SKILLET APPLIE PIE WITH HAZELNUT BUTTERY DOUGH (PATE BRISE)


   The last three months of the year might be somewhat intimidating (if you haven't been good with your year's resolution) or a chance to push hard until the end of the year in order to achieve more things in the new year. I am the person who likes to look at life with a positive vibe and try to learn for experiences, people and obstacles that come across. If this year has taught me anything is to be open to new opportunities, communicate with people in a deeper level and accept individuals for who they are.
    Last Sunday we went on an amazing hiking that challenged us physically, but rewarded us with the best view and food afterwards. We truly cherished those moments with special friends and incredible Swiss food. I always find that if your weekends include friends and experiences, then your working week that follows will be much more enjoyable and less of a struggle. And let's not forget, prepare something yummy for the week. Whenever I cook or bake something in the weekends, I take my time to choose the recipe, the ingredients and the time to savour it. During the week we rush to get to our work or responsibilities and don't always get the time to appreciate food as it deserves. Well, last weekend we really appreciated it.



     Apples are a regular staple in our house during fall and winter. I love to crunch on every kind and variety of apples, from shiny red to almost sour green ones. There is not a single kind of apple I won't eat or try to use in recipes. An apple pie sets the mood and lets us know it's autumn season. It's a dessert pie loved by almost everyone, but it's also found in different shapes and styles. The French like to do an open apple tart, while the Americans like to cover the top of their apple pie with more dough and use a much bigger filling compared to a tart. There are also apple pies made like cakes, which in my opinion aren't considered a pie, because they fit more into apple cake.
     Any way you prefer to bake it or eat is delicious. However, there is something intriguing and exciting about the skillet pie. The skillet pan is such a wonderful equipment to own and if you don't already have it in your kitchen I suggest you go get one. It gives all of the recipes a richness you won't be able to get with other pans. And it gets better with age! How much better can you get than this? It feels more like an investment for your future self and all the cooking or baking you will do with it.




     For this recipe, I made the pie dough from scratch. It's like the normal pâte brisée you would normally do, but I added some ground hazelnut inside to make it more nutty and surprising. When my boyfriend had a taste of the pie he was taken aback with the hazelnut taste that the pie left in his taste buds. It takes some extra time and dedication to make it, but be sure that it will make your pie extraordinary. However, if you don't have the time to make it from scratch you can always buy premade dough from a grocery store and it will work just as well. Ideally you can make the dough the night before, because it needs some time in the fridge and then the whole process won't take your whole day.

Skillet Apple Pie with Hazelnut Pâte Brisée

ingredients (for a medium skillet)

for the hazelnut dough

200gr flour
50gr  ground hazelnuts
125gr butter cold and cut into cubes
pinch of salt
1/4 teaspoon sugar
4 to 5 tablespoons cold water

for the pie 

110gr butter
50gr brown sugar + extra 50gr
4-5 medium sized apples
2 tablespoons lemon juice
1/2 teaspoon cinnamon
1/4 teaspoon ground clove
1/4 teaspoon nutmeg

extra: caramel sauce or dulce de leche

How do I make it?

the dough
1. In a bowl mix together the flour, ground hazelnuts, salt and sugar with a spoon. Then add the cold butter. Put on gloves or wash your hands before continuing. Then, using your hands try to mix together the cold butter with the flour mixture by pinching the flour with the butter or rubbing the flour with the butter together. The goal is to slightly melt and incorporate the butter with the flour until you get a very course  (rough) texture of flour. 
2. When there are no more butter pieces left in your flour it's time to put it all together with the water. Add three tablespoons of cold water and start mixing with your hands. Once the water is absorbed add another tablespoon and see how your dough feels like. It should be a little moist but not sticky. If it's still dry, add another tablespoon. Remember to not put all the tablespoons in the beginning and then try to save it in the end. You will end up being frustrated. 
3. Form a ball of your dough and wrap it in plastic wrapping and put it in the fridge for at least one hour or better overnight. When you are ready to make your pie, take it out of the fridge about 20 minutes before using it.

