμιστεί εντελώς, σβήστε τη φωτιά και βάλτε μέσα στο ρύζι και αφήστε το στην άκρη. 2. Βάζετε μια μεγάλη κατσαρόλα με νερό και αλάτι για να βράσει. Με το μαχαίρι, αφαιρέστε το κέντρο του λάχανου (το σκληρό μέρος) και τοποθετήστε το λάχανο με το άνοιγμα (από την αφαίρεση του σκληρού τμήματος) στην κορυφή. Βράζουμε το λάχανο για περίπου 7 λεπτά και μετά βγάζουμε τη φωτιά και αρχίζουμε να βγάζουμε τα φύλλα λάχανου. Τοποθετήστε τα φύλλα σε ένα σουρωτήρι. Κρατήστε τα εξωτερικά φύλλα και τα πραγματικά μικρά στο κέντρο του λάχανου και τακτοποιήστε τα στο κάτω μέρος της κατσαρόλας που χρησιμοποιήσατε για βρασμό, αφού αφαιρέσετε το νερό. Χρειαζόμαστε αυτό το στρώμα φύλλων για να αποφύγουμε να κολλήσουν τα ρολά στο κάτω μέρος ή να καούν. 3. Πάρτε ένα φύλλο και με μια κουταλιά της σούπας πάρτε λίγο μείγμα κιμά και τοποθετήστε το στη μία πλευρά του φύλλου. Τυλίξτε λίγο την πλευρά με κιμά και στη συνέχεια διπλώστε το φύλλο από την αριστερή και τη δεξιά πλευρά και κυλήστε μέχρι το τέλος του φύλλου (όπως ένα burrito). Θα επαναλάβετε την ίδια διαδικασία για κάθε ρολό. Τοποθετήστε κάθε ρολό στο bot από το βήμα 2 με σπειροειδή τρόπο, φροντίζοντας να τα τοποθετήσετε σφιχτά το ένα δίπλα στο άλλο. Γεμίστε την κατσαρόλα με ζωμό λαχανικών ή νερό βρύσης μέχρι να καλυφθούν όλα τα ρολά. Τοποθετήστε μια πλάκα ανάποδα (τοποθετώντας τη διάμετρο του δοχείου) πάνω από τα ρολά για να τα κρατήσετε μαζί. 4. Σε χαμηλή φωτιά μαγειρέψτε τα ρολά για 40 λεπτά. Όταν τα ρολά είναι έτοιμα, πάρτε το χυμό και τα 2 αυγά σε ένα μπολ και χτυπήστε τα καλά μέχρι να αφρώσουν. Προσθέστε το άμυλο αραβοσίτου μέσα στο μπολ και χτυπήστε ξανά καλά. Με μια κουτάλα πάρτε λίγο νερό από την κατσαρόλα όπου μαγειρεύονταν τα ρολά. Ξεκινήστε να ρίχνετε σταδιακά το νερό μέσα στο μπολ, χτυπώντας καλά ανά πάσα στιγμή. Μόλις τελειώσετε προσθέστε την πάπρικα, χτυπώντας ελαφρά για να ενσωματώσετε και ρίξτε μέσα στο δοχείο που περιέχει τα ρολά. Σερβίρετε αμέσως και απολαύστε!

HOMEMADE GREEK LUKUMADES (ΣΠΙΤΙΚΟΙ ΠΑΡΑΔΟΣΙΑΚΟΙ ΛΟΥΚΟΥΜΑΔΕΣ)


     Nearly at the end of February and winter season, it seems that the weather keeps getting worse and worse. For the last week it has been extremely cold in Zurich, and the bad weather will keep going for a while. I am overall a stay at home, have fun on your own kind of person, but everyone needs socialising outside of their comfort zone. As a little pick me up, I've been going to the gym 3 to 4 times a week and celebrating once a week with a treat. It's not as bad as it sounds, as I would never deprive myself or follow a strict diet. Especially now that I'm living with two guys who have a big appetite and wouldn't settle for some boiled broccoli. Being active really helps me not only keep fit, but keep my mind "fit" as well and helps me focus more while I'm studying or sending job applications.
      Last Friday, I decided to make a new recipe and I had a specific one in my mind. Very simple, without any fancy ingredients. It's also vegetarian or lent appropriate (if you are fasting during lent). But the most important feature of this recipe is the memories that it brings back to me, whenever I think about it or happen to taste it. I mention it briefly on my Instagram account, but when I was little my grandma used to make me "Lukumades" or ῾Λουκουμάδες῾. It was something I enjoyed eating so much, right after we've had lunch. It was either lukumades or one of the specially de-skinned apple slices my grandpa used to give me. Both of those I ate with such joy!