for the pie

1. Cut and core all your apples into vertical pieces and put them in a big bowl. Mix inside the lemon juice and make sure all the apples are coated with the juice. Then, pour inside 50gr brown sugar, cinnamon, nutmeg and clove and mix again. Leave on the side.
2. Take your dough in a clean and floured surface and cut it in two pieces. Roll out each piece, trying to keep it in a round shape. The dough is quite gentle, so don't put a lot of pressure when you're rolling it out. You just need it to take a rounder shape. Leave them on the side until we use them.
3. Preheat your oven to 170 C. Then, take your skillet and put it on medium heat. Melt inside the butter and the other 50gr of brown sugar, just until they all melt together. Leave the mixture to cool a bit for 5 minutes and then carefully place the bottom rolled dough piece on the skillet. Try to make it stick to the sides of the skillet, but again don't apply too much pressure on it and allow it to take the shape of the pan. 
4. Pour inside the apple pieces and spread them evenly around the pan. If you're using a caramel or other sauce, then spread it on top of the apples as well. Cover the top of the pie with the top dough. I cut it into thin lines of dough and created the typical lattice striped decoration. I could tell you or show you photos of how I did it, but I feel that videos are always better. If you would like to do this decoration to your cake, here is a video that shows perfectly how to do it.
5. Once you are done with the top of your pie, put the skillet in the oven and bake the pie for about 1h and 25 minutes or until caramel bubbles start coming out of the pie or the dough is getting golden brown.
6. Let the pie cool for 10 minutes and then serve while it's still hot. You can enjoy as it is or put some skyr on top (like I did). I also put some pumpkin jam we made on top and it was so delicious together!

SPINACH, LEEK AND FETA PIE (ΣΠΑΝΑΚΟΠΙΤΑ)


     It was a while ago, when I said to myself "You can beat this". I was referring to my urgent need to change a recipe to my likings, because I didn't want to eat a very bad ingredient a.k.a. butter. Not only did I realise later, that what goes on our brain about food is far worse than the reality. More often do we feel like we have to limit ourselves to what we eat, only because we think it will make us feel better. I learned the hard way that is not the case. Especially if you are an anxiety driven individual like myself, you can't mask something and call it something else.
     Through the years I taught myself how to cook healthier, but not necessarily cut out important food categories from my diet. I learned how to love the whole process of cooking or baking and to enjoy food whenever I had it. That meant, I had to come to terms with certain facts and have a blast with my food. It seemed really difficult at times, but again our brain can do magic things. One of those things is imagination. If you imagine something great with your mind, there is no reason you can't achieve it. Like this spinach pie I was imagining through the whole weekend. It turned out to be greater than in my imagination...



     This recipe comes from my boyfriend, who gladly decided to make a bunch of spinach we had into a delicious spinach pie. Where we come from, Greece, it is very important to know how to make a good pie. Cheese pie, spinach pie, meat pie, you name it. Several locations in Northern Greece have a few of the most decadent and mouthwatering pies you will ever have in your life. The tradition calls for a woman to make her own phyllo pastry, roll it carefully making it really, really thin. My grandmother used to be such a traditional woman, making her own fyllo pastry for a lot of years, until her hands couldn't do it anymore. It's a tough task, especially for the new generation of Greek women, however, it was viewed as an important skill.
     Our version on the blog is a simple one you can do very easily on a lazy Sunday morning. No need to kneed or call your grandmother to do anything. All you really need is some fresh and good quality spinach, as well as, fine feta cheese. The rest is up to magic...and some hidden ingredient!

Spinach, Leek and Feta pie (Σπανακόπιτα με φέτα)

ingredients

1 kg fresh spinach
2 medium leeks and 2 spring onions (finely chopped)
1 bunch of fresh dill (chopped)
1 clove of garlic (minced)
200gr feta (with sheep and goat milk)
2 tablespoons philadelphia cream cheese
1 package with 2 phyllo doughs (one for top and one for bottom)
4 tablespoons olive oil
salt and pepper
egg yolk for the top
2 tablespoons sesame seeds

how do I make it?
1. Wash the spinach very well and put it in a big bowl. Toss inside some salt and using your hands mix very well the spinach with salt, so that all the spinach is covered. Let sit for 30 minutes.
2. Start by preparing the mixture for the pie. In the bowl with spinach, put the chopped leeks, spring onions, chopped dill and minced garlic. In another bowl, crumble the feta in small pieces and mix it with the cream cheese using a spoon. Add two tablespoons of olive oil to help the process. Pour inside the big bowl containing the spinach. Mix very well so that everything is combined and add two additional tablespoons of olive oil.
3. Preheat the oven to 180 C. Using a medium pan, lather the bottom with some olive oil again and place the bottom phyllo layer. Use your hands to shape the dough in the shape of the pan, especially in the sides. Pour inside the spinach mixture, spreading it all over the surface of the pan. 
4. Top the open pie with the top layer and try to shape it again on the sides of the pan. Perhaps there is some remaining dough on the sides. If you love dough in your pie, keep it. If not, use a knife to cut some of the remaining dough. Cover the top of the pie with some egg yolk first and then sprinkle the sesame seeds. Use a knife to cut the top dough horizontally and vertically as if you would take pieces of the pie out of it. This will hep the dough to bake and not overrise. 
5. Bake the pie for 30 to 40 minutes depending on your oven. After 30 minutes check the pie to see if it's golden on top and if not bake some more. 
6. Let the pie cool a little bit before you start eating it, because when the pie is warm it's  not easy to get a piece.

CHERRY AND RHUBARB CRUMBLE PIE


    Summer is definitely here! Exams are over, internship started and I am going to Geneva Street Food Festival tomorrow. Woohoo, life is good finally. I don't know when was the last time I just sat on my sofa and read a book or did something else that study, obsess about studying or yell at my boyfriend. Oops! Well, yeah, it happens to the best of us. Stress is a weird thing not to cave in, I'm trying my best. But since the weather is warm and everyone is stress-free, one can only dream of more days like this.
     On another note, I went hiking last weekend. It wasn't the first time, but it was the first time I did it with a big group of people who were passionate about it. We hiked uphill and downhill for more than 5 hours. I woke up at 5:00 and got home at 22:00, but it was all worth it. The feeling of accomplishment, the laughs, the amazing view when we reached our final destination. All worth it. During my hiking I was thinking that these will be the memories I will have in mind when I get older and I won't be able to bend my back in front. Or maybe until then I will become a yogi, so who knows?




     What better way to celebrate this summer that with a pie? I was planning to make a rhubarb and strawberry pie, since I've read a lot of amazing recipes with this combination. However, I couldn't find any proper strawberries lately and I had some cherries in the fridge wanting my attention, so inspiration came! I have to say this is not a very sweet pie, which is perfect for me as I don't like very sweet stuff. Also, it was the first time I cooked something with rhubarb and I was very pleased with the result. 

Cherry and Rhubarb Crumble pie

ingredients (for one pie)

1 buttery pie dough of your choice
4 cups of pitted cherries
2 cups rhubarb cut in slices
1/2 cup sugar
2 tablespoons cold butter cut in slices
1 tablespoon lemon juice

for the crumble

150 gr butter cold and cut in pieces
100 gr flour
80 gr sugar

to serve: ice cream of your choice

how do I make it?

1. Prepare your fruit and put them in a large bowl. Pour inside the sugar and lemon and stir very well. 
2. Prepare your pie tin with some oil brushing. Carefully place the dough on the tin and then pour in the middle the prepared fruit. 
3. In a food processor mix together the butter with the flour until breadcrumbs are created. Then add in the sugar and mix again.
4. Place the crumbs on top of the fruit of the pie, making sure all of the fruit is covered with the crumbs. Preheat oven to 190 C.
5. Bake your pie in this temperature for 20 minutes and then lower the temperature to 175 C and bake for 30 minutes or until the pie turns golden, while juices come out. 
6. Let it cool for some minutes and then serve with some ice cream.