     Lukumades is not an entirely Greek dessert, since the roots of this delicacy come from Middle East. No matter where it came from, it is eaten frequently and in different ways around Greece. As mentioned above, the ingredients are very simple and the difficulty of the recipe resides only during the cooking phase. The little bites are better served hot, as the dough becomes quite hard after a few hours after frying. But this means that you can prepare the dough and let it rise as much as you want, before you actually need to serve them. This saves you the time in the kitchen and if you plan on making them for a big crowd, it also saves you the embarrassment. 
     This version of lukumades is for plain ones that you can simply serve with runny honey and nuts or drizzle some heavy Nutella on top. I haven't put any sugar in the dough, because I prefer them not to be overly sweet. But if you like your dough bites to be sweeter, you can add a tablespoon or two inside the dough, while you're making it.

Homemade greek Lukumades (greek version below)

ingredients

300ml lukewarm water (room temperature)
200gr flour
50gr corn flour
7gr dry yeast (one sachet)
1/4 teaspoon salt
optional: 2 tablespoons sugar
vegetable oil for frying

for topping

good quality honey
ground cinnamon
chopped nuts (walnuts, pistachios, hazelnuts)
nutella or other melted chocolate


How do I make it?

1. First step is to make the dough. In a large bowl, put all the ingredients for the dough, apart from the oil, and mix with a wooden spoon. You will get a liquid dough in the end. Cover the bowl with a damp kitchen towel and let the dough rise a bit for one hour or until you want to make the dessert. You can also let it rise for some hours in room temperature and then store it in the fridge. 
2. When it's time to serve, use a medium pot and fill it with oil about half way. Don't use olive oil for frying. First, it's not right for this purpose and second it will give a kind of bitter/heavy taste to the dough. You can use a neutral oil such as sunflower or rapeseed oil. Let the oil heat well before you proceed to the next step. Meanwhile, put some oil into a glass and put inside a tablespoon. 
3. For the next step you will use the tablespoon and...your hands. Put on some gloves for this or clean very well your hands if you don't have gloves. With one hand, take some quantity of the liquid dough and try closing your hand to a fist. Some quantity of the dough will come out at the top of your hand. Use the spoon to take the surfacing dough. Then quickly drop the dough into the pot with hot oil. The dough will start to fry. A good sign is when the oil starts to buble. It means that it had a good temperature. Repeat the same step for the remaining dough, remembering always to deep the spoon into the glass with oil, to make things easier. Don't use water, because water and hot oil is not a good choice.
4. Have a plate with some paper on top next to the pot. When the doughs have a golden color, carefully transfer them on the plate and let them cool.
5. For serving, put some dough balls or lukumades in a serving bowl and top according to your taste. I love the combination of honey, cinnamon and walnuts.

Σπιτικοί παραδοσιακοί Λουκουμάδες

υλικά

300ml νερό σε θερμοκρασία δωματίου (χλυαρό)
200γρ αλεύρι για όλες τις χρήσεις
50γε corn flour
7γρ ξηρή μαγιά (ένα φακελάκι)
1/4 κουταλάκι αλάτι
επιλεκτικά: 2 κουταλιές ζάχαρη
φυτικό λάδι για τηγάνισμα (ηλιέλαιο)

για σερβίρισμα

καλής ποιότητας μέλι
τριμμένη κανέλλα
ψιλοκομμένοι ξηροί καρποί (καρύδια, φυστίκι Αιγίνης, φουντούκια)
nutella ή λιωμένη σοκολάτα

Πώς θα το φτιάξω;