ΚΟΤΟΠΙΤΑ ΜΕ ΛΑΧΑΝΙΚΑ


     Πάντα διάβαζα για ανθρώπους που βρίσκανε την ηρεμία ψυχής και τη δύναμη να προσπαθήσουν να πραγματοποιήσουν τα όνειρά τους κάνοντας μια απλή βόλτα δίπλα στη θάλασσα, πηγαίνοντας σε κάποιο μακρινό νησί για να κάνουν yoga ή διαλογισμό μακριά από την τρέλα της καθημερινής ζωής και του άγχους της εργασίας που σε θέλει να δουλεύεις για 8 ώρες ασταμάτητα κάνοντας αυτό που πληρώνεσαι να κάνεις, πολλές φορές με κόστος την προσωπική σου θέληση και δημιουργικότητα. Τελευταία διάβαζα ένα άρθρο στο αγγλικό Harper's Bazaar που έλεγε για πολλούς ανθρώπους που τελείως αυθόρμητα τα παρατούσαν όλα (συνήθως υπό κάποιο αγχωτικό ή στρεσογόνο γεγονός) και έκλειναν ένα ταξίδι σε κάποιο εξωτικό μέρος (π.χ. Ταυλάνδη) όπου παρακολουθούσαν workshops που είχαν να κάνουν με αγιουβέρδα ή yoga ή οτιδήποτε άλλο τους έφερνε πιο κοντά με την εσωτερική τους ισορροπία και γαλήνη. 
     Σε μια παρόμοια κατάσταση εσωτερικής σκέψης βρήκα τον εαυτό που περπατώντας δίπλα στη θάλασσα σε μια μαγευτική παραλία εδώ στη Σάμο (την Ψιλή Άμμο), όπου σκεφτόμουν τις τελευταίες αποφάσεις που πήρα στη ζωή μου, δηλαδή να παραιτηθώ από τη δουλειά μου και να φύγω μαζί με το φίλο μου για κάποια άλλη χώρα με την ελπίδα πως εκεί θα καταφέρω να κάνω κάποια από τα πράγματα που θέλω. Εκείνη τη στιγμή που περπατούσα αισθάνθηκα μέσα μου πλήρης και χαρούμενη και κατάλαβα πως πήρα τη σωστή απόφαση, όσο και αν μέσα μου φοβόμουν. 
     


     Έχω πολλά σχέδια για το μέλλον που τα περισσότερα περιλαμβάνουν τη μαγειρική, το blogging και τη φωτογραφία και ανυπομονώ να τα μοιραστώ μαζί σας. Η χαρά μου αυτές τις μέρες είναι τόσο μεγάλη που εμπνέομαι καθημερινά και αρχίζω να σημειώνω ιδέες που μου έρχονται συνεχώς. Μια έμπνευση της στιγμής ήταν και αυτή η απλή κοτόπιτα με λαχανικά που έφτιαξα με το φίλο μου με απλά υλικά και σκεύη. Η ετυμηγορία ήταν μία...νοστιμότατη! Το ίδιο θα αναφωνήσετε και εσείς μόλις τη φτιάξετε. Η μόνη δυσκολία είναι το δίπλωμα της ζύμης στις άκρες ώστε να μην σας "ανοίξει" το φύλλο όταν την ψήνετε. Γι αυτό το σκοπό έχω φωτογραφίσει όλα τα βήματα από την προσθήκη της γέμισης μέχρι το "κλείσιμο" της πίτας για να διευκολυνθείτε. Έχω μόνο μια τελευταία συμβουλή πριν σας παρουσιάσω τη συνταγή. Φροντίστε να τη φάτε λίγα λεπτά αφότου κρυώσει ή την επόμενη μέρα κρύα, είναι το ίδιο νόστιμη.


Κοτόπιτα με λαχανικά

υλικά (για 1 μεσαίο πυρίμαχο ταψί για πίτες)

2 φύλλα σφολιάτας (σε θερμοκρασία δωματίου)
3 στήθη κοτόπουλο
3 καρότα κομμένα σε κύβους
2 πιπεριές κομμένες σε κύβους
250γρ καλαμπόκι κατεψυγμένο
250ml κρέμα γάλακτος
150γρ τυρί regatto τριμμένο
1 κρόκος αυγού
λίγο ελαιόλαδο
αλάτι, πιπέρι, ρίγανη

πώς θα το φτιάξω;