1. Πρώτο βήμα είναι η ζύμη. Σε ένα μεγάλο μπολ, προσθέστε όλα τα υλικά για τη ζύμη, εκτός του λαδιού, και ανακατέψτε με μια ξύλινη κουτάλα. Στο τέλος θα έχετε ένα ωραίο μείγμα χυλού. Καλυψτε το μπολ με μια νωπή πετσέτα και αφήστε τη ζύμη να ῾σἡκωθεί῾  για μια ώρα ή όσο θέλετε μέχρι να φτιάξετε τους λουκουμάδες. Μπορείτε να αφήσετε τη ζύμη να αυξηθεί σε θερμοκρασία δωματίου και έπειτα να τη φυλάξετε στο ψυγείο μέχρι να την χρειαστείτε.
2. Όταν θέλετε να φτιάξετε τους λουκουμάδες, γεμίστε μια μεσαία κατσαρόλα με λάδι περίπου μέχρι τη μέση. Αφήστε το λάδι να κάψει καλά πριν προχωρήσετε στο επόμενο βήμα. Παράλληλα, βάλτε λίγο λάδι σε ένα ποτήρι και βυθίστε ένα κουτάλι μέσα.
3. Για το επόμενο βήμα, θα χρησιμοποιήσετε το κουτάλι και...τα χέρια σας. Φορέστε γάντια εάν έχετε, αλλιώς πλύντε πολύ καλά τα χέρια σας. Με το ένα χέρι, πάρτε ποσότητα από το χυλό και δημιουργήστε μια μπουνιά. Λίγη ποσότητα από το χυλό θα ξεχυλίσει το πάνω μέρος του χεριού σας, την οποία θα πάρετε με το κουτάλι. Όταν έχετε την ποσότητα στο κουτάλι, ρίξτε την με γρήγορες κινήσεις στο καυτό λάδι. Η ζύμη θα αρχίσει να τηγανίζεται. Ένα καλό σημάδι είναι να βγάζει μπουρμπουλήθρες το λάδι γύρω από τη ζύμη. Αυτό σημαίνει πως έχει καλή θερμοκρασία για τηγάνισμα. Επαναλάβετε τη διαδικασία για την υπόλοιπη ζύμη, φροντίζοντας πάντα να τοποθετείτε το κουτάλι στο ποτήρι με το λάδι. Μην χρησιμοποιήσετε νερό, δεν είναι καλή ιδέα!
4. Δίπλα στην κατσαρόλα που τηγανίζετε, έχετε ένα πιάτο με λίγο χαρτί για να απορροφήσει το λάδι. Όταν οι λουκουμάδες έχουν ένα χρυσαφέρνιο χρώμα, μεταφέρετέ τους προσεχτικά στο πιάτο και αφήστε τους να κρυώσουν.
5. Για σερβίρισμα, βάλτε λίγους λουκουμάδες σε ένα μικρό μπολ και πασπαλίστε με το αγαπημένο σας συνοδευτικό. Εγώ τρελαίνομαι για μέλι, κανέλα και καρύδια.

SPINACH, LEEK AND FETA PIE (ΣΠΑΝΑΚΟΠΙΤΑ)


     It was a while ago, when I said to myself "You can beat this". I was referring to my urgent need to change a recipe to my likings, because I didn't want to eat a very bad ingredient a.k.a. butter. Not only did I realise later, that what goes on our brain about food is far worse than the reality. More often do we feel like we have to limit ourselves to what we eat, only because we think it will make us feel better. I learned the hard way that is not the case. Especially if you are an anxiety driven individual like myself, you can't mask something and call it something else.
     Through the years I taught myself how to cook healthier, but not necessarily cut out important food categories from my diet. I learned how to love the whole process of cooking or baking and to enjoy food whenever I had it. That meant, I had to come to terms with certain facts and have a blast with my food. It seemed really difficult at times, but again our brain can do magic things. One of those things is imagination. If you imagine something great with your mind, there is no reason you can't achieve it. Like this spinach pie I was imagining through the whole weekend. It turned out to be greater than in my imagination...



     This recipe comes from my boyfriend, who gladly decided to make a bunch of spinach we had into a delicious spinach pie. Where we come from, Greece, it is very important to know how to make a good pie. Cheese pie, spinach pie, meat pie, you name it. Several locations in Northern Greece have a few of the most decadent and mouthwatering pies you will ever have in your life. The tradition calls for a woman to make her own phyllo pastry, roll it carefully making it really, really thin. My grandmother used to be such a traditional woman, making her own fyllo pastry for a lot of years, until her hands couldn't do it anymore. It's a tough task, especially for the new generation of Greek women, however, it was viewed as an important skill.
     Our version on the blog is a simple one you can do very easily on a lazy Sunday morning. No need to kneed or call your grandmother to do anything. All you really need is some fresh and good quality spinach, as well as, fine feta cheese. The rest is up to magic...and some hidden ingredient!