1. Με ίσιο μαχαίρι κόψτε τα στήθη κοτόπουλου σε μικρά κομμάτια και τοποθετήστε τα σε ένα μπολ. Αλατοπιπερώστε και ρίξτε λίγη ρίγανη και με τα χέρια σας ανακατέψτε τα κομμάτια κοτόπουλου.
2. Σε μια ρηχή κατσαρόλα σωτάρετε το κοτόπουλο σε λίγο ελαιόλαδο σε μέτρια προς δυνατή φωτιά μέχρι να ψηθεί. Έπειτα, προσθέστε το καρότο και συνεχίστε το μαγείρεμα μέχρι να σωταριστεί και αυτό καλά.
3. Στη συνέχεια προσθέστε τις πιπεριές και το καλαμπόκι και σωτάρετε ακόμη για 5 λεπτά φροντίζοντας να ακατεύετε όλα τα υλικά της κατσαρόλας ώστε να μην κολλήσουν.
4. Μόλις ψηθούν όλα τα υλικά περιχύστε την κρέμα γάλακτος στο μείγμα μέχρι να δημιουργηθεί μια ελαφρώς πηχτή σάλτσα. Κατόπιν, αποσύρετε την κατσαρόλα από τη φωτιά και προσθέστε σιγά σιγά το τυρί. Ανακατέψτε πολύ καλά ώσπου να λιώσει τελείως το τυρί.
5. Πάρτε το πυρίμαχο ταψί και τοποθετήστε το πρώτο φύλλο ζύμης σφολιάτας. Πιέστε ελαφρά με τα δάκτυλά σας το φύλλο ώστε να ‘κάτσει’ σωστά στο ταψί. Με ένα μαχαίρι κόψτε περιμετρικά τη περισσευούμενη ζύμη.
6. Αδειάστε το μείγμα της πίτας στο ταψί και με ένα κουτάλι μετακινείστε το μείγμα ώστε να καλύψει ομοιόμορφα όλη την επιφάνεια του ταψιού. Έπειτα, τοποθετήστε το δεύτερο φύλλο ζύμης και κόψτε με το μαχαίρι πάλι τη ζύμη που περισσεύει στο πλάι. Με τα χέρια σας κλείστε τη ζύμη γύρω γύρω διπλώνοντας τις άκρες στο εσωτερικό της πίτας (όπως φαίνεται στις εικόνες).
 





7. Χρησιμοποιώντας τον κρόκο αυγού αλείψτε την επιφάνεια της πίτας. Με ένα μικρό μαχαίρι χαράξτε την επιφάνεια της πίτας σε 3 παράλληλα σημεία για να ψηθεί στο εσωτερικό της.
8. Ψήστε την πίτα σας στους 180 C για περίπου 30 λεπτά ή μέχρι να ροδοκοκκινήσει στην επιφάνειά της η πίτα. Αφήστε την να κρυώσει ελαφρά για λίγα λεπτά και σερβίρετε την ζεστή.

ΚΡΕΜΥΔΟΤΥΡΟΠΙΤΑ Ή ΚΡΟΜΙΔΟΠΙΤΑ ΜΥΚΟΝΙΑΤΙΚΗ


Δεν ξέρω πόσοι από εσάς το γνωρίζετε, αλλά το νησί Μύκονος, εκτός από τα αμέτρητα μπαρ και παραλίες κοσμικών, προσφέρει πολύ καλά και νόστιμα ντόπια προϊόντα. Μερικά από αυτά είναι η κάππαρη, το παξιμάδι και η τυροβολιά Μυκόνου. Την τελευταία έτυχε να μας την φέρει ο θείος μου (σε ποσότητα) από τη Μύκονο και έτσι μου έδωσε την ιδέα να φτιάξω δύο παραδοσιακές μυκονιάτικες συνταγές, μία αλμυρή και μία γλυκιά. Αλλά για να είμαι ειλικρινής την συνταγή αυτού του ποστ την έφτιαξε η μαμά μου.


Η κρεμμυδοτυρόπιτα ή αλλιώς κρομμυδόπιτα Μυκόνου είναι πολύ εύκολη στην παρασκευή και συνδυάζει το κρεμμύδι με την τυροβολιά Μυκόνου. Η μαμά μου δεν χρησιμοποιεί μόνο τυροβολιά, αλλά προσθέτει και λίγο ανθότυρο με φέτα, καθώς η τυροβολιά έχει λίγο έντονη οσμή και γεύση.

υλικά 
(για ένα ταψί 45χ28 ή λίγο μεγαλύτερων διαστάσεων)

300γρ τυροβολιά Μυκόνου
150γρ ανθότυρο άγλυκο
150γρ φέτα μαλακιά
3 αυγά
1 κρεμμύδι 
2-3 κρεμμυδάκια πράσινα
μισό ματσάκι άνιθο
λίγο γάλα
πιπέρι
1 πακέτο φύλλο κουρού ή χειροποίητο δικό σας
λίγο σουσάμι

πώς θα το φτιάξω;