Spinach, Leek and Feta pie (Σπανακόπιτα με φέτα)

ingredients

1 kg fresh spinach
2 medium leeks and 2 spring onions (finely chopped)
1 bunch of fresh dill (chopped)
1 clove of garlic (minced)
200gr feta (with sheep and goat milk)
2 tablespoons philadelphia cream cheese
1 package with 2 phyllo doughs (one for top and one for bottom)
4 tablespoons olive oil
salt and pepper
egg yolk for the top
2 tablespoons sesame seeds

how do I make it?
1. Wash the spinach very well and put it in a big bowl. Toss inside some salt and using your hands mix very well the spinach with salt, so that all the spinach is covered. Let sit for 30 minutes.
2. Start by preparing the mixture for the pie. In the bowl with spinach, put the chopped leeks, spring onions, chopped dill and minced garlic. In another bowl, crumble the feta in small pieces and mix it with the cream cheese using a spoon. Add two tablespoons of olive oil to help the process. Pour inside the big bowl containing the spinach. Mix very well so that everything is combined and add two additional tablespoons of olive oil.
3. Preheat the oven to 180 C. Using a medium pan, lather the bottom with some olive oil again and place the bottom phyllo layer. Use your hands to shape the dough in the shape of the pan, especially in the sides. Pour inside the spinach mixture, spreading it all over the surface of the pan. 
4. Top the open pie with the top layer and try to shape it again on the sides of the pan. Perhaps there is some remaining dough on the sides. If you love dough in your pie, keep it. If not, use a knife to cut some of the remaining dough. Cover the top of the pie with some egg yolk first and then sprinkle the sesame seeds. Use a knife to cut the top dough horizontally and vertically as if you would take pieces of the pie out of it. This will hep the dough to bake and not overrise. 
5. Bake the pie for 30 to 40 minutes depending on your oven. After 30 minutes check the pie to see if it's golden on top and if not bake some more. 
6. Let the pie cool a little bit before you start eating it, because when the pie is warm it's  not easy to get a piece.

Hummus tartines with Greek feta cheese, cherry tomatoes and walnuts


     How quickly time passes amazes me everyday. In one minute I am flying, sleep deprived, to Paris Airport of Charles de Gaulle, and the next minute I am packing my things to fly back to Zurich. Last weekend was spent walking up and down Rue de Rivoli, taking a bite at rue Lucien Sampaix next to the Place de la Republique and enjoying one pastry after the other. I was in Paris, dear friends, where each time I go gets even better than the previous. 
     I will stop rambling about the amazing time I had in Paris, as I intend to do it in another special post just about this city. Back to the cooking, I love that Spring makes its vibrant appearance again this year. Amazing weather, colours everywhere, strawberries will come around late April to May (the fresh ones) and in two week I will fly back to Greece for Easter. Before that, I plan to make some Easter recipes for you. I know I haven't been very active lately, but as an adult with responsibilities and studies, I have to study and be responsible.



     My boyfriend got us a bread maker two days ago. A BREAD MAKER! All you bread lovers I know you get me. I mean, I love bread and even more I love it when it's fresh and warm and crispy. Late at night, we decided to make our first bread with whatever we had in our kitchen pantry and voilà! A delicious and small loaf of bread that took three hours to make, was finally waiting for us to eat and savour.
     The idea for purchasing a bread maker came to us, when a good friend and head chef invited us for dinner with his wife and we enjoyed a lot of Turkish inspired food. With the food there was this amazing loaf of bread served on the table and we had to ask where it was coming from... The answer was, a bread maker. If you know me a little, you know I love homemade food and healthy that food even better. So, the idea to have a loaf of bread waiting for you without having to do the extra kneading it requires, sounded perfect to me. Don't get me wrong. The process of kneading and waiting for the bread to rise can be quite cathartic. But, whenever time is of essence, a bread maker can help.
     There was no better way to celebrate this, but to make a recipe with the remaining bread slices. And there was some homemade hummus calling me from the fridge that I most certainly, HAD to use. This is another way of letting you know, it was fridge clearance day! But who cares, when there is good food and good matching of food? The most important ingredient for this recipe I think is good hummus, so I left an easy recipe from the blog archive further down for you to make if you feel adventurous.