- Με ένα πιρούνι ομογενοποιούμε όλα τα τυριά μεταξύ τους σε ένα μεγάλο μπωλ. Έπειτα προσθέτουμε τα 3 αυγά και ανακατεύουμε πολύ καλά. 
- Ψιλοκόβουμε το κρεμμύδι και το σουρώνουμε πολύ καλά να φύγουν τα υγρά του. Ψιλοκόβουμε τα κρεμμυδάκια και τον άνηθο και τα ανακατεύουμε μαζί με το κρεμμύδι πολύ καλά.
- Μεταφέρουμε το μείγμα χορταρικών στο μείγμα τυριών ανακατεύοντας με μια κουτάλα. Εάν προσέξουμε ότι το τελικό μείγμα είναι πολύ σφιχτό, προσθέτουμε ελάχιστο γάλα ώσπου να γίνει μαλακό το μείγμα.
- Αλείφουμε το ταψί μας με λίγο ελαιόλαδο ή άλλο λάδι. Ανοίγουμε λίγο το πρώτο φύλλο ώστε καλύψει τα τοιχώματα του ταψιού μέχρι πάνω και το τοποθετούμε στο ταψί. Απλώνουμε το μείγμα ομοιόμορφα και το φύλλο που εξέχει στα τοιχώματα το διπλώνουμε πάνω από το μείγμα γύρω γύρω. 
- Το δεύτερο φύλλο εάν είναι στο μέγεθος του ταψιού δεν το ανοίγουμε, διότι θέλουμε να καλύψει όλη την επιφάνεια του ταψιού. Αφού το τοποθετήσουμε και αυτό, με ένα πιρούνι το "κολλάμε" με το άλλο φύλλο. 
- Αλείφουμε την επιφάνεια της πίτας με λίγο λαδάκι πάλι (προαιρετικά πασπαλίστε λίγο σουσάμι) και με ένα μαχαίρι χαράσουμε παράλληλες γραμμές με το στενό μέρος του ταψιού. Οι γραμμές να απέχουν 3-4 δάκτυλα μεταξύ τους.
- Το ψήνουμε στους 170-180 βαθμούς στις αντιστάσεις για 45-50 λεπτά μέχρι να ροδίσει το φύλλο.

tip: για να μην σηκωθεί το φύλλο στο ψήσιμο το βρέχουμε με ένα σπρέυ νερού και με ένα πιρούνι τρυπάμε κατά διαστήματα το φύλλο για να φεύγει ο αέρας.

ΠΟΡΤΟΚΑΛΟΠΙΤΑΚΙΑ ΜΕ ΑΡΩΜΑ ΤΖΙΝΤΖΕΡ - ORANGE MINI PIES WITH GINGER


Για ακόμη μια φορά η κουζίνα μοσχομύρισε. Ο καιρός άρχισε να χαλάει ακόμα περισσότερο και η επιθυμία για κάτι γλυκό και ελαφρώς φρουτώδες χτύπησε κόκκινο. Νομίζω πως ελάχιστοι από εσάς δεν έχετε γευτεί πορτοκαλόπιτα παραδοσιακή κάποια στιγμή στη ζωή σας. Και αν όχι, αυτή η "έκδοση" θα σας πείσει. Να ομολογήσω πως δεν είχα σκοπό να φτιάξω πορτοκαλόπιτα, όμως, είχε περισσέψει λίγο φύλλο κρούστας στο ψυγείο και μου ήρθε κατευθείαν στο μυαλό. Λόγω της μικρής ποσότητας φύλλου αποφάσισα να δοκιμάσω μια παραδοσιακή συνταγή σε μικρό μέγεθος. Ελπίζω να σας αρέσει!

Once again the kitchen smelled all over. The weather began getting worse  and so the desire for something sweet and slightly fruity hit red. I think very few of you who have not tasted a traditional greek orange pie sometime in your life. And if not, this "version" will convince you. To say that I had not intended to make orange pie, however, I had little leftover pastry crust in the fridge and that thought came straight to mind. Due to the small amount of pastry I decided to try a mini recipe. Hope you like it!


H διαδικασία του γλυκού ήταν πολύ εύκολη και ιδιαίτερα ευχάριστη. Το πορτοκάλι και το τζίντζερ δημιουργούν ένα υπέροχο γευστικό και αρωματικό δίδυμο. Τα είχα συνηθίσει μαζί σε ένα μείγμα τσαγιού που πίνω συχνά και έτσι σκέφτηκα, γιατί όχι, και στην πορτοκαλόπιτα.

The process of making the pies was very easy and very pleasant. The orange and ginger create a wonderfly tasty and fragrant duo. I was used to them together in a mixture of tea I drink often and so I thought, why not put ginger in the orange pies.

Πορτοκαλοπιτάκια με άρωμα τζίντζερ

υλικά

για 4 πιτάκια
200 γρ. φύλλο κρούστας
100ml αραβοσιτέλαιο ή σησαμέλαιο
65 γρ. ζάχαρη κρυσταλλική
180 γρ. γιαούρτι στραγγιστό
3 μεσαία πορτοκάλια
2 αυγά
1 κουταλάκι baking powder
1/2 κουταλάκι τζίντζερ

για το σιρόπι
200 γρ. ζάχαρη κρυσταλλική
180ml νερό
1/2 ποτήρι χυμό πορτοκαλιού

πώς θα το φτιάξω;

- Ανοίγουμε το φύλλο σε ένα ταψί και το αφήνουμε να "ξεραθεί" για λίγα λεπτά. Θα ήταν προτιμότερο να χρησιμοποιήσετε φύλλο που σας έχει περισσέψει. Παράλληλα, προθερμαίνουμε το φούρνο στους 180 C. Θρυμματίζουμε το φύλλο σε μικρά κομματάκια. 
- Σε ένα μπωλ χτυπάμε τη ζάχαρη με το λάδι, κατόπιν προσθέτουμε τα αυγά και συνεχίζουμε το χτύπημα μέχρι να αφρατέψει το μείγμα.
- Παίρνουμε το ξύσμα και το χυμό από 2 πορτοκάλια. Τα προσθέτουμε στο μείγμα μαζί με το baking powder, το γιαούρτι και το τζίντζερ. Ανακατεύουμε καλά.
- Στη συνέχεια ρίχνουμε στο μείγμα τα θρυμματισμένα φύλλα κρούστας και ανακατεύουμε ώστε να ποτιστούν όλα τα φύλλα με το υγρό μείγμα.
- Σε 4 μικρά φορμάκια (εγώ χρησιμοποίησα αυτά για το σουφλέ σοκολάτας) μοιράζουμε το μείγμα μας ομοιόμορφα. Τοποθετούμε ένα χαρτί ψησίματος σε ένα ταψί και τα φορμάκια μας από πάνω. Ψήνουμε για 35-40 λεπτά.
- Αφού ψηθούν τα πιτάκια τα αφήνουμε να κρώσουν αρκετά.
- Για το σιρόπι τοποθετούμε όλα τα υλικά μας σε ένα κατσαρολάκι και βράζουμε για 5 λεπτά ανακατεύοντας συχνά ώστε να μην μας αρπάξει το σιρόπι.
- Ξεφορμάρουμε με προσοχή τα πιτάκια, τα τοποθετούμε σε μια σχάρα και τα περιχύνουμε προσεχτικά με το σιρόπι. Το σιρόπι θα απορροφηθεί αμέσως, οπότε μη φοβηθείτε την ποσότητα.

Orange mini pies with ginger

ingredients

for the pies
200 gr pastry crust
100ml sesame oil
65 gr granulated sugar
180 gr strained yogurt
3 medium sized oranges
2 eggs
1 teaspoon baking powder
1/2 teaspooon ground ginger

for the syrup
200 gr granulated sugar
180 ml water
1/2 cup orange juice

how do I make it?

- Roll the crust into a pan and let it "dry" for a few minutes. It would be preferable to use left over crust. Meanwhile, preheat the oven to 180 C. Crush the crust into small pieces.
- In a large bowl, beat the sugar with the oil, then add the eggs and continue beating until the mixture is fluffy.
- Take the zest and juice of 2 oranges. Add to the mixture together with the baking powder, yogurt and ginger. Mix well.
- Then pour in the mixture your crust and stir to moisten all the crust with the liquid mixture.
- In 4 small molds (I used the ones for the chocolate souffle) pour this mixture evenly. Place a baking paper on a baking pan and put the molds on top. Bake for 35-40 minutes.
- Once cooked pies let them sanction enough.
- For the syrup place all your ingredients in a saucepan and boil for 5 minutes, stirring often as not the syrup gets burned.
- Carefully take out your pies from the molds, place them on a resting rack and carefully pour the syrup. The syrup will immediately be absorbed, so do not be afraid of quantity.