Hummus tartines with Greek feta cheese, cherry tomatoes and walntus 

ingredients

2 slices of bread of choice
1/2 cup of homemade or store-bought hummus
3 to 4 cherry tomatoes
1/2 cup Greek feta cheese crumbles
a handful of crushed walnuts
olive oil
sea salt
oregano (optional)


how do I make it?

1.Toast your slices of bread in a toaster as wanted. Cut your cherry tomatoes in small slices.
2.Spead a generous amount of hummus on each slice.
3.Start adding your toppings. First, add the slices of cherry tomatoes. Continue by topping the feta crumbles and walnuts.
4.Splash some sea salt as wanted and some olive oil. If you feel adventurous, add some oregano on top.
5.Enjoy your tartines with company or by your self.

LENTIL BURGERS WITH YOGHURT AND GARLIC SAUCE (TZATZIKI)


     It's true what they say, that there is no other place more comforting and safe than your the house you grew up in. I am back to my home town since the 1st of January and I am truly enjoying time here in familiar places and warmer climate. It was one of the best ideas to travel during New Year's I tell you. We were treated to bubbly wine, to a discent dinner and to some New Year's pie we make in Greece. I surprised my mum for her nameday and birthday and treated her (and myself) to a luxury spa experience the next day. It was so lovely...
     To start the new year, I realised I needed a change in perspective and habits. I am a hardcore habit person. I have a habit and I stick to it the hardest I can. Some habits can be good (like exercising or clean eating) and some others bad. This year I promised myself I will do my best to cook more, experiment more with plant-based recipes and create a plan for my future bakery shop. Hehe! You didn't expect the last one I might guess, but yes it is a little dream of mine I have at the back of my mind for the future.



   First recipe for 2017 is a plant-based one and quite a good one if I may say. I've never been a fan of substitutes or things that have a name of a particular food, but the ingredients are different. Like these lentil burgers. It is a known fact that burgers normally are made with meat. But these ones do not contain any kind of meat. And I tell you, they are delicious! I mean ok, they are not fatty in the way that meat is, but still they contain a lot of flavour and fill you up, as lentils are a good source of protein. Also, if you are in a food resolution you can start by making these lentil burgers next time you are thinking of "What the hell am I supposed to eat today?". 
     Recipe was inspired by the book "Clean Slate: A Cookbook and Guide", which has very beautiful recipes if you are trying to lower your animal based food intake and giving the plant-based foods a try. And before you go there and assume I turned myself into a vegan, I am telling you no. I did not. It just happens that sometimes I want to try something different for a change (and a healthy gut). This recipe was easy and doable for a rookie like me. Plus I felt full after it, something that rarely happens...

Lentil burgers with yoghurt and garlic sauce (tzatziki)

for the burgers
ingredients (for 4 burgers)

1 cup cooked lentils drained and cooled
1 small red onion chopped
1 cup whole wheat breadcrumbs or oat flakes
2 large eggs (whisked)
2 tablesspoons parsley
1 tablespooon soy sauce
some pepper
olive oil for cooking

for tzatziki sauce
ingredients

1 cup greek yoghurt (drained)
1 medium cucumber grated
2 gloves of garlic mashed
2 tablespoons olive oil
3 tablespoons white wine vinegar
some salt and pepper (according to taste)

How do I make it?
1. In a bowl combine the cooked lentils, onion, parsley, breadcrumbs and the eggs. Mix all the ingredients nicely together. Take half of the mixture into a food processor and pulse until the mixture becomes very smooth. Fold the smooth mixture into the remaining lentil mixtue and mix again. If your mixture is a bit liquid, add some oat flakes.
2. Heat a medium pan with some olive oil. Scoop 1/4 of mixture and shape into a medium patty (do the same for the rest of mixture). Add to pan and cook for about 2-3 minutes for each side until the burgers are golden brown and crisp.
3. Serve with tzatziki sauce (recipe below).

for the tzatziki sauce

1. Grate your cucumber and strain it using a stainer and some paper towel to get rid of the juices that come out of it. 
2. Put the yoghurt in a bowl and add the strained cucumber and vinegar. Mix in the olive oil and mashed garlic really well. 
3. With a spoon, taste for saltiness. Add some more if you like or some pepper.
4. Keep in fridge if not eating instantly.
